Gadling’s cold weather gift guide

Christmas is less than two weeks away (and Hanukkah wishes are now being expressed belatedly), and that’s still plenty of time to shop for all of your favorite people. We’ve already covered the best gifts for outdoor travelers and the top luxury travel gifts, so this time around we’re focusing on people who embrace winter.

You know the type: the adventurers who see snow and can’t wait to get outside to enjoy the season. OK, these gifts are also for people who barely tolerate a cool breeze and just need some gear to help them survive the next three months.

However, don’t have to simply survive winter. You can enjoy it – and look good – with the right gear. So, bundle up, pour some hot cocoa into your favorite travel mug (we’ll get to that shortly) and head outside. We rallied the Gadling troops and put together a list of our favorite winter gear. This is Gadling’s cold weather gift guide.

Mike Barish

I love the Patagonia Wanaka down jacket (pictured above). There’s nothing I hate more than someone in a fashionable pea coat complaining about the cold. Maybe if they dressed properly, they’d be comfortable. On the flip side, so many warm coats are just plain ugly. Unlike all the bubble jackets you’ll see everyone wearing every winter, the Wanaka is a down jacket that actually looks good. It manages to combine fashion and function by looking sleek while packing 600-fill down inside. ($349 at Patagonia)

I also never leave the house without my Dale of Norway knit cap. Dale of Norway gear is beyond warm and I could probably wear nothing but their knit cap and still be comfortable outside. I haven’t been able to find my exact hat online (my girlfriend picked it up while she was in Norway) but you can shop for their gear at high-end sporting goods stores and sites such as Amazon and Zappos. ($49 on Amazon)

If you like to take coffee (or, if you’re like me, hot chocolate) with you, then you’re going to want to carry it in Klean Kanteen’s insulated bottle. It will keep your beverages hot for an astonishingly long time. (Starting at $22.95 at Klean Kanteen)

Grant Martin

Our well-traveled editor is a big fan of the Icebreaker 320 RealFleece Aspiring Hood. He’s sung its praises previously and continues to enjoy Icebreaker equipment. The merino wool keeps you warm and doesn’t absorb odor. Great for when you’re breaking a sweat on the slopes, chopping wood or just building a snowman. ($200 at Icebreaker)

Darren Murph

Leave it to our favorite Engadget Associate Editor to recommend the Recon-Zeal Transcend goggles with built-in GPS. As he noted on Engadget, these goggles are “equipped with a Zeal Optics’ frame design with a micro LCD display, which appears to hang approximately six feet in front of the user. That head-mounted display provides real-time feedback to the wearer, including speed, latitude / longitude, altitude, vertical distance traveled, total distance traveled, a chrono / stopwatch mode, a run-counter, temperature and time.” Wow. ($399 or $499 depending on model at Zeal Optics)

Scott Carmichael

For someone who lives in Chicago, Scott sure does hate winter. Maybe that’s why he recommended Zippo’s new hand warmer. It might look like a classic Zippo lighter, but you won’t see any flame coming out of this hand warmer. It uses Zippo lighter fluid to provide hunters, skiiers and Chicago commuters with portable warmth when their fingers start to go numb. ($19.95 at Zippo)

Kent Wien

Gadling’s resident pilot loves Arc’teryx gear (so much so that he let us use a picture of his lovely wife, Linda, modeling some of her favorite pieces). Linda highly recommended her Beta AR jacket and Strato fleece. According to Kent, “You’ll be drawn in by the colors and schemes, and hooked when you see the functionality (pockets everywhere). And then you’ll likely take a step back when you see the price. But if you take the plunge, you’ll probably be hooked on their products for life.” ($450 and $175, respectively, at Arc’teryx or much cheaper on Amazon)

Alex Robertson Textor

Alex loves Fox River Socks’ Red Heel Monkey Socks. According to Alex, “Fox River Socks manufactures the original Rockford Red Heel monkey sock, and apparently every pack of socks from Fox River comes with monkey sock instructions. I love these socks for their warmth and feel during winter.” ($12 at Fox River Socks)

