Dubai International Shows Off New Facility

Dubai International Airport (DBX) has just completed the launch of Concourse A, part of a $7.8 billion expansion plan aimed to increase airport capacity to 90 million passengers by 2020. Home to Emirates airline’s Airbus A380, 20 gates have been equipped to handle the airline’s current fleet of 31 planes and with more on order, they’re going to need the space.

“With a current fleet of 31 A380s and a further 59 on order, Emirates is the largest operator of this aircraft in the world, and it is only fitting that we have a world class facility that meets this need and represents our leadership in this regard,” said Tim Clark, President, Emirates Airline in a Breaking Travel News report.

Each of the A380-equipped gates, along with Emirates First and Business class lounges take up 28,000 of the 528,000-square-meter facility. The upscale lounges feature kitchens, conference rooms, business centers, a spa, entertainment areas, smoking areas and children’s play areas. First Class lounge passengers also have a duty free shopping area and a wine cellar.

Like U.S. airports that have spent billions on expansion and updates, Dubai is looking to the future with a solid plan in place to be a bigger player in international travel.

“Concourse A is a vital element of our $7.8 billion investment in the continued expansion of Dubai International, which will see it become the world’s busiest airport for international passenger traffic by the end of 2015,” said Paul Griffiths, CEO of Dubai Airports.

Dreaming Of The RV Life? Here’s Exactly How Much It Costs

The story of a Colorado family of 14 currently trekking and blogging around the country in an RV made “The Today Show” recently, highlighting a particularly dreamy type of wanderlust – and one that reached a peak in 2011 with 8.5 percent of U.S households owning an RV, according to the Recreational Vehicle Industry Association. But it’s been hard for the media to get past the sheer absurdity of the Colorado family’s size and talk about the number we really want to know: what’s the price of a permanent vacation?

Luckily, another family with an RV and strong Internet connection has been keeping track of those important nitty-gritty details. RecalcRoute.com’s Jon and Amy Arnold of Indianapolis are 20 months into the cross-country life with their three young daughters, and they posted a detailed cost analysis after a year and 15,689 miles working, homeschooling and playing their way around the western half of the country.

The biggest expense after the $18,500 RV itself? Not gas.Groceries tallied $13,500 for the health-conscious family of five. Though visiting farmers markets is one of the joys of traipsing the country, “it’s not bargain food,” Amy says.

They’ve found that the best cost-saving measure is joining a campground network. Campsites can run around $50 a night in premium locations, and $20 or $30 in state parks. A membership in a network (and the occasional free night “boondocking” in a Wal-Mart parking lot, where RVs are welcome) can lower the expense to an average of $15 a night, freeing up funds to splurge on a site you really want to visit – say, when a relative joins you on the road or you want to stay on Key West, where rates are the highest the Arnolds have encountered.

An $80 annual national-park pass and a space heater (an alternative to burning through your RV’s propane to stay warm) will pay for themselves over and over again, but the Arnolds’ best advice is to think of the trip as your life, not a constant vacation, and to stick to the same kind of budget you would at home.

Stricken Cruise Ship Passengers Make Most Of Bad Situation

Life on board stricken cruise ship Carnival Triumph is far from the travel brochure promise of sandy beaches and warm Caribbean nights. As the ship is being towed to shore after an engine room fire knocked out the ship’s propulsion, passengers have had quite a different experience than what they bargained for. Still, experienced travelers know that not everything goes as planned and making the best of a bad situation often depends on how we choose to react when bad things happen along the way.

“I do want to commend our guests on board the Carnival Triumph … for doing a great job dealing with a difficult situation. I happen to believe that is the nature of the Carnival guests who happen to be very optimistic people (who) enjoy life,” said Carnival President and CEO Gerry Cahill at a press conference held Tuesday night at Carnival’s Miami headquarters.

Operating with limited services (although the bars are open and drinks are free), 102,000-ton Carnival Triumph is expected to arrive in Mobile, Alabama, on Thursday. Once there, the ship’s passengers will be disembarked quickly, given hot food and a night in one of 1,500 hotel rooms being held by the cruise line. That will no doubt be a welcome change to cold sandwiches and showers along with hot, unventilated cabins.

While reports from passengers on board via Twitter and Facebook vary from describing the situation as a “cruise from hell” to a more positive “we’ll sure remember this one,” odds are everyone will be happy when the sailing is over.”Generally speaking, the mood on board is good under the circumstances and most guests are making the most of it,” Carnival spokesman Vance Gulliksen told Travel Pulse.

