Pop-up restaurants: dining for a new decade

First, it was underground supper clubs. Now, everything’s coming up pop-ups. As with food trucks, this form of guerrilla cheffing borne of economic need has become a global phenomenon. Equal parts dinner party and dinner theater, a pop-up refers to a dining establishment that is open anywhere from one to several nights, usually in an existing restaurant or other commercial food establishment.

The impermanent nature of pop-ups means no real overhead or utilities, and little food cost and labor. They’re not enough to sustain chefs financially, but are instead a great way for them to make a name for themselves and draw some income in between (or during) gigs. Pop-ups also give chefs a chance to stretch themselves, stylistically or ethnically, although some prefer to let local ingredients shine. Most pop-ups give props to sustainability by sourcing product from local farms, which is part of what gives these fly-by-night operations such a wonderful sense of place.

I first heard about pop-ups while couch-surfing in San Francisco two years ago (my own pop-up form of survival after relocating back to the West Coast from Colorado). Chef Anthony Myint, the brainchild behind SF’s Mission Street Food pop-up, which started in 2008, was serving much-lauded, locally-sourced dinners Thursday nights, each time with the help of a guest chef. The food was unpredictable with regard to cuisine or style. The location? Lung Shan, a nondescript Chinese restaurant in the city’s vibrant Mission District (FYI, my favorite place for great, usually cheap, eats). I remember thinking at the time, “More, please.”Fast-forward 24 months, and while the pop-up is no more, the venture was so successful, Myint is now co-owner of San Francisco’s popular Commonwealth, as well as newly minted (har) chef at the forthcoming Mission Bowling Club. And Joshua Skenes of Saison, one of Food & Wine magazine’s newly crowned Best New Chefs, started the restaurant as a pop-up.

San Francisco has long been an incubator for innovative ideas involving food, so it’s no surprise pop-ups are, ah, popular there (click here for a recent round-up). Meanwhile, fellow 2011 Best New Chef Jason Franey, of Seattle’s Canlis, has also been getting in on the pop-up. In February, he cooked a one-night gig at “Hearth & Home,” held at one of the city’s Macrina Bakery locations (another tip: if you’re in town, visit Macrina in its own right. Four words: chocolate-orange pound cake).

The pop-up trend–which now applies to boutiques, galleries, clubs, coffee houses, and bars–has gone national. Los Angeles, San Diego, New Orleans, Chicago, New York, Boston, Portland (Oregon), Miami: all popular for restaurant pop-ups. Oakland has seen phenomenal response to its Pop-up General Store, which features a twice-monthly gathering of food vendors held at a catering kitchen. Founded by former Chez Panisse Chef Christopher Lee and his former sous chef Saimin Nosrat (of Berkeley’s defunct Eccolo), the venue features all the deliciousness you would expect when a group of mostly former Chez Panisse cooks and food artisans get together and prepare things to eat.

Pop-ups are even crossing the pond. The New York Times reports that, starting today, Singapore is sending some of its top chefs and a pop-up kitchen on a yearlong trip around the world, with nine stops planned in Moscow, Paris, London, Tokyo, Shanghai, Hong Kong, Delhi, Sydney, and Dubai. Dubbed Singapore Takeout, the goal is to showcase the city’s eclectic, multi-ethnic cuisine. The kitchen is a converted 20-by-eight-foot shipping container. Also hitting the road is chef Thomas Keller of The French Laundry, Ad Hoc, Bouchon, and Per Se. He’ll be featured in a ten-day pop-up at Harrods, London later this summer.

Chocolate capital of the world: now Paris wears the world’s sweet crown

How many more heavy gold medals can Paris drape around its neck?

Acolytes claim the City of Light is the fashion and cultural capital of Europe, the West’s greatest restaurant and food megapolis, a paradise for flaneurs, the mecca of hedonists and shop-till-you-drop materialists, the world’s favorite city, period. Now, while the Swiss and Belgians weren’t looking, Paris stole their milk cows and became the swaggering global capital of chic chocolate too.

Pundits quip that French president Nicolas Sarkozy set the stage. Elected in 2007, Sarkozy does not drink alcohol. He gobbles chocolat, the very best. His 24/7 excitability – some call it dynamism – are attributed in part to the capital’s current choco-manie.

But everyone knows Theobroma cacao – especially the unadulterated dark variety containing at least 60 percent cocoa – is good for the health, the libido, the mind, the morale. It makes people happy, fills them with energy, lifts them out of depression, and cures everything from rabies and rashes to the common cold, without weight gain. Or so some boosters claim, with impressive if unproven scientific “evidence.”

What better fuel for France‘s hyperactive, tea-tottling head of state, a man bent on seducing his rock star wife Carla Bruni and the famously difficult French masses?Nice story. But the rise of chocolate in Paris predates and goes beyond Sarkozy’s habit.

