Conscious Consumption In Cuba: How To Have A More Authentic Trip While Supporting Private Businesses

Until very recently, nearly every entity in Cuba was owned and operated by the government.

But in the past few years, the Cuban government has tried to promote private businesses in hopes that the shift will provide a much-needed boost to the economy. In late 2010, President Raul Castro announced that the government would start making it easier for individuals to open private businesses for the first time since a limited experiment in the 1990s. By July 2012, nearly 250,000 people had opened restaurants, shops and service enterprises, contributing to a total 387,000 Cubans that have chosen to be self-employed, according to the New York Times.

It’s not a complete success story, though. According to the Times, Cuban entrepreneurs regularly run into high taxes, steep customs duties and arbitrary red tape. Cubans that rent out rooms in their homes as casas particulares, for instance, must write down their guests’ full information in log books the moment they check in, lest a surprise inspection lead to heavy fines. License fees for these types of businesses are high, and often prohibitive.

Still, the loosened regulations are a positive sign for the future of private business in Cuba, and travelers can have a positive, and powerful, impact on this growth. One big reason is that most travelers to Cuba use the Cuban convertible peso (CUC), rather than the Cuban national peso (CUP). The CUC is most often used by foreigners for tourism-related transactions, like hotels and meals, while the CUP is used by most Cubans for everyday expenses. The difference between the two currencies is vast – 1 CUC is equivalent to about 25 CUP – which means that spending CUCs at privately run businesses can have a large impact on the proprietors’ pocketbooks.

If you are visiting Cuba independently, there are a number of ways to have an authentic travel experience, while supporting private business owners and the local economy. Here are a few.

Stay in a casa particular

Cuba’s answer to Airbnb, casas particulares, are privately run bed and breakfasts, usually run out of people’s homes. Staying in casas particulares are a great way to interact with locals and get an inside look at how Cubans (or at least those with access to tourist dollars) live.

The government imposes strict regulations on casas particulares, so you can generally expect rooms to be clean and stocked with a fan, air conditioner, mini-fridge and bottled water for sale. Rates are standardized, and usually range from $20-50 per room, per night. For an additional fee, your host will also provide meals. One casa particular in the Bay of Pigs even offered musical entertainment!

Casas particulares are easily booked through international booking websites like hostelbookers.com or hostelworld.com, or through Cuban sites like cubaaccommodation.com or cubaparticular.com. Or, you can just roam the streets on the look-out for a white sign with blue writing that reads “Arrendador Divisa” – they are ubiquitous in most city centers, particularly Havana. If that host doesn’t have a room, he or she will more often than not call upon their network of friends to find you another one.

Dine at a paladar

Paladares are privately owned restaurants, often run by families out of their living rooms. They tend to have much better food and selection than the government-run restaurants, which are pretty uniformly bland.

Like privately run restaurants elsewhere, paladares run the gamut in terms of quality and atmosphere. One of the most renowned is Paladar la Guarida, an elegant spot at the top of a 20th-century tenement in Central Havana, famous as a setting for the film “Fresa y Chocolate.” The menu changes regularly but tends to feature inventive dishes with ingredients not often found in spice-strapped Cuba. My cantaloupe gazpacho with dried shrimp was superb.

Another popular spot in Havana is Paladar San Cristobal, which lives up to its five-star TripAdvisor rating. We felt instantly welcome from the moment we stepped into the colonial Spanish courtyard. Our host and waiters lavished us with free wine refills and shots of ron, then lit our first Cuban cigars to top off the meal. When they heard it was my birthday, they disappeared to the back of the restaurant and reemerged with an antique amethyst brooch, which they presented to me as a remembrance of Cuba. The thoughtful service overshadowed my slightly oversalted ropa vieja.

Take a private salsa class

Nobody wants to be that awkward gringo doing the two-step on the dance floor at the salsa club. Brush up on your Latin dance skills with private lessons from one of Cuba’s informal dance schools. The best way to find a private instructor is to inquire at your casa particular, or ask around at popular salsa venues, like the bar at Hotel Florida. Rates are about CUC$10-20 per person per hour, and longer intensive courses are available.

