Americans leave an average of 11 vacation days on the table each year

We’ve spent the past two weekends trying to plan a last-minute pre-holiday getaway and keep coming to the same conclusion … it’s just too busy at the office to take time off right now. Turns out, we’re not alone – a recent Harris Interactive study conducted on behalf of JetBlue Airways found that 57% of working Americans will have unused vacation time at the end of the year, and most of them will leave an average of 11 days on the table – or nearly 70% of their allotted time off.

The survey also showed that while more than 60% of those with vacation days believe they deserve to take their time off, 39% report having reservations about asking their boss for a vacation.

It’s difficult, as numerous studies show that employees who don’t use vacation time have lower levels of productivity and satisfaction with their job, as well as higher rates of health problems.

To assist, JetBlue launched a “Getaways Granter,” a new custom Facebook application that serenades bosses with a custom video request for vacation approval.

“We were surprised to learn that almost a third of American workers feel guilty, nervous or stressed when asking for a day off of work,” said Grant McCarthy, director of JetBlue Getaways. “Whether outdoor wrangling, island hopping, or romantic retreating, JetBlue Getaways wants to help people make the most out of their unused vacation days. We believe people deserve their vacations, so much so that we will go out and ask their boss for them.”

With the new Getaways Granter, JetBlue will take the edge off of requesting vacation days by allowing fans to plug in their desired number of days off before choosing from four destination themes to suit their getaway needs. They can even upload a photo of their supervisor to be featured in the video, crooning bosses everywhere into letting employees take their much-needed getaway.

Hmm. We’re pretty sure that our boss would prefer a politely-worded email. The program, while creative and an interesting way to use social media to get the world out about Jet Blue, seems like a gimmicky promotion that won’t go over well in the workplace. Still, we hope you remember to take advantage of your vacation time.

Cars, trains, buses, and planes aren’t the only way to get around a country. From the Bamboo Train in Cambodia to the Rail Cart in the the Philippines to the Couch Bike in Canada, here are ten unique modes of transportation from around the world.

Chicken Bus
Guatemala, Central America

While variations of the chicken bus can be found in many different countries (this reminds me a lot of taking the tro-tro in Ghana, Africa), this vehicle is used not only to transport people but also livestock, hence the name. These U.S. school buses are very eye-catching as they are colorfully painted and decorated. When taking one expect cramped conditions, as chicken buses tend to be packed to capacity, and hectic driving at Nascar speeds.Sled Dogs
Alaska, USA

Sled dogs are highly trained dogs that are used to pull a dog sled, which is a vehicle without wheels that glides over snow and ice. If you need a mental image, think Santa being pulled by reindeer, only you’re not flying and there are dogs instead of deer. Endurance and speed are the two main qualities that sled dogs must possess, and this transportation type has become a popular winter sport in other countries around the world such as Japan and Germany.

Kyoto, Japan

While urbanization across Asia has mostly done away with this traditional form of transportation, you can still find them used in certain areas where cars are not accessible in Kyoto, Japan, as well as in some parts of India. According to Kelvin Lim of BootsnAll, many rickshaw “drivers” wear a special foot-glove that helps them travel through various types of terrain without slipping.

Elephant
India and Asia

In India and many places in South East Asia, an elephant is not only an animal but also a mode of transport. When I was Vietnam I actually went on an elephant ride with a local school owner named Roy who explained to me that “in many Asian countries we use animals to help with labor”. While once used to carry the wealthy around, today exploring a country on the back of an elephant is a big tourist attraction.

Philippines, Asia

The Habal Habal is a unique motorcycle that can seat many people. The simpler versions seat 4-5 people, with a seat that extends over the back wheel, while the more complex type of Habal Habal can seat up to thirteen people and their luggage with the addition of wooden planks acting as benches.

Philippines, Southeast Asia

The rail cart is most commonly found in the Philippines and is literally a cart that is pulled along rail tracks by a person, people, or a horse. The special wheels on the cart allow for quick transport but, unfortunately, are not always fast enough to get out of the way of the real trains that also use the tracks.

Reed Boat
Lake Titicana, Peru

Lake Titicana stretches across the countries of Peru and Bolivia and is home to many floating villages around Southern Peru. These villages are inhabited by the Uro people, who use natural resources, like reed, to construct homes and boats. The boats are light but resiliant and, built in the shape of a dragon, are said to have been used by the anicent Incas to ward off evil spirits.

While there are many places where camel rides are popular, one way to try out this transport option for yourself is by trekking through the beautiful rose colored deserts of Wadi Rum in Jordan. Cairo, Dubai, Mongolia, Morocco, and many deserts in India are also known for being camel riding hotspots.

Couch Bike
Canada

When I found this highly unusual mode of transportation, I was kind of expecting it to be from America. The Couch Bike, which is literally a couch that you pedal like a bike, pokes fun at sedentary culture while providing an eco-friendly alternative to driving. Just make sure you know the traffic laws of the city you’ll be riding in, as the vehicle may not be legal to drive in all areas.