On Friday, 20 charter flights will take passengers back to Houston where arrangements have been made to get them back home. Those on the ship right now will receive a full refund of what they paid for the cruise along with any non-refundable travel services and a complimentary cruise in the future.

The U.S. Coast Guard and the National Transportation Safety Board have launched an investigation into the incident.

Have A Heart: How This Organ Meat Is Eaten Around The World

Americans are frequently credited with having a lot of heart, but when it comes to eating them, we’re not so hip on the idea. Even though offal, or “nose-to-tail” eating has been on-trend for some years now, a lot of people still flinch at the idea of dining on animal heart.

The reality is, heart is a delicious, healthy, versatile meat, devoid of the strong flavor possessed by most (improperly prepared) organ meats. My chef friend Ryan Hardy says, “The heart is a muscle, just like loin or shoulder.” A former farmer who makes his own charcuterie, Ryan’s made a name for himself with dishes like veal heart scallopine, and other rustic, meaty treats.

The rest of the world uses the hearts of all sorts of critters, from frog to horse, in a variety of ways. In honor of our own heart-centric holiday (that’s Valentine’s, y’all), I’ve provided a list of the most well known dishes, along with some modern interpretations of classic recipes, by some of the nation’s most acclaimed chefs.

Anticuchos
One of the tastiest/least frightening of heart dishes are these skewered and grilled chunks of beef heart from Peru. Although anticuchos can be made with the hearts of other species, corazon de vaca is the most popular, and sold by street food vendors across the country, and in other parts of South America.

Cobra heart
We’ve all seen it on the Travel Channel, whether it’s “No Reservations,” “Bizarre Foods,” or some other show. Or perhaps you’ve experienced it for yourself: the old, snake-heart-in-a-shot-of-firewater, or swallowing the still-beating-cobra or frog heart. It’s what men in parts of Asia use in place of Viagra, and frankly, I’d take impotence, any day. For anyone who’s ever stared into a bottle of rice whisky, cloudy with flecks of tissue, and observed a bobbing gray blob of reptile or amphibian heart, you know what I’m talking about.
Haggis
The beloved national dish of Scotland consists of a sheep’s stomach stuffed with a highly-seasoned mixture of the animal’s lungs, heart and liver, mixed with oatmeal. If that doesn’t tempt you, perhaps the cooking technique will. Boiling is nothing if not sexy.

Giblets
Originally, this term referred to a stew of game birds, and dates back to the 16th century. Today, it refers to the edible organs – usually heart, liver, and gizzard – of poultry, which are used for making gravy. Tip: Caramelize these suckers before attempting to make stock and/or ragù from them; it makes all the difference in depth of flavor in the final dish. Serve atop fresh pappardelle pasta, and you have a dish that says, “I love you.”

Coer de Veau Farci
This classic French dish from centuries past consists of veal heart stuffed with forcemeat (often mushrooms) and wrapped in caul fat, before being cooked in the oven. It’s served with a reduction of the pan juices and white wine enriched with butter. According to “Larousse Gastronomique,” the French bible on all things culinary, “Pig or sheep hearts are used to make a ragout or a civet [a game stew thickened with blood].”

In the contemporary world, heart is growing more mainstream thanks to the work of chefs and food personalities. For example, last June, I attended a cooking demo by Andrew Zimmern at the FOOD & WINE Classic in Aspen. The theme was “Game On!” and Zimmern prepared a handful of dishes utilizing oft-unloved animal parts. He converted the dubious, especially with his grilled venison hearts with arugula, sauce Gribiche and shallot rings

Another acquaintance of mine, Jonathon Sawyer, chef/owner of Cleveland’s acclaimed The Greenhouse Tavern, is serving up confit beef heart paprikash (with bacon, onion, smoked paprika, steamed potatoes and spaetzel) as part of this year’s Valentine’s Day Menu. I asked Jonathon what had inspired this untraditional take on paprikash, which usually calls for chicken meat (heart-free).

He told me, “It was partly inspired by my travels in Europe. When cooking things like offal at the restaurant, we like to use familiar flavors that encourage our guests to give it a try. To me, nothing is more comforting than a big bowl of Hungarian paprikash just like Grandma Szegedi used to make.”

That, my friends, is love.

