Uppsala, Sweden: A University Town With Viking Roots


Uppsala University in Sweden is 535 years old today, having been inaugurated on this date in 1477. As one of the older universities in Europe, it has quite a few sights to see and is located in a town of ancient importance.

The city started as a religious center for the pagan Vikings and the location of their Thing, a general assembly. An ancient temple at Uppsala was said to have had statues to Thor, Odin, and Freyr and the entire building was encircled by a golden chain hanging from the gables. While the old temple has disappeared, there are still some Viking remains in the form of runestones and three large earthen mounds. Legend has it that they’re the barrows (tombs) of the three principal Norse gods, but excavations showed them to be the resting places for three early Norse rulers.

As with many pagan sites across Europe, Uppsala was turned into a center for Christianity and became the site for the country’s first archbishopric in 1164. There’s a little medieval church dating to the 13th century and a much more elegant cathedral from the 15th century. I wish I could describe the interior of the earlier church to you, but on my visit I walked in on a wailing baby getting baptized and had to walk right out! Such are the hazards of travel.

The later house of worship still serves as the cathedral today. Its brick exterior has a warm, homey feel, but when you go inside you find the soaring arches and fine stonework that you’d expect from a European cathedral. Inside you can find the tombs of important Swedes such a King Gustav Vasa (of Vasa ship fame), scientist Carl Linnaeus and mystic Emanuel Swedenborg.

As for the university itself, such an old center of learning is bound to have some attractions. In good weather visit the Linnaean Garden, a beautiful botanical garden founded in 1655 and reorganized by Carl Linnaeus, who created the taxonomic system still used to categorize plants and animals today. He got in trouble with church authorities for categorizing humans as primates. The gardens are an easy stroll from Uppsala Castle, complete with throne room and a rich collection of European art.

%Gallery-167737%The Gustavianum, formerly an operating theater where 17th century medical students could watch dissections, is now a museum showing off the university’s art and archaeological collections. There’s also a cool exhibit of early scientific instruments. The old operating theater still exists if you want to see what it was like to get cut up in public.

Take some time to soak up Uppsala’s atmosphere. Stroll through the narrow medieval lanes and along the riverside where the students like to lounge. Being a northern city, it changes dramatically with the seasons. My first visit was in winter and was in fact my favorite. Standing atop an old Viking barrow and looking out across the snow-covered fields as the church spire rose in the gray distance, I felt like I was seeing Sweden at its best. Sure, we all like sunshine, but biting cold wind and short, overcast days seemed more properly Scandinavian!

Uppsala makes an easy day trip from Stockholm and is one of the top places to see in Sweden. Gamla Uppsala (“Old Uppsala”) with its pagan remains and early church, is just outside the more modern town.

Did you grow up watching the Swedish Chef on “The Muppet Show?” I loved that guy. Do you find everything about “foodies” and the Food Network obnoxious and tedious? Yeah, me too. Allow me then, to turn you on to a little Internet sensation called “Regular Ordinary Swedish Meal Time (ROSMT).”

The mad, brilliant brainchild of a group of Swedish university students, ROSMT started out as a hungover, 2011 New Year’s Day lark. It was filmed in the apartment of “chef” Niclas Lundberg, with the aid of his friend and ROSMT co-founder Isak Anklew.

The resulting “Spaghetti Explosion” was inspired by the spoofy, Canadian YouTube cooking show hit “Epic Meal Time.” Lundberg has taken culinary instruction to a new level, spicing things up with signature moves like hurling ingredients into walls, ripping off hunks of raw meat with his teeth, and using his fists as everything from potato mashers to mixing spoons.

“Spaghetti Explosion” was such a success, Lundberg and friends quickly produced “Meatball Massacre,” and “Sidepork Pandemonium.” The rest, as they say, is history. Today, the guys (five, in all) behind ROSMT are pop-culture icons in Sweden and abroad. Me? I can’t get enough of this stuff. It’s the Pepto-Bismol to pretentious food culture gastric reflux.