Buy a used book in Havana’s Plaza de Armas

The charming, tree-shadowed Plaza de Armas in Old Havana is a hub for used booksellers, many of which operate independently. Most books are in Spanish, but you can usually find an odd English or French title left behind by an itinerant traveler, as well as bootlegged copies of Ernest Hemingway’s “The Old Man and the Sea,” set off the Cuban coast.

Hitch a ride in a classic car

Rumbling along the Malecon in a classic car is a Cuban experience that can’t be missed. Look out for classic cabs with yellow license plates, which indicate that the car is privately owned. Some of the most beautiful and well-kept cars congregate at the Parque National in Centro Habana, but their rates tend to be high. Be sure to negotiate a fare before you start your joyride.

A final note

Traveling in a country with such a complex economic structure can be eye-opening, but also frustrating. If you are a tourist using CUCs, you will often be charged more than the local CUP equivalent. An ice cream shop charging 5 CUP for a cone (US$.20) will probably charge you a full CUC (US$1) instead.

Remember that the difference might be negligible to you, but could mean a lot to the vendor. Exercise patience, and try to avoid being stingy. And when you experience great service, don’t be afraid to tip!

7 Deadly Sins: The Best Fast Food Mexican Restaurants In Southern California

It really isn’t fair. California has sun, beaches, mountains and legions of fit, attractive people. But Californians also get to enjoy otherworldly tacos and burritos too. I know, I know, there are good tacos and burritos to be had in other parts of the country, but when it comes to fast food Mexican, California is still king.

Here’s how I like to roll when I’m visiting California: start the day with a breakfast burrito, feast on an grilled fish burrito for lunch and cap the day with shrimp or lobster tacos at dinner time. If I wasn’t always falling asleep early on the West Coast due to jet lag, I’d probably do another round of tacos late night too, if I could only stay up late enough to squeeze it in.

It’s very hard to distinguish where to get the best fast food Mexican fare in Southern California. Try one place and you’ll think it’s the best thing you ever tasted and then travel down the block to realize there’s someplace even better. But what follows is a run down of the best fast-food Mexican seafood tacos and burritos I had on a recent trip to Southern California (save for Rudy’s, which doesn’t do seafood).


La Sirena Grill (Laguna Beach, El Segundo, and Irvine)

I had a blackened shrimp burrito and my wife had a blackened wild salmon taco and a blackened tilapia taco here and everything was incredibly fresh and tasty. They have a sweet, tangy salsa that is out of this world. Much of what La Sirena serves is organic and even the containers they serve tacos in are made of corn.

Rudy’s Taco Shop (Solana Beach, La Costa)

This place is the polar opposite of trendy La Sirena – there are no advertisements boasting about sustainability or humanely raised beef at this hole-in-the-wall joint but their carne asada is melt-in-your-mouth delicious and their chips are first rate too.

Rubios (Locations are mostly in suburban San Diego with a handful in other cities like Denver, Salt Lake City, Vegas, Phoenix and L.A.)

I know that some foodies are suspicious of chain places, but I am rooting for this one to make it out to Chicago. I had two grilled mahi-mahi tacos with roasted corn, cabbage and creamy chipotle salsa and a gourmet shrimp taco, which came with toasted mozzarella, jack and white cheddar cheese, bacon bits, avocado and two chili sauces.

Both were ridiculously good and were served with chips and beans on a real plate. The nice young kids who work at the Carlsbad location I patronized were fascinated by my interest with the place. To them, it probably seems a bit odd to be fussing over tacos and taking photos of them, but they’re spoiled they can get these beautiful things anytime they want them.

Bull Taco (Cardiff by the Sea, Oceanside, Petco Park)

This beachside taco stand advertises itself as “Inauthentic Mexican” but has become something of a local institution in just five years, serving unusual taco creations. Nathan, one of the chefs at the Cardiff by the Sea location, told me that all the cooks who work there are classically trained chefs. Only in California would serious chefs be found working in a taco joint and thank God for that.

I devoured three tacos – grilled sea bass, shrimp curry and the coup d’gras, a lobster, chorizo and bacon beauty. Purists might balk at some of their concoctions but I would kill to have this place near my home in Chicago.

Bahia Mexican Restaurant (near the zoo in San Diego)

This modest little fast food place, with its colorfully painted chairs and tables, made me feel like I was in a working class neighborhood outside Puerto Vallarta. Big menu, low prices, no frills and it smelled great. After a long morning spent pushing my sons around in a stroller at the San Diego Zoo, I was starved, so I ordered a fish taco (grilled tilapia, $2.30), a shrimp taco ($3.30), and a lobster taco ($3.80).