Chocoholics have followed the capital’s gradual rise since the 1990s, from bitter darkness – Paris lived in the long shadow of Lyon – into the limelight. The annual Salon du Chocolat has done much to raise Paris’s profile. Other factors have contributed equally, including the nationwide decrease in wine and liquor consumption symbolized by Sarkozy. Chocolate is the ideal, socially acceptable substitute.

But the main reason for the rise is simple: French chocolate has become exquisite in its simplest incarnations, and excitingly wild in its extreme expressions.

Ever since France’s great pastry chefs began breaking away from the starred restaurants where they were employed, chocolate-making has slipped out of the grip of the industrial candy-makers, local bakeries-cum-pastry-and-chocolate-shops, and fuddy-duddy neighborhood chocolatiers.

New-wave Paris chocolate masters the likes of Jean-Paul Hevin, Pierre Hermé, Christian Constant, Patrick Roger, and Michel Chaudun are as dynamic as Sarkozy, have global reach, and get at least as much press as the predictable French foodie idols, the three-star brigade led by Alain Ducasse, Guy Savoy, et al. Many chocolate stars have shops in Japan; Chaudun’s website is in Japanese.

Cult status for chocolatiers also derives from the fact that they’re not mere artisans. They’re artistes. Take Roger and Chaudun. Both sculpt chocolate. Roger is irreverent and fanciful – a master of kitsch Pop Art. Chaudun excels with Eiffel Towers, among his most popular creations.

Actually, “popular” is not quite right, given the price. Chaudun’s and his peers’ prices ensure their wares are for elites in a city slavish to exclusivity. A pound of their precious Theobroma easily tops hundreds of dollars.

There’s nothing ordinary about chic Paris chocolates, from the cacao bean up. Some top practitioners import their highest-quality beans, roasting and transforming them. Most buy prepared chocolate “bases” from France’s exclusive, persnickety, and expensive chocolate supplier, Valrhona. Typically, beans or bases are many times more expensive than those used by fine artisanal chocolate makers elsewhere.

Like it or not, for the most part luscious Belgian and Swiss chocolates are perceived as rich, fattening, sweet, milky, creamy and old-fashioned. French chocolates – especially those made in Paris – are seen as dark, lean, intense, avant-garde, surprising, disconcerting, sometimes silly or shocking. They’re filled with everything from camembert to lavender honey and floral essences, liquorice to ginger, herbs and spices, and fine wine, sometimes in multiples of three, four or six unlikely combinations.

Chocolatiers and suppliers in Italy, America, Belgium and Switzerland have followed suit. But the sheer concentration of avant-garde masters in Paris is unrivaled. And few outside the French capital have comparable panache or draw. Who had ever heard of Pierre Marcolini, a Belgian choc-and-awe master, before he opened his chicissime boutique near the French Senate?

No wonder Hevin and Marcolini display their edible artworks as if they were jewels. While they won’t set you back as much as a bauble from Cartier, you might think twice before ingesting them. Aesthetics are a big part of the experience.

It may well be this nexus of food and fashion that is driving Paris’s current chocolate boom. Chocolat and haute couture meet on the runway, sometimes to the strains of opera, with chic chocolatiers daubing models with liquid chocolate, or hanging chocolate undies and necklaces in strategic locations.

As dozens of boring old mom-and-pop stores selling useful items continue to disappear from the 2nd, 6th, 7th, 8th and 16th arrondissements, or the inevitable Marais, they are often replaced by chocolate boutiques. Toss a euro coin and it will land on big-name or hungry provincial cacao magicians planting their tills in the last available floor space.

Ridiculous? Perhaps. But this is Paris, ça c’est Paris. Chaudin’s chocolate Eiffel Towers might as well be emblazoned with the capital’s latest moniker: “Paris, City of Chocolate.”

France’s burqa ban goes into effect

Today France has taken a controversial move and instated a burqa ban, aimed at the traditional religious covering worn by conservative Muslim women. The ban will potentially affect up to 2,000 women who wear a full-face veil in public, though it is unclear how the enforcement will work as police cannot remove the veil. Women who refuse to lift the burqa or niqab may be taken to a police station for an identity check, threatened with a 150 euro fine, or forced to attend “re-education” classes. Men who force women to wear the veil will face a 30,000 euro fine and up to a year in jail. So far only a few women have been arrested for protesting the ban near Paris’ Notre Dame cathedral.


Jacques Myard, a Parliament member and supporter of the ban said “The face is a dignity of a person. The face is your passport. So when you refuse me to see you, I am a victim.” France has the highest Muslim population in Europe, estimated between four and six million, though only a few thousand women wear the full-face veil. Belgium has passed a similar law but hasn’t enforced it, and the Netherlands is considering a ban as well.

Where are all the travel guide apps for Android?