Meet The American Man Who Is Walking Across Turkey

Matt Krause swears that he isn’t crazy. But some of his friends and family members would beg to differ, even though the 43-year-old California native has safely completed two-thirds of a 1,305-mile walk across Turkey.

I read about Krause’s plan to cross Turkey on foot in Outside last September, when he was just a few weeks into his trip, and wondered if he would have the resolve to make it. Krause and I spoke via Skype on Monday from Kahramanmaraş, where he’s taking a week off from his walk to work on a book he’s writing about the adventure he’s documenting on his blog, “Heathen Pilgrim.”

“I wanted to show people they don’t need to be afraid of the world,” he says. “Look at me, I can go out and walk across Turkey and be homeless and vulnerable and basically helpless every single day for 8 months and I’ll be perfectly fine, knock on wood.”




Krause’s Turkish wife asked him for a divorce in 2011 and shortly thereafter he quit a hated kitchenware sourcing job in Seattle. At a crossroads in life, he moved back in with his parents in Reedley, California, and started taking long walks to see if he could physically handle a rigorous walk. Krause lived in Turkey for six years with his ex-wife before returning to the U.S. after a jewelry business he started failed. But he says that he didn’t let the failed business and relationship in Turkey extinguish his desire to see the country on foot.

“I still love Turkey,” Krause says. “I had a bad experience with one person out of 70 million.”

He did some research on other accomplished long-distance walkers and drew inspiration from people like Jean Béliveau, who spent 11 years walking around the world.




Krause set off from Kuşadası, on Turkey’s Aegean coast on September 1, and is on pace to reach Turkey’s border with Iran in early April. For the first 500 miles of his walk, Krause carried a 42-pound backpack and spent most nights pitching his tent at gas stations, mosque gardens and in roadside fields and clearings.

“They say ‘yes’ and then look at you like you’re crazy,” Krause says, when asked how Turks respond when he requests permission to camp on their property. “I’ve never had a hard time finding a place to stay, but sometimes I had to be more persistent than others.”

Eventually he decided that his trip would be more meaningful if he arranged to stay in people’s homes using the website Couch Surfing. Now he crashes with hosts on most nights and then commutes to his walking route by bus each day. When he was carrying his pack, he averaged about 12 miles per day but now that he’s couch-surfing, he averages closer to 20, walking on the narrow shoulders of two and four lane roads.

The apparent murder of Sarai Sierra, a 33-year-old tourist from New York who was on holiday in Istanbul last week drew headlines around the world, but Krause insists that he feels very safe in Turkey.

“Getting hit by a car is the greatest danger I’ve faced,” he says.

He treats himself to a hotel room about once per week when he can’t find a free place to crash and says that he so far he’s spent about $700 per month, including food, health insurance, cellphone and all of his other expenses.

Krause says that he’s experienced tremendous hospitality in Turkey but admits that that hospitality has its limits.




“Turkish hospitality rocks, but it’s not as deep as Turks would like to believe it is,” says Krause, who has an undergraduate degree in Chinese history from The University of Chicago. “It goes a couple days deep, and then it’s like the American saying that on the third day guests start to stink like fish. It’s the same thing in Turkey.”

He dedicates days from his walk to different friends and posts a photo of a hand written sign in their honor to his Flickr page (see right). One of the highlights of his trip so far was a day he spent walking through the scenic Goksu River Valley, where a commander at a military outpost took him out for breakfast and villagers showered him with hospitality. But Krause has had to overcome a foot injury and plenty of rain.

“But even if it’s raining really hard, I still walk,” he says. “I like those days because it clears out the traffic.”

The last leg of Krause’s journey will also be the toughest. He’s heading into Turkish Kurdistan, a restive region where the Turkish military has been fighting Kurdish separatists for years, and he’ll have to face some serious uphill climbs to reach his goal.

But aside from the physical challenges, Krause says that the hardest part of the trip is fighting loneliness and maintaining his sanity.

“My Turkish is only good enough for small talk and I have that same conversation all the time, so I get sick of it,” he says. “You spend so much time in your own head that you need to connect with people.”

Krause says that he will be satisfied if his walk inspires even one or two people to go on a trip, start a business, or take a chance on something they’d like to do but can’t work up the courage for.

“People have lots of dreams but they don’t pursue them because they’re afraid,” he says. “I have a saying, it’s ‘Don’t have dreams, have things you do.'”