The tortillas were very light and flavorful, the tacos were packed with seafood and everything was wonderfully fresh and delicious. My only complaint: the place is filled with vending machines selling junky toys and temporary tattoos, which my sons nagged me into buying. Halfway through my lobster taco, I relented and bought two sets of tattoos, but my 3-year-old didn’t like the one that came out of the slot for him. But even the tantrum that ensued couldn’t diminish the experience for me.

Taco Surf Taco Shop (Pacific Beach neighborhood in San Diego)

For a place that’s filled with surfboards and is just a block away from the Mission Beach-Pacific Beach boardwalk along the ocean, this place is dark and slightly depressing. Taco Surf Taco has been featured as one of the best places to get a burrito in the country by Fox News and was also singled out by USA Today. I don’t agree with Fox News very often and I don’t agree with them on this call either.

The people working at TSTS are very friendly and my mahi-mahi burrito ($7.66) was big and tasty, but I didn’t think it was extraordinary. Another diner told me I should have tried their California burrito, which has steak, cheese and fries, but I’ll leave that one to Fox News and others. One other beef: horrible music. I had a Whitney Houston “I Wanna Dance with Somebody” earworm for days after hearing it at this place.

Poquito Mas (7 locations in L.A.)

I had two shrimp tacos ($6.50) at their West Hollywood location and I thought that the name of this place, which means “a little more” in Mexican, was appropriate – there were only three shrimp in each taco – not nearly enough for my tastes. They were tasty though and I especially liked their array of spicy salsas, but not their dicey tortilla soup.

Conclusion: If I had to crown my very favorite seafood, fast-food Mexican meal in California, and it really isn’t fair because all of these places are great, it would be a tie between La Sirena and Rubios. Their tacos and burritos literally brought a smile to my face. Please, please, please guys, come to Chicago. I’m begging you.

A Solo Stroll Through Baghdad


I am alone in Baghdad. After a farewell dinner and a visit to an Iraqi amusement park my travel companions have left for the airport. Our guards from the Interior Ministry have gone off to other duties and I’m staying unguarded in my hotel. I don’t fly out until tomorrow.

I’m not supposed to leave the hotel. Guards are supposed to be with me at all times. While I understand why the government insists on this rule, I’ve found the guards annoying. They’ve often made me move on when I’ve wanted to linger at a place or continue a conversation, and I get the feeling some people didn’t approach me because of their presence.

Now I finally have a chance to see Iraq without them. I’m not nervous about this. Well, not too nervous. My hotel is in a good neighborhood and I walked in Basra without a guard and had no trouble. Besides, the biggest risk here is from car bombs and I don’t really see what a guard can do about that.

I don’t have much of an area to explore. I can’t go through a checkpoint alone. The best result I could get from that stunt would be a stern lecture and a police escort back to my hotel. The worst result is something better left unexplored. So my Baghdad tour is limited to one neighborhood circumscribed by police barricades.

The neighborhood is a good one by Baghdad standards, shops and apartment blocks and a few official buildings. The main landmark is the National Theater and a couple of swank hotels. It’s considered an up-and-coming and reasonably safe area.

The only problem is that it’s the last day of Eid al-Adha, a celebration of Ibrahim’s willingness to sacrifice his son Ishmael, known in Christianity and Judaism as the story of Abraham and Isaac. It’s one of the biggest holidays in the Muslim calendar and most places are closed.

I pound the pavement past rows of steel shutters. It looks like most people are taking the day off. A middle-aged man and his son come up and say hello. Their English is almost as bad as my Arabic and the conversation soon falters. What I want is to find a like mind, someone with open eyes, a good education, and good English who can explain his country to me. The National Theater seems a likely place. I head over there. Closed.

I continue on my quest. I have a few more “Welcome to Iraq” conversations, each time cut short due to language. I curse myself for not studying more Arabic. One young guy says he’d love to smoke some hash with me but he’s all out. Yeah, pot paranoia on the streets of Baghdad. That would have made an interesting article.