Laurel Miller

Laurel gushed about her Western Mountaineering Hooded Flash Jacket. “It’s microlight (9 oz.), compresses to the size of a softball, 850 plus fill power goosedown, and it’s gotten me through a winter in Telluride (including skiing, which I usually won’t do in down), and mountaineering in a blizzard on the world’s highest active volcano in Ecuador. I wore a waterproof shell over it in that instance. I’ve slept in it on camping trips, and have generally abused the hell out of it and it’s still maintaining it’s loft, and is in perfect condition (albeit a bit grubby). I got caught in a Seattle rainstorm yesterday wearing it, and it still didn’t soak through. It’s the ultimate traveler’s/backpackers jacket, and great for women like me who are perpetually cold, but don’t want to wear a bulky jacket or loads of layers.” ($260 on Amazon)

Kraig Becker

Perhaps no one at Gadling knows more about outdoor gear than Kraig. When he recommends products, we all listen. He’s a big fan of the Outdoor Research Alti Gloves. “A good layering system is only part of the answer for staying warm. You’ll also want something to keep your hands and head warm too. For the hands, I recommend a pair of Alti Gloves from Outdoor Research, which are designed for technical climbing in extreme conditions, which means they’ll also keep you warm on the slopes, during a winter hike, or any other winter outdoor activity.” ($150 at Outdoor Research)

Kraig also recommends layering in the winter, including starting with PolarMax Base Layers. “These base layers come in three varieties; warm, warmer, and warmest. Most Gadling readers will probably be very happy with the “Travel Weight” option, which is light weight, but still very warm. Lastly, Kraig loves the Eddie Bauer First Ascent Hangfire Hoodie. “Their Hangfire Hoodie is an amazing piece of gear that works great as an outer layer jacket in cool weather and an insulating layer in under a shell in cold weather. It is form fitting, but designed to move, making it easy to be very active while not limiting motion. It also looks great and is just as comfortable for use around town as it is in the backcountry. I highly recommend this one!” ($99 at Eddie Bauer)

Annie Scott

Annie loves the feel of cashmere and recommends White + Warren for all of your cashmere needs. That said, when it’s time to be practical with a pair of gloves that keep you warm and let you use your iPhone, she has other ideas. “Tec Touch gloves let you use your iPhone and other devices with your gloves on.” (Starting at $20 at 180s)

McLean Roberts

I recently invested in a pair of Pajar Davos boots. They’re the perfect winter weather wear – not so much gear as they are a fashion statement that actually keeps you both warm and comfortable … Think more apres ski in Telluride or Aspen than anything else. Made of real fur and lined with sheep, these sturdy and comfortable boots are both waterproof and durable, boasting a sturdy rubber liner at the bottom that prevents slipping. Oh, and they aren’t Uggs, so people won’t make fun of you. Okay, they might…I look like I’m wearing a small animal on my foot, but at least I’m warm.” ($350 at Jildor Shoes)

We’ll wrap things up with the wise words of one of our editors:

I love winter. The idea of bundling up in warm sweaters, cozy scarfs and mittens and cuddling by the fire after snowshoeing through the mountains is a perfect way to celebrate the season, in my opinion. But when it comes to the best winter gear, I simply have no idea. I take whatever is warmest from my closet and layer it on, but when Mike asked us to submit our favorites I couldn’t ignore his request.

A good flask and a little whiskey go a long way. I couldn’t tell you what brand my snow boots are or what layer of warmth my ski pants are tagged, but I can assure you a little Johnny Walker Black can warm you up nicely on a cold winter’s day.