Monte Toboggan Ride
Madeira, Portugal

This unique transport mode is only for the adventureous. Once a popular mode of transport in the 1800’s-early 1900’s, it is a big tourist attraction today in Madeira. Passengers sit in a wicker or wooden tobaggan and ride down the mountain from Monte to Funchal. While an exhilerating experience, you don’t have to worry too much about crashing as there are two locals “steering” the vehicle from the outside. It’s kind of like being a kid again and having your parents pull you around in a sled, only your parents probably weren’t yanking you down a steep mountain with winding turns.

SAME Café is a unique restaurant that came to be from community service. After spending time volunteering at food banks and shelters, the Birkys, the creators of SAME Café, decided they wanted to create a place that could assist those who were having financial trouble. Not only are there no set prices at the restaurant, there is no set menu, with daily selections being made with fresh, organic ingredients and being funded by patron donations. There is no cash register, but instead a donation box where people can pay what they feel is fair. If a person cannot pay, they are encouraged to volunteer for an hour at the eatery.Karma Kitchen
Berkley, California; Chicago, Illinois; Washington, D.C.

Karma Kitchen doesn’t put a price on their bills, but instead a message: “Your meal was a gift from someone who came before you. To keep the chain of gifts alive, we invite you to pay it forward for those who dine after you”. The eatery serves lunch on Sundays (each restaurant schedule varies) and is run completely by volunteers (anyone is welcome to give some of their time), and sustains itself through the generosity of others.

Highland Park, New Jersey

A Better World Café serves seasonal and sustainable fare, offering patrons an array of payment options for their meals. Diners can choose to:

  • Pay the suggested price (or give a bit more to help feed someone else)
  • Volunteer an hour of their time instead of giving a monetary payment
  • Enjoy the complimentary meal of the day if payment and volunteering cannot be done

With a focus on eating locally, patrons can expect fresh, healthy ingredients and meals such as soups, breads, salads, sandwiches, and desserts.

Jon Bon Jovi Soul Kitchen

Jon Bon Jovi Soul Kitchen is run by the Jon Bon Jovi Soul Foundation, which aims to combat issues that force individuals and families into economic crisis. Patrons can expect a 3-course, American-style meal beginning with a soup or salad and followed by an entree and a dessert. Ingredients are fresh and locally produced, and diners are encouraged to socialize with the people sitting next to them as they eat. While diners can pay what they please, donations of $10 cover the meal. If a patron cannot pay, they are allowed to donate some of their time to helping out at the restaurant in exchange for the meal.

Comfort Cafe
Denver, Colorado

The Comfort Cafe is a not-for-profit gourmet restaurant serving local, fresh, organic cuisine as well as vegetarian, vegan, and gluten-free items. The menu is all about simplicity, with few items containing more than six ingredients. Patrons choose the food they want to eat, with sampler plates also available. While all food is free, donations are appreciated.

DER WIENER DEEWAN
Vienna, Austria

DER WIENER DEEWAN is a Pakistani restaurant that allows patrons to eat as much as they want while paying whatever they please. The buffet includes daily choices such as lamb, chicken, curry, vegetarian dishes, and delicious desserts such as mango-semolina pudding.

Killarney, Ireland

Pay As You Please is a laid-back restaurant offering patrons free Wi-Fi and modern approaches to classical fare created by a trained chef. Delicious dishes include vegetarian, vegan, soul food, and pizza, and at the end of the meal diners can pay what they please. It is a good idea to make a reservation here, as it can get crowded.

There are no prices listed, but instead patrons are asked to make donations to keep the eatery up and running. The restaurant offers simple Indian cuisine and even allows diners to place takeaway orders. On the weekends, there is also a bazaar at the cafe that sells local products including batik art, handmade soaps, naturally dyed fabrics, and more.

Lentil As Anything
Melbourne, Australia

Lentil as Anything has various locations in Melbourne and is a not-for-profit community organization. Their restaurants offer hearty and healthy vegetarian cuisine and ask that patrons donate what they think their experience was worth, from the food to the company’s philosphy and community.

Five sustainable alternatives to turkey this Thanksgiving or holiday season

If you expected to see “Tofurkey” anywhere in this article, you clearly aren’t familiar with my work. Nope, no textured vegetable protein here.

As a kid–an obnoxiously picky eater, at that–turkey was on my lengthy list of foods to avoid. I suspect it was the notoriously dried-out birds of my youth that caused my aversion. Today, I like turkey, but it’s honestly not one of my favorite eating birds: I much prefer a good roast chicken or a game bird.

Game birds–both wild and farmed–are popular throughout much of Europe, especially in the UK, France, and Italy. Goose and duck are frequently seen in Asian cuisine, depending upon the country and region. And now, game birds are growing in popularity in the U.S.. Quail and duck aren’t difficult to find on menus, but there’s also squab, guinea hen, partridge, wood pigeon, etc.. Some birds, such as goose, heritage breed turkeys, or wild game birds may be seasonal or require order well in advance; just to give you an idea, the turkey farmer at my local market has people start signing up for Thanksgiving birds in March.

If you can’t find these birds at your local farmers market on butcher shop, you can order them online. The important thing is to ask or research how the animals are raised, and make sure it’s in a humane, ecologically responsible manner (see end of article for more information).

