Don’t just see the Great Wall of China, eat it

In preparation for the World Chocolate Wonderland exhibition opening on January 29, 2010, Chinese confectioners have created an entire Great Wall of Chocolate.

“You have higher and lower levels and you have to fit each brick into place, one by one, to build it up, it’s difficult,” said chocolatier Wang Qilu. The wall reportedly includes an entire “crumbling” section, just like the real thing.

The hope of World Chocolate Wonderland general manager, Tina Zheng, as well as many of the participating chocolatiers, is that the approximately 80 ton exhibition (including other wonders like 560 chocolate terracotta warrior replicas) will boost China’s chocolate industry.

“Chocolate has not been around in China that long, it doesn’t have that several-thousand-year history that it does in the West which has made chocolate as common as milk or fruit,” Zheng told Reuters.

The wall stands just 33 feet long, but is doubtlessly far more delicious than the actual, 5,500.3 mile wall.

Chocolate bars: Ritz-Carlton redefines classic desserts

Some things are just necessary for survival, and some of those things come dipped in chocolate. There’s something to be said for the local delicacies in foreign destinations, and as Scott mentioned earlier, the Gadling team would travel around the world for their some of their favorite food. Me? I’ll take chocolate.

While few things will ever top chocolate squares from Belgium, or tiramisu from Italy’s hidden cafes and best restaurants, we can’t always get to our favorite places for our favorite foods. But, if you look close enough in your own backyard, you might be able to taste some of your favorite comfort foods without needing your passport. Enter: The Ritz-Carlton’s decadent chocolate bar.

I’ve made myself comfortable on many a Friday night at Boston’s Ritz-Carlton dining room with a glass of red wine and a plate of goodies from the hotel’s chocolate bar, so when I heard the Ritz was redefining their dessert menu I immediately went into panic mode. I caught up with George McNeill, Ritz-Carlton’s corporate chef, to get a sense of what the new menu will feature. Seems the chefs have taken a new approach to dessert and put a bit of flair on some of their local favorites. From English bread butter pudding to an All-American strawberry shortcake, Ritz-Carlton is giving our classic desserts a bit of a culinary makeover.Why the change? What was the motivation for reinventing the menu?
This is part of our overall strategic direction of making the Ritz-Carlton a more approachable dining experience – our goal is to have a market driven restaurant in every one of our hotels. “Classic Desserts Redefined ” is another example addressing the needs of our evolving customer. The motivation was that as we navigated our way through the economic downturn in 2009, we saw a clear gravitation from our guests to a popularity of more comfort items on our menus. “Classics”, by definition, are items that have stood the test of time and appeal to guest as much today as they have for generations we challenged our pasty chefs to submit their best “classic” dessert recipes, of which were eventually whittled down to what we have today.

The Ritz-Carlton is known for indulgence and luxury – how do these new creations fit within the theme?
In this instance, luxury and indulgence relate to the quality of the ingredients and the flavor profile of the desserts, they are rich and flavorful which translates into a satisfying experience. I believe that we will see an increase in dessert sales and that our guests indulge themselves in desserts that that they may have passed up on due to the recognition factor, if only from childhood memories.

What is your favorite new ‘classic’ on the dessert list? What is the one item you’ll never remove?
My favorite is Bread and Butter Pudding. it is something I have not seen on a menu for a very long time, it congers up childhood memories of sitting at the dinning room table with all of my brothers and sisters for Sunday dinner, which was the only day we had dessert with dinner. What item will never leave the menu? That is difficult to say only time will tell and our guests will be the judges.

My personal suggestion? Enjoy some quality time with the chocolate fountain, then order up some bread pudding, a hot cup of espresso (or the martini version, if you choose) and enjoy yourself a fine dessert on a Friday night.

The world’s most haute-culture spork

Sporks get a lot of bad press in today’s pop culture — probably because of their association with primary school cafeterias and army mess halls. So tacky have they become, in fact, that they may have come full circle around to being posh.

This gem of a spork can be found in Paris at Spoon, a gastronomic adventure created by the famous French chef Alain Ducasse. With the homemade mousse with chocolate flakes, to be exact. And somehow, it actually makes the mousse taste better.

Give Spoon a try if you’re near Champs-Elysees and don’t want schlocky tourist fare. Its at 12, rue Marignan near the Roosevelt stop on the Metro — and yes, the food is fantastic.

Get out and go: Events around the world (December 2-5)

It’s time to look at the festivals and events happening around the world, and this week has a particularly international selection of happenings. If you’re close and have time, then you have no excuse to get out and go!

  • AlaskaThe Talkeetna Winterfest will take place in Talkeetna, Alaska throughout the month of December. The month long celebration features various activities, including Taste of Talkeetna, Broom Ball and Bachelor Auction.
  • Hobart – It may be winter in the States, but it’s summer in Tasmania, and the Hobart Summer Festival will be held for the whole month of December in Hobart.
  • British Virgin IslandsThe Fireball Full Moon Party will take place today (Wednesday, December 2) in Trellis Bay, British Virgin Islands.
  • Seattle – Seattle’s Winter Beer Festival takes place at Hale’s Ales Brewery this Friday, December 4. More than 30 Washington State breweries will be pouring their winter brews. There will be a vintage beer tasting featuring favorites from years past. Pub food will be available as well as a selection of fine chocolates and holiday gifts for sale.
  • Aberdeen – We Americans may not “get it” but curling is a real spectator sport in some parts of the world. The European Curling Championships will take place this Friday, December 4 in Aberdeen, Scotland and will last through the week until the 12th.
  • New Jersey – Annual Festival of Trees will begin this Friday, December 4 in Basking Ridge and will continue for over a week through the 13th.
  • St. Lucia – Jade Mountain will hold its annual chocolate festival this weekend, from December 4-6. It is a delicious, interactive and exotic introduction to the world’s favorite aphrodisiac. Cacao has a history in St Lucia that dates back to the 1700’s.
