Dreaming of Bali – A guide to Indonesian food

Pizza lovers, did you know Indonesians adore Pizza Hut? True, your typical Indonesian pie probably has more crispy fish pieces, shrimp and corn on it than you’re used to back home. And you probably won’t find avocado milkshakes as an option at the soda fountain back in Grand Rapids. But the Indonesians in Bali are lovers of pizza much like you and I, dear reader, and unashamedly so.

At this point, more experienced travelers are probably scratching their heads. Who travels to Indonesia and writes about American fast food?? But the truth be known, this odd love for all things pizza illustrates a surprising fact: Indonesians are cultural chameleons when it comes to eating. This immense island nation is a place criss-crossed by trade winds of diverse culinary origin, bringing together influences and ingredients from places as far-flung as China, The Netherlands, India and even Mexico.

Whether you’re just visiting Bali or making a larger exploration of the Indonesian archipelago, expect to be surprised by Indonesia’s spicy, exotic, and altogether unexpected blend of delicious eats. It was the world-famous islands of Maluku that first put Indonesian cuisine on the world map. Back in the 1500’s, this string of remote islands was the only place in the world European traders could find the elusive spice Nutmeg. It didn’t take long for the rumors of these fertile tropical islands to spread; soon the English and the Dutch were demanding their piece of the lucrative trade, adding coffee and tea plantations to the mix.

The Europeans were soon mingling with the Chinese, Indian and Middle Eastern traders who already knew Indonesia well, introducing a bewildering array of new foods. Peanuts and chili peppers came from the Americas, leading to Indonesia’s ubiquitous sauces: the mouth tingling Sambal and the spicy peanut sauce used to top grilled skewers called sate.

These new ingredients were mixed with more familiar Indonesian staples like rice, a grain you’ll see growing in paddy fields everywhere, and coconuts, another tropical staple that finds its way into the country’s flavorful curries. Add in the country’s ever-present and wonderfully fresh seafood, some wildly exotic fruits like Durian and rambutan, and you begin to get a sense of the diverse ingredients available to the typical Indonesian chef.

Local Specialties
Upon this palette of flavorful and exotic ingredients, all sorts of fantastic Indonesian specialties are possible. What’s worth a try during your visit to Bali? Make sure to keep an eye out for uniquely Balinese specialty Babi Guling, a spit roast pig stuffed with spices and roasted in coconut water. Many travelers will swear Ibu Oka in Ubud is the place to try. We have to agree…the crispy pork skin, roasted for hours over hot coals, is sublime. Bebek, the local Indonesian duck, roasted in banana leaves stuffed with spices (Bebek Betutu) is another favorite.

Balinese cuisine also tends to be a microcosm of larger food trends in Indonesia. Nasi (rice) is practically the Indonesian national dish. You’ll find Nasi Campur (mixed rice, meat and vegetables) and Nasi Goreng (fried rice with meat & vegetables) on menus everywhere. And there are the desserts – weird as it may sound you’ll never go wrong with an Es Apokat avocado smoothie, doused with a liberal helping of chocolate sauce. And if you’re looking for a totally unique dessert experience, track down some Es Campur. It’s a sweet soup made of coconut, condensed milk, ice and a mix of chewy jellies. Bizarre, but quite wonderful.

Padang: A Taste of Everything
No matter what food you find to your liking in Indonesia, you’re sure to be overwhelmed by the delicious options at some point. That’s when Padang food comes in handy. Although Padang cuisine originated on the Indonesian island of Sumatra, it’s become a universal favorite – nearly every city in Indonesia has a Padang restaurant, including in Bali. Look for the dishes of food stacked in the window and spicy scent wafting from inside, and you’ll know you’ve arrived.

Don’t know what to order? Not to worry… just walk up to the dishes and start pointing at whatever looks delicious. The server will add a healthy spoonful to your plate. You’re likely to end up with specialties like Rendang, a buffalo coconut curry, or some leafy green kangkung (water spinach) and a few pieces of ayam goreng (fried chicken).

The flavors are mix of just about everything your tastebuds could want: spicy, milky, bitter and savory. The textures – crispy, creamy and chewy. It’s like an Indonesian Old Country Buffet – execept with just a tad more spice, much fresher ingredients and some of the best home-cooked food you’ve had in life. In fact Padang cuisine is a lot like Indonesian and Balinese food itself – a wildly diverse mixture of flavors, textures and cultures, coming together into something that tastes like much more than the sum of its parts.

Photo of the Day – 51 Irish coffees for St. Patrick’s Day


Happy St. Patrick’s Day! If you’re celebrating today in America, you’re probably planning to drink green beer or a nice pint of Guinness, but why not warm up with an Irish coffee, spiked with whiskey (Irish, of course)? In today’s Photo of the Day, Flickr user jrodmanjr snapped these 51 coffees in action at San Francisco‘s Buena Vista Cafe, which claims to have brought the drink to the United States from Ireland’s Shannon Airport and holds the Guinness World Record for most Irish coffees served. A fun photo bonus: another Flickr user caught the same coffees (and jrodmanjr) at the Buena Vista.

Breaking: Delta Air Lines to add Seattle’s Best Coffee

You don’t have to fly first-class to get the best coffee on Delta Air Lines. Starting March 1st, Delta’s brand will be Seattles Best Coffee. That might not sound like a really big deal but it took a lot of work to make that happen.

Coffee is best when brewed with water that is 197 degrees, just shy of boiling. The problem with brewing coffee in flight (you were right, there was a problem) is that at 30,000 feet, the altitude affects barometric pressure and how hot water reacts to coffee. Enter the Green Coffee Quality Team at Seattles Best Coffee.