With the proliferation of farmed birds (mostly small-scale operations) in the U.S., I’m hard-pressed to recommend you shoot yourself some dinner (although I’m behind roadkill), but hunting is a discussion for another day. For the record, while I don’t participate in it myself, I support hunting wildlife as a means of population control, as long as the animal in question is fully utilized.

As for you city slickers, just be aware that wild birds are much stronger in flavor, less tender, and in most instances need to hang for a few days so the proteins can break down and render the meat edible. So put away your bird call and shotgun unless you have the experience and permits, and do your shopping locally or online. No muss, no fuss, and trust me, plucking birds is a serious pain in the ass. Farmed birds are bred for more tender meat, are usually hens (also more tender and mild), and a great choice even if you’ve never cooked anything beyond a chicken breast.

Do note that goose and duck, are very fatty (the extra padding helps keep these aquatic birds buoyant) and you’ll need to render the fat before you can cook the meat. The key to successfully preparing most birds, however, is to not overcook them. Your butcher or any number of cookbooks will be able to tell you how to prepare them. 1. Goose
Goose was once a British Christmas dinner favorite (oddly, turkey is now the bird of choice), and it’s still popular in Germany. According to esteemed food writer Joan Nathan of Joan Nathan’s Jewish Holiday Cookbook (Random House), German Christians traditionally ate goose for Christmas, and Jews cooked it for Hannukah. In her book, she provides a lovely family recipe for roast goose stuffed with chestnuts and apples that would make any Thanksgiving table proud.

[Photo credit: Flickr user turtlemom4bacon]Goose is considerably more fatty than other birds, so it’s not a good choice if you’re watching your cholesterol or calories (stick with white meat turkey). But it’s that layer of fat that makes the meat so succulent and juicy. It’s very rich, so a little goes a long way; ideal if you’re feeding a crowd.

2. Pheasant
The Common Pheasant is native to Asia, but there are over 30 subspecies that have been introduced all over the world as a game bird; it’s naturalized in Europe. In the U.S., we’re most familiar with ring-necked pheasant: the males are striking, with emerald- and crimson-colored heads. Farmed pheasant is growing in popularity on menus, and is similar to dark chicken meat in flavor

3. Quail
While tiny and full of bones (imagine gnawing on a giant hummingbird drumstick), quail is a great choice if you’re having a small gathering because you can serve one bird per person. They’re very dainty and require simple preparation. Just butterfly them, thread on skewers and toss on the grill, or pan-fry. Quail meat is dark, juicy, and non-gamey; it pairs beautifully with dried fruit such as figs, dates, or cherries. Toss grilled quail atop some bitter greens dressed with a bacon vinaigrette, add some plumped dried fruit, and let the cooking juices wilt the greens. Dinner is served.

4. Duck
Duck is commonplace on fine-dining menus nationwide. While technically white meat (as is goose), it’s similar to red meat: rich, rosy, and juicy with burnished, crackling skin. Many people are intimidated by cooking duck, but it’s one of the easiest alterna-birds to work with, especially if you just use breast, thigh, or leg meat. Breasts will have a thick layer of fat beneath the skin; you’ll need to score the skin in a cross-hatch pattern to help the fat render (Don’t throw it out! Store it in a clean, sealed jar, and use it to fry potatoes or other foods for extra crispy goodness). Grill or saute breasts; legs take well to braising or confit.

There are three main breeds of duck sold commercially: Pekin, Muscovy, and Moulard. Pekin are the most tender and mild, while Muscovy are large, meaty, and stronger in flavor. Moulard are a Pekin/Muscovy cross; they’re larger, more fatty, and stronger in flavor than Pekin, and are usually raised for foie gras.

5. Squab
A more civilized term for pigeon, these aren’t your standard “rats-with-wings” variety. Squab are eating pigeons, and the meat is similar to duck–very juicy and rosy in color, with an almost livery flavor. Think of it as a smaller duck in terms of cooking technique.

Speaking of park pigeon, when I lived in the Bay Area, there was a semi-factitious activist group advocating the consumption of the out-of-control resident pigeon population (something I’d be completely behind if these birds weren’t such carriers of disease). To prove their point, they cooked up a bunch of captured birds in a San Francisco park one day and had a well-documented pigeon picnic. I’ve always found that hilarious.

Even if you decide to just stick with turkey or switch to chicken this holiday season, the most important thing–besides technique–is to start with a great bird. It’s worth the extra expense to get a pasture-raised animal that’s been supplemented with exercise, sunshine, plant matter, and foraged bugs. You’ll taste the difference, but it goes beyond just flavor.

Industrially-raised poultry (i.e. chicken and turkey) are the taste equivalent of Styrofoam with bland, watery meat plumped with saline solution; their feed is often supplemented with arsenic to produce pinker meat and act as a growth promotant and antiparasitic. They’re hybridized to grow quickly and possess outrageously oversized breasts (because that’s the part most people prefer to eat). Factory farming is also an inhumane, environmentally devastating industry with far-reaching impacts upon human health (Click here for more information on sustainable-vs-industrial turkey farming).