So very true. Melanie didn’t recommend a specific flask, but we’ve long had our eyes on this handsome model from Stanley. It holds eight ounces of your favorite warming liquid and you’ll never lose the cap. ($20 at Stanley)

Gadling’s favorite airlines for 2011

Even with airlines falling over themselves in an effort to generate profits out of new fees and charges, flying retains some glamour and excitement. No? Not working for you? Well there are mileage programs to exploit and perks to chase. And even in the direst landscape for customers, there are always new routes to sample, smiling flight attendants to befriend, and reliable pilots to thank for safe landings.

Going into 2011, it appears that Virgin America is Gadling’s favorite airline. Virgin America sails above the competition with their standard of service, their appealing overall product, and their general freshness.

Other airlines we especially like or tolerate for one or another reason include easyJet, Qantas, VAustralia, Air France, Philippine Airlines, Turkish Airlines, Air New Zealand, Cathay Pacific, Jet Airways, Continental, Alaska Airlines, and Porter.

We begin with the observations of Kent Wien, Gadling’s resident pilot-contributor and the motor behind two Gadling features, namely, Cockpit Chronicles and Plane Answers.

Kent Wien. Air New Zealand. I don’t know if I was more impressed with their new line of coach sleeper seats or the friendliness of their flight attendants. Either way, Air New Zealand has managed to capture much of the recent jump in tourism traffic to New Zealand by offering an innovative cabin design and enhanced service which includes an in-flight concierge for the entire airplane. They’ve changed the look and feel of their galleys by hiding them away during boarding, since the first thing passengers see when stepping on to an airplane is the in-flight kitchen. And most of these changes were accomplished even after they were named by Air Transport World as the airline of the year for 2010.

Mike Barish. I continue to love Virgin America. They’re willing to show personality. They have a sense of humor and their use of social media is phenomenal. They have really embraced customer service and care about humanizing their brand.

Annie Scott. Air France has the best coach class of any airline I’ve flown this year, but Philippine Airlines gets ten points for calling their economy class “Fiesta Class.”

McLean Robbins. Virgin America. Am I one of many?

Meg Nesterov. Turkish Airlines has become my default carrier of choice, which is fine given their excellent service. How many other airlines will let you cancel and rebook a flight last minute and only charges a small change fee? Their in-flight meals even in coach are reliably good and always free.

Melanie Nayer. Props to Cathay Pacific. Great in-flight crew, and any airline that makes me a grilled cheese sandwich in flight is tops in my book!

Alex Robertson Textor. Porter, hands down. I like the airline so much I found a way to write a piece for their in-flight magazine. I want two dozen regional Porters around the globe, each with limited route maps, quiet, fuel-efficient planes, friendly fight attendants, and a single class of service.Catherine Bodry. Alaska Air.

Grant Martin. Virgin America & VAustralia. All of that positive press is happening for a reason. These two airlines have the best service out there, and their hard products are equally gorgeous. Get to Australia next year while competition is still high and ticket prices are rock bottom.

Karen Walrond. I fly mostly on Continental because I live in its hub city and that’s where my airmiles are. Here in Houston, we’re nervous about the merger between Continental and United. We hope nothing will be ruined in the process!

David Farley. Jet Airways.

Sean McLachlan. easyJet. Everyone complains about them, myself included, but damn they’re cheap and convenient. And hey, at least they aren’t Ryanair!

Laurel Miller. Qantas for their consistently excellent service, staff, and on-time departures.

Gadling’s favorite hotels for 2011

Where do your loyal well-traveled Gadling contributors especially love to spend the night? We polled Gadling writers on their favorite hotels in 2010. Think of Gadling’s favorite hotels for 2011 as our version of a hotel tip sheet.

Laurel Miller. The Kirketon in Sydney for its quirkiness, cool bar, small size, helpful staff and retro-mod style, blissfully free of big-city attitude. Southern Ocean Lodge on Kangaroo Island, South Australia as a once-in-a-lifetime indulgence in a staggeringly beautiful, intimate setting hovering over a private beach covered with wallaby tracks. For high-end luxury, Ecuador’s Hacienda Zuleta. It’s historic, in the foothills of Andes in northern Ecuador, a working dairy/horse farm/creamery/condor preserve. It offers an intensely Ecuadorean experience, from the local indigenous culture to hospitality, geography, and food that is worth the trek. And lastly theWit in Chicago with its ideal location on the Loop, across the street from the river.