Coffee expert Kim Giroir from Seattles Best quality team told Gadling they experimented with a bunch of different blends and finally came up with what they call “Level 4” coffee that is just right for brewing in the sky.

When Seattle’s Best says they want to “bring great coffee everywhere” that’s not just a slogan. Back at the Research and Development labs at Seattles Best, they brewed test blends in a barometric chamber, mimicing the conditions of brewing in the air.

It’s been a meticulously tedious process finding the right blend but taste tests in November had all the cabin crew buzzing about the new coffee. That’s nothing new to the coffee company that relaunched it’s brand at Starbucks headquarters in May.

Seattle’s Best thinks they have come up with the perfect cup of coffee, no matter where it is served. A big hit on Royal Caribbean cruise ships, it just made sense to take to the air too.

Delta is no stranger to fine cuisine either, taking in-flight dining seriously for quite some time now, especially in their BusinessElite product.

As the official airline of the Food Network New York Wine and Food Festival, Delta Air Lines brought along its roster of six consulting chefs to venues throughout the event.

In 2006, Delta revealed an on-board menu created by celerity chef Michelle Bernstein. As Delta’s consulting chef, Bernstein designed entrees and side dishes which became part of Delta’s continued effort to enhance its BusinessElite product, creating a more inviting and entertaining experience.

In 2007, Delta tapped top chef Todd English to create selections for its food-for-purchase menu being developed for customers flying in its Coach Class on flights within the United States.

“The back of the plane is where the real challenge is,” said English, adding that he plans to help Delta devise business-class meals in the future.

In 2009 hand-served entrees and signature dishes created by Miami celebrity chef Michele Bernstein and master sommelier Andrea Robinson, expanded dessert options and improved Japanese meal options created by Delta’s flight kitchen in Tokyo.

After all that, a good cup of coffee just made sense.

Portland, Oregon: myth or reality?

Just saying the name Portland, Oregon, brings all sorts of images to mind. Bicycling vegans. Farmer’s markets. Good beer. Hipsters with ironic mustaches (him), oversized glasses (her), and skinny jeans (everyone!). A national media darling for some time, the city and its inhabitants are now being perfectly skewered in the IFC series Portlandia. The story of Portland is being told as a wonderland where people sit around and drink coffee, discussing their latest art projects and the most responsible way to legalize marijuana.

Does this mythic Portland really exist?

In a word, yes; however, there is the seedy underbelly of high unemployment, homelessness, and other unglamorous real-life problems. But for travelers, it can be a bit of a hipster paradise – ignore those pesky issues and immerse yourself in the local culture, in all its left-leaning, locavoracious glory.

For instance: yes, the locavore myth is true – people in Portland care about their food, where it comes from, and tend to seek out the highest quality ingredients. This has led to an abundance of dining options, most serving up excellent meals with less attitude and a smaller price tag than neighboring Seattle or San Francisco. Local favorites include downtown’s hip Clyde Common and North Portland’s Tasty n Sons. If you’d prefer your lunch cost $5 and comes in in a compostable take-out box, just walk a few blocks in any direction to stumble upon one of the city’s 600+ food carts. Choices include tacos, waffles, burgers, noodles, or a snitzelwich, but I’d just follow the traveling Koi Fusion on Twitter to hunt down a Korean-style quesadilla – make sure to ask for kimchi.
Portland and brewing go hand in hand, whether you’re talking beer or coffee. Breweries are plentiful in Portland, and whether you seek out a big shiny brewpub like Deschutes, or just wander into any neighborhood bar, you’ll find a selection of local brews – from hoppy IPA’s to smooth, dark porters.

Good coffee is nearly as prevalent as good beer, but seek out the ubiquitous Stumptown – the king of independent roasters in Portland, with their most accessible location in the Ace Hotel downtown. Order a latte from the tattooed, possibly surly barista behind the counter. Admire the art they made in your foam. And be happy you don’t have to help them rewrite their resume for the eighth time this year.

Tokyo’s cat cafes newest trend

Hasta la vista, Hello Kitty. Get lost, LOL cats. Tokyo’s hot new phenom are neko cafes (“neko” is Japanese for cat). At first appearance typical, cozy coffee houses, closer examination reveals live cats lounging on the furniture, in baskets, or on laps. Which, I guess, isn’t nearly as bizarre (or kinky) as Tokyo’s maid cafes. Actually, to a cat lover like me, it’s quite appealing.

CNN reports that about 100 neko cafés can now be found in Japan, with more popping up in South Korea and Taiwan. More than 50 of the cafes are in Tokyo proper, with almost 70 in the outlying suburbs. Neko no Mise, for example, is a popular neko cafe in the Machida suburb that just celebrated its fifth anniversary.

Right about now, you’re probably asking yourself, what kind of person chooses to hang out in a neko cafe? Banish the image of the stereotypical Crazy Cat Lady from your mind, because these places are a huge hit with young professionals–particularly couples (childless, perhaps?). Far from being frumpy, many neko cafe clientele are hipsters who like to take their dates out for an evening of coffee and cat-watching. Single patrons are welcome too, however, as evidenced by the proliferation of cat bloggers.

Apparently, the neko cafe craze is accountable for many a blog starring specific coffee house felines: some have their own mixi profiles, which, I’m sorry, is definitely halfway to crazytown. And I say this as one who has been frequently dubbed a CCL (yes, that is my cat wearing a sweater in the photo, and I was trying to cut my heating bill). But not everyone is on board with the concept of caffeine and kitties. A young woman named Yuko told CNN, “My sister wanted to go so badly, she took me to one. It was weird, I thought. People just hanging out there with the cats, but you’re not allowed to wake them up or pick them up, they were just watching the cats and smiling and stuff … it was a little scary.”