Below, I present to you the “Chop Chop Carnage Stew (Alternative Pyttipanna)” episode. Pyttipanna is a Swedish specialty consisting of potatoes, onion, and meat, with the likely additions of fried egg, chopped pickles and beetroot, and really, god knows what else. Enjoy.

Traditional holiday beverages from around the world

Americans aren’t very creative when it comes to traditional holiday beverages (do, however, look for my upcoming story on Boulder’s banging mixology scene, which includes some killer contemporary winter cocktails). Historically, though, we’re more of an eggnog/mulled cider/hot chocolate kind of society.

I’m not knocking our Christmas beverages of choice. Properly made, they’re delicious, and certainly festive. But some countries really know how to roll when it comes to holiday imbibing (especially Latin America. One word: rum.).

Below, a compilation of some of the more interesting boozy holiday beverages from around the world that can be easily recreated in your own kitchen. Online recipes abound, and all of these are (almost) as tasty sans alcohol.

Coquito: Puerto Ricans are great because they’re not afraid to embrace their love of saturated fats (lard, coconut milk, etc.) or rum. In case you’ve been living under a rock, coconut is the new fat du jour (read more about its health attributes here). Everything in moderation, including moderation, as I always say.

Coquito recipes vary, but in general, this rich, blended Christmas concoction is a froth of spiced rum, condensed milk, coconut milk or cream of coconut, vanilla, and spices such as cloves, nutmeg, and cinnamon. Some versions may include ginger or ground nuts, but it’s always served chilled, in a small glass. Heavy, yes, but both sexy and satisfying. Add some eggs, and you’ll have ponche, the Venezuelan or Dominican version of eggnog.

Mulled wine: Variations on this warm, spiced, sugared, and otherwise enhanced wine (usually red) are served throughout Europe. There’s Nordic gløgg redolent of cloves, cinnamon, cardamom, ginger, and bitter orange (and perhaps a helping of aquavit). It’s very similar to German glühwein made with lemon, cinnamon sticks, cardamom or ginger, and cloves; in Alsace (the French region bordering Germany), they also add vanilla bean.

In Bulgaria, greyano vino contains honey, peppercorns, and often, apple or citrus. Polish grzane wino is more of a traditional mulled wine, but they also make grzane piwo, in which mulled beer (try a Hefeweizen or Belgian ale which are lighter and sweeter) is substituted for the wine. Na zdrowie (“To your health”)!

[Photo credit: Flicker user Akane86]Ponche Navideño: Not to be confused with those other luscious ponches, this Mexican version is made with sugar cane, apples and/or pears or citrus, raisins, prunes, and tejocotes–an indigenous fruit used by the Aztecs, who called them texocotl. Add tequila, brandy, or rum; heat, and instant fiesta. At Christmastime, ponche vendors can be found on the street, ladling out cupfuls of good cheer.

Another popular Mexican holiday beverage is champurrado, a version of atole (warmed cornmeal thinned to a pourable consistency) flavored with chocolate. It tastes much better than it sounds, and is delicious on a chilly day.

Sorrel Punch: This Jamaican Christmas drink is made from the petals of a species of hibiscus (jamaica in Latin America), locally known as sorrel. In Australia it’s known as rosella, and where it makes a lovely, delicate, fruity red jam. This isn’t the same plant Americans know as sorrel or French sorrel. That’s a bitter wild green, which would make for a truly revolting cocktail, unless you’re one of those people who find wheat grass juice “refreshing.”

Dried hibiscus buds can be purchased at Hispanic or Caribbean markets; the recipe varies, but it’s usually some combination of the flowers, sugar, smashed fresh ginger, water, lime juice, and rum (dark is more traditional than light). Mix, stir, turn on your light box (fellow Seattleites know what I’m talking about), and crank your fave reggae CD. It ain’t the islands but it’s a nice change of pace from all that mulled wine.

Wassail: Did any American not grow up hearing about or actually going “wassailing,” aka carolling? This mulled British cider is synonymous with knocking on stranger’s doors and breaking into song. Unfortunately, I wasn’t allowed to hit the wassail bowl after mandatory childhood post-carolling; parents should remember that singing in public is the worst possible form of torture for a geeky, tone-deaf pre-teen. Wassail has been a Christmas classic across the pond for centuries, so I’m sure generations of British children suffered the same fate.