%Gallery-173222%One of the few stores I pass that’s open is a liquor store. The owners, two guys who look to be in their late 20s, wave me inside. “Where are you from?” “How do you like Iraq?” The usual conversation starts, hampered by bad English and terrible Arabic.

They invite me behind the counter and give me a glass of whiskey and some string cheese. String cheese. I kid you not. I didn’t know they had string cheese. Yet another insight into Iraqi culture.

My two companions really, really want to leave Iraq.

“But business is good here,” I say, eying the wad of bills in the cash drawer.

“Yes, but too many troubles,” they say. “Sometimes Muslim militia come here, take bottles, and no pay.”

I shake my head. A lot of the so-called Islamists are actually simple criminals grabbing an opportunity.

They ply me with questions about how to move to Canada, my home country. They’re disappointed to hear that Canada wants people with money who can speak English but seem hopeful about the refugee angle. They’re from one of Iraq’s many persecuted minorities.

As we talk a steady stream of customers come through. None look at me. Muslims always have this guilty look on their faces when they buy booze. It’s the same look Western guys get in porn shops. As a joke I start serving customers. My two buddies think this is hilarious. None of the customers bat an eye. Iraqis act nonchalant when stuck in a strange situation they’re trying to size up. It’s a survival technique. To show that you notice is to become part of the scene, and that’s not always healthy.

One of the liquor store owners runs over to a nearby bakery and brings back some fresh, hot pita. Ah, Arab hospitality! This is followed by a second (third?) round of whiskey, another form of hospitality that isn’t as rare in the Middle East as you might think. As they break out more string cheese I notice it’s getting dark outside. My day of independence is ending. My one real chance to have an immersive experience in Iraqi culture ends with string cheese and an alcohol buzz in a liquor store.

It would have to be good enough. When I told a friend back in Spain that most of my interactions in Iraq were friendly but all too brief and superficial, he replied that Westerners and Iraqis need to have more friendly, superficial meetings. At least it’s a start, he said.

Good point, but I wanted more.

Guarded group travel has insurmountable limitations that one day of partial freedom can’t break. Those serendipitous experiences don’t come on demand. You need time and luck. For me they came a few times on this trip – with pilgrims at the Shia holy shrines, with a child refugee in my hotel lobby, and with an artist on the tough streets of Nasiriyah. Each time these experiences could have – should have – turned into daylong interactions. Each time, though, the group agenda and my guards’ concerns meant we had to move on.

Luckily the security situation is slowly improving and there’s talk of individual travel opening up throughout Iraq like it already is in Kurdistan. Perhaps in a few years I’ll be able to come back and explore Iraq the way adventure travel is supposed to be done – slowly, with no itinerary, and alone.

More Cow’s Head: Eating Local In Afghanistan


“Chaay?” Tea?

“Balay lotfaan.” Yes, please.

Yet another glass of tea was being served. Tea is the social lubricant of Afghanistan, the thing that brings people together, fuels meetings and provides for an afternoon excuse for a break.

There are no pints of beer or glasses of wine or whiskey gingers, but in a dry country, there’s always tea. That’s the thing about food and drink, we can be anywhere in the world and they bring us together. Eating is one of the things that we all share, no matter who we are or where we are from.

Twenty-four hours into Afghanistan and I was quickly instructed on the several varieties of kebab, the chicken an orange color from a saffron marinade and the lamb version named “Sheppard’s Kebab.” Our fixer made sure I noted this all in my notebook. “We will do a Dari test tomorrow to see if you remember.” You don’t want to upset the fixer who is in charge of ordering your food at lunchtime, so I made sure to master the appropriate food vocabulary.

Food is not only a connector; it’s also a great lens for comparison. What people buy, how they make it, how they serve it.

At home, in my native Pacific Northwest, we’re very concerned with where our food comes from. I am reminded of the “Is it Local?” “Portlandia” episode where the couple goes out to eat and inquires about the chicken on the menu and ends up visiting the farm that it’s from. It doesn’t matter how conscious we are about the origin of our food, in the United States we live in a processed and packaged society, and even the artisan butcher has nice labels and butcher paper to wrap his cuts in. We rarely really see where our food comes from and how it got to a servable state. In Afghanistan, however, it’s hard to miss.

