Austria comes to New York: wine and food pairing at Wallse

I have a new favorite restaurant in New York, and it is called Wallse. Located one block from the Hudson Promenade at 344 W. 11th Street, this ambient venue puts a modern twist on classical Viennese dishes, all within a dimly lit space that could also be classified as an art gallery, with contemporary pieces from artists like Julian Schnabel and Albert Oehlen on display.

On Tuesday, I was invited to an Austria Gala Dinner held at this restaurant, which included mingling, learning about tourism in Austria, and, best of all, wine and food pairing. Upon arrival, guests were offered glasses of sparkling wine as well as hors d’oeurves like wienerschnitzel and tuna tartare. After networking and meeting people from Austria’s tourism industry, guests sat at arranged seats to begin a wine and food pairing.

The first course included a choice of local market greens with spicy radishes and pumpkinseed oil or spätzle with braised rabbit, wild mushrooms, and sweet corn. I chose the second option, which was paired with a sweet white wine called Neuberger-Tinhof 2008. From talking to the Austrians at my table, I learned that spätzle is basically a type of soft noodle. The meat was tender and mixed with the sweetness of the corn was a perfect combination. Not only was the starter course delicious, but the servers never allowed anyone’s wine glass to be empty for less than a second.For the second course, the choices were between a pan seared brook trout with roasted cauliflower, almonds and raisins or boiled Kavalierspitz with root vegetables and apple horseradish. Once again, I chose the second option, purely based on the fact that I had no idea what it was and love being surprised by ethnic foods. This dish was paired with a red wine that reminded me of Shiraz and was called Blaufraenkisch-Markowitsch 2009. I learned that Kavalierspitz basically means boiled beef, and mixed with the apple horseradish, which reminded me of apple sauce, was definitely an interesting flavor.

For the desert course, the options were between Salzburger Nockerl with huckleberries and sorbet or Schokoladentorte with salted caramel ice cream and whiskey sabayon. Despite the fact that everyone at my table ordered the Salzburger Nockerl, including all the Austrians who kept insisting that it was their favorite desert of all time, I ordered the Schokoladentorte, just to be different and also to see what it looked like. This course was paired with a desert wine that was much lighter than the desert wines I am used to sampling in Long Island, New York, yet still sweet, called Auslese-Kracher 2009. When the deserts came out, I instantly regretted not getting the Salzburger Nockerl. Not only was it much bigger than my desert, it looked so interesting, especially the texture. Made with egg whites, eggs, sugar, flour, and custard sauce (which is what I was told by my dinner companions), the desert looked like crispy yet soft mounds of sweetness. Luckily, the man next to me let me try his, or I probably would have cried, because it was incredible. Not too sweet, but very satisfying.

A profile of travel writing school Matador U

As someone who has been traveling around the globe since before I can remember, I have always dreamed of being a travel writer. While I would often blog about my trips to my friends and family, write about my trips for school papers, and create websites and content for (unpaid) internships, I never realized that travel writing was something that normal people could actually make a living out of.

Matador has always been one of my favorite travel websites, so when I saw that they were offering a MatadorU travel writing course, I became interested. I did a bit of research, read reviews and feedback from other students, contacted the instructors, and, after deciding it sounded worthwhile, signed up. Plus, I liked the fact that they allow you to try the course for a week for $10 to see if you like it, risk free.The total for the course is $350 which gives students access to various lessons, resources, and support forums. With all the course offers, I can honestly say it is the cheapest yet most worthwhile course I have ever taken. Before even get started, there is a pre-course that helps you setup your blog and learn what steps to take to get the most out of the course. After that, there are 12 weekly chapters (although, you are allowed to take as much time as you need to complete them), each with key terms, lessons, examples to make the lessons clear, and assignments that are critiqued. Unlike many of the assignments that I completed in school, what is great about MatadorU’s assignments is that each one becomes content to help build your blog. There are also assignments that help you create photo essays, podcasts, portfolios, and advertising pages to help monetize your site. Some other important lessons learned from MatadorU include:

  • creating successful pitches
  • finding and approaching editors
  • crafting compelling beginnings, middles, and ends to your story
  • creating characters and dialogue
  • writing in different tenses and using all of the five senses
  • writing different types of articles, for example, destination pieces vs. reviews
  • crafting a successful bio
  • how to apply for press trips and etiquette to abide by if you are chosen
  • tips for successful freelancing
  • tips for travel writing full time (for example, how to get insurance)
  • how to successfully use social media as a travel writer
  • how to work on the road

And much more (seriously, that isn’t even half of what they cover). Really, though, if there isn’t something covered, you are free to seek help by contacting the instructors or posting in the community forums where your peers, as well as staff, comment. The forums are not only a great place to learn and get advice about travel writing, but are also helpful in creating contacts, finding potential project leads, finding out about writing contests and jobs, and allowing you to talk to like-minded people in your niche.