Cola de mono: Although Chile is better known for its pisco sours (Peru also claims this libation as its own, but both countries produce it and they’re still duking it out over who actually invented this potent grape brandy) and wine, Christmastime means a glass of “monkey’s tail.” Combine aguardiente (sub pisco or a neutral firewater) with milk, coffee, vanilla bean, and cloves. I have no idea what this has to do with the tail of a monkey, but it’s a cute name. Uh, bottom’s up.

As we noted earlier this week, Summer is a glorious time in Scandinavia. The region’s normally chilly temperatures have mellowed, and activities like cycling, boating and swimming are in full swing. If you need more visual proof, just check out this idyllic scene captured by Flickr user justchuckfl, in the Danish city of Copenhagen. Like many Scandinavian capitals, Copenhagen is an urban center inextricably tied to the sea and its many canals. If you find yourself walking the streets of this colorful capital, you’re likely to encounter a scene much like this one – a scenic canal ringed by brighly-hued buildings and bobbing sailboats.

Five reasons to go to Denmark in the winter

It’s cold in Denmark this week – really cold. Where I sit at the Illum outside of Kongens Nytorv, the weather has barely gone above -4°C (26°F) in the middle of the day, the bright, crisp sky teasing the residents with illusions of warmth. Were it only close to true.

Astonishingly, people are still riding their bicycles around the city, perhaps because they’ve attuned to the horrific weather or maybe just because they just don’t want to pay the 24DKK (Just over $5) to ride the bus or subway around. These bikers are a testament to this city though – the cold months are hard, but Danes are a hearty, gregarious bunch, and each person that I meet handles the temperature well.

The economy is still humming along in Copenhagen this winter, which means most of the great culture and excitement that tourists come to see during the summer are stilling moving along in parallel. Whether this is via a great local meal at one of Denmark’s numerous, fine restaurants or a stroll through one of the fine boutique museums, there’s plenty to do in this Scandinavian mecca during the winter — which is why it’s a great time to visit. Here are five more reasons to make your way:

5. Wondercool. This festival highlights the arts and culture of Demark during the coldest period of the year. Scheduled activities include indoor concerts from big label bands, discounts at famous restaurants and exclusive access to people and places across the city.

4. Lower prices. High season is brief in Denmark (May-August) and visitors pay dearly for the pleasure of vising during these months. Almost everything – from dining to airplane tickets to hotel rooms is more expensive this time of the year, and in the costliest city in the Europe this means that the impact is severe. Hotel rates, for example can be 50% to 75% higher during the summer months.

3. Crowds. Don’t let the lack of tourists fool you: bars and restaurants are still packed during the winter months. But loads are a bit lighter throughout the chilly season — one can call a week in advance and have a reasonable chance of finding a reservation at many of the best restaurants in the city, while gems like Madklubben can be booked only a few days out or even on the fly. And public places? Darn near empty. On Sunday, one can walk down the center of the street in many lanes of the downtown region, while the gardens at Tivoli and the main pedestrian streets give visitors enough room to breathe.

2. Which takes us directly to Noma. Last year named the best restaurant in the world, Noma is a mecca for foodies from all corners of the planet, and in contrast to its Spanish neighbor El Bulli (which will be closing next year) it’s actually sometimes possible to get a reservation on the fly. A recent query from our colleague who runs Studiofeast produced available reservations (albeit at strange times) just one day prior to dining, an outlandish idea at many other similar caliber restaurants.

1. For the Danes. Don’t get us wrong: Danish people are some of the friendliest people in the world — and we don’t take that cliche lightly here at Gadling. But there’s something to be said about the relaxed friendly attitude of residents when they’re not burdended by the everyday mass of visitors. They open up a bit, are willing to tell you stories about their lives and will take you on their winding tumultous journeys through many a bar, cafe and restaurant if you’re lucky. And for that welcoming, warm embrace, Copenhagen will always be worth visiting.