Mike Barish. The Wort Hotel in Jackson, Wyoming. Located right in the heart of Jackson, a historic hotel steeped in cowboy tradition. Grab a drink at the hotel’s Silver Dollar Bar after a day exploring Grand Teton National Park.

Grant Martin. Favorite hotel of the year was the Elysian, right in downtown Chicago. Beautiful, huge rooms, clean, elegant and sharp appointments, razor-sharp staff and a perfect location make this the best spot to spend a long weekend in the Loop.

Annie Scott. The Capella Hotel in Singapore remains a favorite, as does the Hotel Imperial in Vienna. I’m a sucker for luxury. I also loved staying at Sanctuary Sussi & Chuma, a treehouse hotel in Zambia, despite a harrowing adventure with a giant bug which I eventually captured with a teacup and saucer.

McLean Robbins. CastaDiva Resort, Lake Como. Opened in June, this is the first five-star resort to open on the lake in about 100 years. It’s stunning and unique. Used to be a private home to the muse of Bellini, sat empty for decades before being gutted and re-done. Top-notch service, food and spa.

Don George. This year’s hotel highlights were the following trio in Peru. All combined great style and comfort with a deep sense of immersion in the local place, through their architecture, cuisine, artful decorations, and programs that featured local people to promote local sights and attractions. In Urubamba: Sol & Luna. In Aguas Calientes: Inkaterra Machu Picchu Pueblo Hotel. In Cusco: Inkaterra La Casona.Tom Johansmeyer: My favorite hotel will always be On the Ave, on W 77th Street, between Amsterdam Ave and Broadway in Manhattan. I once lived there for a few months, and while doing so, I fell in love with the Upper West Side, ultimately moving into the neighborhood. Since my stay in 2004 the rooms have been renovated, but the sixteenth-floor terrace remains. On your next trip to the city, skip the big names, and head up to my neighborhood: it’s worth it to stay a bit out of the way.

Melanie Nayer. Sticking with the Shanghai theme (see yesterday’s favorite destinations post) my favorite hotel this year is the Ritz-Carlton Shanghai, Pudong.

Karen Walrond. I’m a big fan of the boutique hotel. Recently I stayed at Hotel Lucia in Portland and was blown away by the customer service, and it’s not too expensive. In my homeland of Trinidad, I love the Coblenz Inn, an upscale little boutique place. I also love Acajou, an upscale-yet-very-rustic eco lodge in Grand Riviere, Trinidad. Lovely.

David Farley. The Royal Park Hotel in Tokyo. If you can, get upgraded. Upgrades mean an early-evening cocktail hour with complimentary drinks and snacks every evening.

Kraig Becker. The Chico Hot Spring Resort located in Montana, just north of Yellowstone National Park in the beautiful Absaroka Mountains. Rooms start as low as $49/night and range up to $300/night for luxurious cabins with some of the most spectacular views around. After a gourmet meal in the Chico dining room, guests can soak in the pool, which is drained and refilled each night with water from the local hot springs.

Catherine Bodry. Songtsam hotels in China

Alex Robertson Textor. Buenos Aires cE Hotel de Diseño. I loved the hotel’s location and thorough minimalism (concrete walls and floors) as well as the ample room size and delicious breakfast. The rate, which I found through Tablet Hotels, was also very reasonable, at $109 including taxes.

Gadling’s favorite destinations for 2011

We travel a lot, to destinations both well-known and unfamiliar. In our defense, it is our job to travel like mad, to explore the world and then write about our discoveries.