By the time I had reached Chapter 3, I had not only begun contacting editors and sending pitches, I had started making money. My first article that I successfully pitched and sold was for an online adventure travel magazine about hiking in New York. While they normally didn’t pay for articles, they liked my idea so much they gave me $50 to create a mini-hiking guide for them. While this isn’t a ton of money, just starting out, I was pretty excited, especially since for years I had been writing for websites that didn’t pay me a dime. It also gave me the drive to really put all of my efforts into the MatadorU course and get the most out of it, giving me the confidence to pursue higher paying avenues (many times, successfully!).

Aside for the immense amount of information they give you and the feeling of a strong support system, there were two things about this course that really made me feel like it was worthwhile. The instructor in charge of the course, Julie, is the most helpful teacher I have ever had. I was always amazed at how much thought she put into giving me feedback on my assignments and my endless questions and e-mails. She has taken the time to Skype with me about future steps in my travel writing career and has even set me up with some networking projects. I am not sure how she finds the time to give each student so much attention, especially since she is a travel writer herself, but she does.

The other factor that has really made me a fan of MatadorU is all of the resources that I have, and always will have, access to. Just the Magazine List alone, with publication information, submission guidelines, and editor contacts for over 100 travel-related magazines, was worth the cost of the class. There are also pro-modules that are helpful to alumni, as well as a Market Blog that posts press trips, job leads (I have actually gotten paying assignments and jobs from this), and a weekly Writing Lab where you can have any piece of writing you wish to submit critiqued.

So what did I get out of the course? A lot. By taking this course I have not only helped enhance my writing, researching, note-taking, social media, and blogging skills, but have also seen that it’s actually possible to be paid to do what I love most, travel.

Destination spotlight: Kokrobite, Ghana, Africa

For those traveling in Ghana who want to get out of the big, noisy capital city of Accra, Kokrobite is a beach paradise located less than an hour away. The village is easily accessible by tro-tro from Tema Station, Kaneshie Market, or anywhere else you see people hailing a car. Kokrobite can provide both a perfect day trip or an enjoyable weekend stay.

Where to Stay

Whether you plan on actually spending the night or just the day, Big Milly’s Backyard is the ultimate backpackers haven on the beach. While that might sound like a marketing ploy, I mean it to the fullest extent. Big Milly’s is just as well known as the village of Kokrobite itself and is the place where backpackers and locals both come to hangout, party, eat, and relax. Room styles range from single rooms to suites to dorm-style huts to outdoor tents. The property of the accommodation fills with marketers during the day selling clothing, paintings, toys, accessories, and more. A bar, multiple outdoor restaurants, hammocks, picnic tables, and an ocean breeze add to the relaxing and idyllic atmosphere of Big Milly’s.Where to Eat

While Big Milly’s is a bit pricier than the other restaurants and road-side stalls in town, you will still most likely pay less than you normally would at home. For example, a spinach tagliatelle made with vegetables, cheese, and white wine sauce costs 12 cedis (about $7), mixed roast vegetables with couscous will cost 11 cedis (about $7), and huge plate of vegetable fried rice will cost you 8 cedis (about $5). They also have a snack stand that sells biscuits, crackers and toffee (candy).

If you would like to try something traditional, in town there is a small structure called the Broken Chair Bar. If you go inside, it appears to be the home of the woman who runs it. You can have an authentic Ghanian meal here for extremely cheap. Try the fufu in ground nut soup (a cassava-based dough ball in a peanut based soup) with fried chicken or the jollof rice (rice that is cooked in red, spicy sauce), both about 3 cedis (less than $2).

Culture

Many of the people, though not everyone, who inhabit Kokrobite follow a Rastafarian lifestyle. Walking around the village, there are many small shops and bars that cater to this lifestyle. One fun and unique place to try is Cafe des Artes, an outdoor venue that plays Bob Marley-type music all day long, is decorated with funky beads, and serves fresh palm wine (you can purchase a whole soda bottle full for about 6 cedis, which is about $5). Don’t be alarmed that the wine doesn’t come in a wine bottle, it usually comes in a soda bottle or plastic gas-tank style containers no matter where you buy it.

Drumming is a large part of Ghanian culture, and is something enjoyable to experience for yourself, especially on the beach in Kokrobite. Visit Berlin Drum School and ask them for a lesson on the beach. The cost is supposed to be about 25 cedis (about $15), although with the help of a local friend I was able to get the lesson for 5 cedis (about $3). The boys will create beats for you to mimic, teach you how to properly hold and hit the drum, and will even dance for you.

On Friday and Saturday nights, Big Milly’s hosts cultural shows that bring the laid-back atmosphere of the village to life. Friday nights feature BBQ and bonfires while live cultural acts, such as drummers and dancers, perform live. On Saturday nights, reggae shows and highlife bands take the stage as the dance floor (beach) becomes packed. Beers cost about 2 cedis (about $3), while cocktails are about 4 cedis (about $2.50).
