Olympic Bid Holds Tournament On 7 Continents Over 7 Days

Traveling to seven continents in seven days is grueling enough. Throw in a daily match against a former professional squash player and that makes for some pretty exhausting travel.

Two former pro squash players, Peter Nicol and Tim Garner, are in the midst of a week-long, 40,000-mile world tour in an effort to get squash into the 2020 summer Olympics. Their whirlwind competition ends in New York City this Saturday after successive matches in cities on each of the other continents: London, Cairo, Kuala Lumpur, Sydney, Santiago and the Falkland Islands.

Wait… the Falkland Islands? That’s not quite Antarctica Geographically; it’s South America. And politically, well, it’s still in Europe. Perhaps they are going by the ecozone or floristic kingdom definition of Antarctica? Perhaps.

This type of trip flies in the face of all the principles espoused by slow travel, but it’s an impressive feat all the same. It still kind of blows my mind that we can access every edge of the planet in but a week (at least nominally or floristic kingdom-ly).

For those wondering, they’re currently tied at two games a piece. The ultimate winner is likely to be the one who doesn’t collapse from jet lag in New York.

Fish Tacos

I have a friend that brought this Mexican grilled corn to numerous dinner parties last summer, and it was always a hit. Bolani
A common street food in Afghanistan, bolani is somewhere in between a calzone, a handpie and a quesadilla. In other words: fried, doughy goodness. The key in good bolani is in the filling. Go with a potato or pumpkin base and make sure to employ plenty of leeks and cilantro. If you are short on time, you can use tortillas instead of making your own dough, like Humaira at Afghan Cooking does, but if you’re up to it, it’s worth it to make your own. Vietnamese Iced Coffee
I got used saying ca-phe sua dua (phonetic spelling of course) when I spent time in Vietnam a few years ago; there was no getting through a hot day in Saigon without one. You can of course get really complex with your coffee brewing and invest in a Phin, the filter that Vietnamese coffee is brewed in, or you can just use a good cold brew (let a French press stand over night) or some strong stovetop espresso, then just add sweetened condensed milk and ice cubes.

Socca
A sunny afternoon in Nice, France calls for a batch of socca. The gluten-free crepe made from chickpea flour is good on its own, or you can get creative with what you serve with it.