Walk past any butcher shop and bloody carcasses hang in the doorway, the animal heads lined up on the ground below. A cow’s head here and goat’s head there. Sometimes you’ll even see bloody skins, freshly removed from the carcass. I got some weird pleasure every time I saw the aforementioned scene, my eyes on high alert for a butcher shop during every taxi ride. There was beauty in the rawness of it all; the fact that it was impossible to not know how your grilled kebab made it from living animal to your lunch plate. No discounted containers saran wrapped Styrofoam packages in this country.

Reminders of just what you are eating are everywhere. It’s impossible to avoid. The adorable sheep being hugged by the little boy on the street is destined for sacrifice a few hours later. That chicken that walks up to you in a restaurant garden is most likely tomorrow’s lunch.

After a day spent at Afghan national hero Ahmed Shah Massod’s tomb in Panjshir Valley, we found ourselves sitting around an outdoor table at a restaurant on the banks of the Panjshir River. The standard meal of Kabuli rice, rounds of naan bread and kebabs was served; Afghan food was once described to me as “meat, oil and bread,” which is a very true statement. We ate with our hands, ripping off pieces of naan to soak up the grease leftover from the kebab on our plates, the sounds of the river our background music.

It was dusk as we left the restaurant. Upon exiting, we passed a group of men sitting on the ground by the entryway, busy prepping what appeared to be the following day’s meat platter. Slabs of raw meat were strewn about on a plastic groundsheet. My initial reaction included some eyebrow raising and the men immediately began to laugh.

“Aks mekonum?” Can I take a photo?

“Balay balay!” Yes yes.

The Meat Crew. A photo that for many may be hard to stomach, but also a reminder of the fact that in most parts of the world, knowing where your food comes from and how it’s prepared isn’t just fodder for another “Portlandia” episode.

Gading Gear Review: Radiant Trench Coat From Nau

It’s winter in North America; is that going to keep an intrepid adventure from leaving the house and getting out for some urban adventures? No, no it is not. Because we know that if we bundle up good, we will be rewarded with hot chocolate in cozy cafes, sparkling conversation while looking at art in uncrowded galleries, and a certain self satisfaction for not caving in and staying home when it’s 36 and raining (or worse) in our favorite cities. All that’s ours because we have wrapped up in a very good coat.

Nau’s Radiant Trench
fits the bill for winter travel and sightseeing. This trench style coat with a full (zip-off) hood and down fill works great for fighting the weather as you go about your city touring. You’ll stay dry and warm and look good in even a Seattle December squall. (I know, that’s the weather I tested this thing in.)

The coat has your classic trench coat styling – knee length, belted waist – but the fabric has a nice subtle gray on gray plaid pattern. It’s got a slightly narrow fit so you don’t look like nothing but giant coat when you’re wearing it. It’s got a skirt slash in the back that snaps shut (if you’re that kind of skinny) and a two-way zipper with a snap over flap in the front to keep the weather out. The hood – it zips off – is adjustable for fit and holds its shape so you can see out. And you can snap the cuffs to a slightly more narrow fit to keep the wind out of your sleeves, too. Pair it with some excellent winter boots, you’ll look great and be weatherproofed, big time.

I wanted the pockets to be configured slightly differently. I like the two big flap pockets on the front, but they don’t work well as hand warmer pockets. I’d have liked slash pockets at the waist or underneath the flap pockets. I pulled the sleeves down over the backs of my hands to stay warm. There’s an inside pocket with a pass-through for your headphones and that’s nice, but given all the coat real estate you have, it might have been nice to have an additional inside pocket for… stuff.

The down fill on this thing is great; it’s very warm without being heavy. It’s a lot of coat, you’re going to want to wear it instead of packing it because it doesn’t smash down to super small, but hey, it’s winter, you’re going to sacrifice some space and pack a bit heavier than usual so you’ll stay warm. I usually lean towards wool for winter wear – outer, too – but I like the water repellant fabric this coat is made from.

The Radiant Trench is completely wind and waterproof and keeps you warm and dry in very nasty weather. No matter how much I love this city in the off-season, downtown Seattle in darkest winter is cold and wet. If you’re of the bold sort that likes city travel in more challenging weather (think Vienna Christmas markets or New York shopping, for example) you absolutely need a good coat. Ladies, this one’s for you.

Not cheap at $399, but built to last with a generous warranty. Add it to your winter wish list along with a winter trip to… well, you decide.