Though most travel writers find something or other of interest in most places we visit, there are always those personal favorites that rise above the rest. This year, we decided to scribble our favorites down for you. Some of these spots we’re tipping for greater coverage in 2011, while others are simply tried-and-true favorites that we can’t stop raving about to our friends and the various publications that allow us to write for them. Over the course of this week, we’ll weigh in on our favorite hotels, airlines, gadgets, apps, and websites.

So, without further ado: Gadling’s favorite destinations for 2011.

Mike Barish. St. Kitts. I genuinely enjoy how locals and visitors frequent the same beach bars and restaurants. During evenings on the strip, I’d recognize staff members from my hotel doing the same thing I was doing: enjoying the ocean breeze with a cocktail and some jerk chicken.

Kraig Becker. Everest Base Camp, Nepal. For adventure travelers, a visit to Everest Base Camp is one of the best treks in the world. The 12-day hike isn’t just about the destination, however, as you walk in the shadow of the Himalaya each day, passing through sleepy mountain villages steeped in Sherpa culture along the way. The scenery, and altitude, is a breathtaking once-in-a-lifetime adventure.
Catherine Bodry: Ko Chang, Thailand and Sayulita, Mexico.

Joel Bullock: My favorite new roller coaster of 2010 is Carowinds’ Intimidator. Carowinds is located on the border of North and South Carolina in Charlotte in the heart of NASCAR country. It was only fitting that the park design a racing-themed roller coaster that bears the nickname of racing legend Dale Earnhadt. Intimidator is an exciting ride. It’s the tallest, fastest, and longest roller coaster in the South East.

David Downie: As a general trend, I revisit places that have fallen off the tourist maps, or that have been taken for granted, and delve deeper into favorite destinations such as Paris and Rome, which are infinitely rich and fascinating and satisfying. Cities: Paris (art, culture, walks, museums, food, wine), Rome (art, culture, walks, museums, food, wine), Genoa (food, wine, scenic beauty, history, magically restored architecture), Bologna (food, food, food and atmosphere and architecture), Helsinki (scenic beauty, atmosphere, seafood). Countryside destinations: Burgundy (wine, food, vineyard and mountain scenery), Massif Central (hikes, scenery), Drome-Provencal (ditto, plus truffles and wine), Tuscany (art, culture, museums, wine, food, vineyard and mountain scenery), Italian Riviera (ditto).

Don George. (1) Peru‘s Sacred Valley. I finally made it there this year and was enchanted by scenery, history, culture, people, cuisine. Machu Picchu is of course life-transformingly amazing but the other untouted ruins all around the valley are equally amazing. (2) Kyoto, Japan. The cobbled back quarters of this ancient city are as enchanting now as they were when I first visited 30 years ago. Tiny temples, impromptu shakuhachi concerts, apprentice geisha in full splendor. (3) Aitutaki, Cook Islands. Incredible island scenery, hospitable people, stunning lagoon, peaceful and laid-back lifestyle, thriving dance, carving, and textile arts scene.

Tom Johansmeyer. If you’re a cigar smoker, nothing beats Esteli, Nicaragua. On just about any budget, you can spend a few days down there. Make a few calls in advance, and you’ll have the opportunity to tour tobacco fields and cigar factories. Even if you aren’t a smoker, it’s amazing to see such craftsmanship in action.

Jeremy Kressmann. Hanoi, Vietnam for its great history and architecture, awesome cuisine, and intriguing Cold War sights. Secondly, Laos. The rugged north of the country has great hikes and the buzzing cultural capital of Luang Prabang is totally worthwhile.

Grant Martin. Bogotá. Forget what you’ve heard about kidnappings, drugs and danger, Bogotá is the new cosmopolitan capital of South America. With quaint, brick streets, a buzzing commercial district and a hip, young population, there’s not much to dislike about this place. Get there before the rest of North America figures it out.

Melanie Nayer. Shanghai. The city of old and new hit a turning point when it hosted the World Expo, and set the stage for Shanghai to become one of the most talked about–and visited–cities in the world.