Nearly two years ago, I bought my first smartphone: the T-Mobile Android MyTouch*. I’m only occasionally jealous of my iPhone-carrying friends, as I find few travel guide apps for Android. Even after a move to Istanbul, I still use and rely upon it daily; Android‘s interface is fast and easy-to-use, and seamless use of Google applications like Gmail and Google Maps is part of the reason I bought it in the first place. Living in a foreign country means English-language books and magazines are expensive and hard-to-find, and like many travelers, I don’t want to carry bulky books around when I’m on the road. This leaves a perfect opportunity for mobile developers to provide real travel guide content and not just travel-booking apps, especially apps produced by reliable media sources with professional editorial. These days, every guidebook and travel magazine publisher is coming out with apps for the iPhone and now iPad, supplying users with content and directions on the go, but there are hardly any for Android.

So what’s available for mobile travelers from the top travel book and print sources? Better hope you’re running Apple OS…Guidebooks:

  • Fodor’s: Happy 75th Birthday Mr. Fodor, but we wish you had more than just five city guides for purchase (in London, New York, Paris, Rome, and San Francisco) and only for Apple.
  • Frommer’s: iPhone guides are available for ten major cities in the US, Europe and Asia, but nada for Android.
  • Lonely Planet: iPhone users are spoiled for choice: dozens of city guides, language phrasebooks, audio walking tours, and eBooks optimized for the iPad. Android users in 32 countries including the US are in luck: there’s a free Trippy app to organize itinerary items, as well as 25 “augmented reality” Compass city guides and 14 phrasebooks. NOTE: This article originally mentioned that the Compass guides were unavailable in the Android Market store, but they should work for most US users. I happen to be in a country where paid apps are not available and not shown in the Market.
  • LUXE City Guides: 20 cheeky city guides work for a variety of mobile phones, including iPhone and Blackberry, but none are compatible with my Android. Bonus: the apps come with free regular updates and maps that the paper guides don’t have.
  • Rick Steves: If you are headed to Europe, you can get audio guides for many big attractions and historic walks for iPhone, plus maps for the iPad. You can also download the audio files free for your computer, and props to Rick for mentioning that Android apps are at least in development.
  • Rough Guides: Here’s a new one: the Rough Guides app works for many phones but NOT the iPhone OR Android! It’s not as slick as some of the other guides (it’s a Java app) and you will use data to use it on the road, but it provides lots of info for many cities in Europe. You can also find a Rough Guides photo app on iTunes to view pictures from around the world with Google Maps and captions from Rough Guides.
  • Time Out: City travelers and residents might want to look at the apps from Time Out for 5 European cities and Buenos Aires, with Manchester and New York on the way. More cities are available for free on iTunes, search for Time Out on iTunes to see what’s available. iPhone only.
  • Wallpaper* City Guides: 10 of the design mag’s 80 city guides are for sale for iPhone for Europe, Tokyo, New York and Los Angeles.

Print media:

  • Conde Nast Traveler: It makes sense for magazines to embrace the iPad, and CNT has free Apple apps specifically for Italy, cruises, and their annual Gold List of hotels and resorts. Blackberry users can download an etiquette guide, but Android users are snubbed.
  • National Geographic: As befitting any explorer, Nat Geo has a world atlas, national parks maps, and games featuring their amazing photography, all for iPhone. A special interactive edition of National Geographic Traveler is for sale on the iPad; you can also read it on your computer. Androids can download a quiz game and various wallpapers; and all mobile users can access a mobile-friendly version of their website at natgeomobile.com.
  • Outside: Adventure travelers can purchase and read full issues on the iPad, but no subscription option yet.
  • Travel + Leisure: The other big travel glossy also has an iPad app for special issues. Four issues have been released so far with one available now on iTunes (romantic getaways) but future editions will follow to be read on the app. Just in time for spring break and summer, they’ve also released a Travel + Leisure Family app with advice and articles specifically geared towards travel and families. The apps are both free but you’ll need an iPad – these are designed for tablets, not phones. You can also read full issues of T+L and their foodie cousin Food & Wine on Barnes & Noble’s NOOK Color ereader; you can save per issue if you subscribe to the e-reader version.
  • USA Today Travel: Most major newspapers have mobile readers for all types of phones, but USA Today is the only one with their own travel-specific app. AutoPilot combines an array of cool travel booking capabilities and information with articles and blog post from the newspaper. Only iPhone users can enjoy free.

Two of our favorite magazines, Budget Travel and Afar, have no mobile apps yet but great online communities to tap into their extensive knowledge.

All in all, other than Lonely Planet’s Compass guides, a pretty weak showing for Android travelers. While iPhone has been around longer as a mobile platform that Android, they’ve lost the market share of users to the little green robot. As Android is available on a variety of phone manufacturers and providers, expect that number to continue to grow, along with the variety and depth of content for mobile and tablet users. Will the developers ever catch up or will travelers have to choose?