Sean McLachlan. Ethiopia. Friendly people, rugged scenery, historic sites, and great coffee. What more could you want? Beautiful women, good food, adventure travel? Ethiopia has all that too.

Laurel Miller. Ecuador, especially Cotopaxi National Park (see above), because it’s stunningly beautiful, uncrowded, and there are loads of outdoor recreational opportunities. Ecuador is an amazingly diverse country, kind of like a mini-Peru but with very low-key tourism. There’s also great whitewater rafting/kayaking and mountaineering, fascinating indigenous culture, beautiful colonial cities, delicious regional foods, and the people are wonderful. There’s so much more to Ecuador than just the (admittedly spectacular) Galapagos.

Meg Nesterov. Bulgaria is cheap, creative, and easy to explore. Several of my most well-traveled friends already rave about it. Go now before tourism overexposes the country.

Heather Poole. Positano, Italy. It’s just so beautiful and the food is amazing. I’m a flight attendant and I have a four year-old son, as well as a husband who travels over 100,000 miles a year for business. Our life is like a game of tag. So when it comes to vacations all we want to do is relax. I love to be able to sit on a balcony and let the vacation come to me.

McLean Robbins. Telluride. It’s not new, but as ski towns go it feels non-commercial and relatively untouched. You’ll find truly friendly people (and your fair share of under-the-radar celebrities), but also the country’s best extreme skiing. And it looks like heaven when it snows!

Annie Scott. I’m big on Vienna. It’s a magical city that embodies everything I think of when I think of Europe: culture, history, cathedrals and class. I think the Swiss Riviera may be the most beautiful place I’ve ever been. Lake Geneva looks so pristine you could drink it, and the French influence gives everything from the dining to the shopping that elusive je ne sais quoi. Lastly, I had a marvelous trip this year in Zambia where the wildlife was rampant and the scenery was enchanting and unexpectedly dynamic: sweeping plains, dreamlike riverscapes and incredible trees. The thrill of being immersed in the bush is hard to match.

Alex Robertson Textor. Lima, Peru continues to pop. While the Inca Trail is old hat, Lima is emerging as a major destination on its own. Perhaps most notable is the Peruvian capital’s excellent restaurant scene, which is as disarmingly inexpensive as it is top-notch. I also have to mention green, rustic, jaw-droppingly beautiful Dominica as the Caribbean’s top adventure destination. Dominica has a number of fantastic eco-lodges that showcase the island’s natural beauty wonderfully and are priced reasonably.

Karen Walrond. As a diver, I love Cayman. Love it. Very touristy, but the diving is beyond anything I’ve seen, and i’ve been diving all over the world. And I’m partial to Grand Riviere in my homeland of Trinidad, which isn’t touristy at all. Between April and June, you can see Giant Leatherback turtles nesting in Grand Riviere.

European cheeses: holiday entertaining with the taste of travel

I work part-time in a cheese shop, and I’m also a contributing editor at culture, a consumer cheese magazine. I can’t help noticing that, despite a still-sluggish economy, people don’t want to do without their cheese. Especially if they’ve fallen for a specific type during their (usually European) travels.

Not everyone who bellies up to the counter is a globetrotter or a cheese geek, but they’re all eager to try new things and learn about the animals and cheesemakers responsible, and what, if any, cultural role certain cheeses play in their country of origin. It got me thinking: why not show Gadling readers how to do a bit of armchair travel to Europe via their local cheese shop?

Cheese has long been associated with revelry, in part because of its cozy compatibility with beer, wine, Champagne, and certain spirits. With the holiday season upon us, I put together a list of some delicious, versatile, affordable European imports that will make any small party more festive. The best part? You don’t need to be any kind of cheese wunderkind to put together a banging cheese plate (suggestions coming up).

I usually allow about an ounce of each cheese per person, assuming there’s more food. If you’re throwing a big party, it may not be financially feasible to purchase certain products (and there’s nothing wrong with serving a mass-produced Gruyere or Gouda). Note that some styles of cheese are less dense than others, so depending upon price, you can get more dairy for your dollar.

In addition to picking some of my own favorites, I turned to one of culture’s co-founders, cheesemonger Thalassa Skinner of Napa’s Oxbow Cheese Merchant, for advice:

The Cheeses

France
Langres (cow): Traditionally served with Champagne poured over it (those decadent French!), this well-priced washed-rind is a little bit stinky, with a dense, creamy interior and tangy lactic finish. From the Langres plateau in the Champagne-Ardenne region.

Holland
Ewephoria (sheep): Nutty, rich, with a hint of crystallization, this butterscotchy Gouda will convert even the ambivalent into cheese aficionados.

Switzerland
Appenberger (cow): This buttery Alpine-style cheese from the Schweitzer Mittelland region has a faintly grassy tang. A surefire crowd-pleaser.

Italy
Robiola due latte (a blend of cow and sheep or goat’s milk): A rich, mold-ripened number with a slightly sour, mushroomy finish, from the dairy-rich Piedmont and Lombardy regions. Top imports include those by Perolari due Latti, Robiola Bosina, and Robiola delle Langhe.

Spain
Leonora (goat): A loaf-shaped, mold-ripened cheese from the northwestern village of León. Creamy, tangy, and delightful, with a blindingly white, dense, chewy interior.

Portugal
Azeitao (cow): Yeasty, full-flavored, with a slightly bitter finish; a beer-lover’s cheese. From the village of the same name, in the Arrabida Mountains, near Lisbon.

England
Stilton (cow): Colston-Bassett makes perhaps the finest version of this historic, earthy blue cheese. It’s a classic British holiday treat, produced in Derbyshire, Leicestershire, and Nottinghamshire. Stichelton is the equally delicious, raw milk version; it’s a bit more fruity and crumbly. But for another British tradition, go for a robust Cheddar. Keen’s (cow) is buttery, with a horseradishy bite.

Ireland
Coolea (cow): This dense, buttery, Gouda-style from County Cork has a sharp, grassy finish. Unusual and delicious.

Belgium
Wavreumont (cow): A smooth, full-flavored, monastic-style washed rind. Trappist beer, anyone?

Cheese Plate 101

K.I.S.S.: This is a fun little acronym I learned in culinary school. It stands for, “Keep it Simple, Stupid.” A foofy, cluttered cheese plate with too many accompaniments just detracts from the headliner. You can keep sides as simple as some plain crackers or a baguette, or add toasted almonds, walnuts, or hazelnuts, and some preserves, or honeycomb or dried fruit or grapes or slices of pear or apple (in summer, use stonefruit such as peaches or cherries, or berries).

You can also go the savory route with dry-cured or green olives (Picholine are my favorite) and some salumi (add grainy mustard, cornichons, and a hearty rye bread for a winter supper). Forget the sundried tomatoes, pickled onions, pepperoncini, artichoke hearts, tapenade, stuffed peppers, or whatever else the local deli has in its antipasti bar. It’s overkill.

Stick to three to four cheeses that increase in intensity of flavor. You can do whatever you want: all blues, or all goat cheeses. For a diverse, well-rounded plate, try: One creamy/mild; one semi-soft or semi-firm with some kick, or a washed-rind/ surface-ripened; one hard-aged; one blue or something really punchy (taste this last, because the stronger flavors will obscure your palate). When pairing cheese with beer or wine, a rule of thumb is to match the intensity of flavor of the cheese to that of the beverage. The following are some suggestions for some of the more tricky, assertive cheeses.

Goat cheese: A good rosé will almost always work, as will a light German beer like Hoegaarden.

Big, stinky washed-rinds: Pair with sweet bubbly; the effervescence will help cleanse the palate and won’t compete with the flavor of the cheese. If you’re drinking beer, go with a light pilsner or lambic.

Blue cheeses: Go for a sweet dessert wine (not Port) or Lambic beer with fruit, such as framboise.
