Toyota’s Farm to Table Tour takes sustainable eating on the road

I know what you’re thinking. You’re thinking, “Yeah, right. Toyota just needs damage control. As if feel-good, treehugging road trips make up for all those recalls.” But before you judge, let us separate the issue from the mission.

This is Toyota’s second annual Farm to Table Tour, in which 11 farmers markets nationwide participate with the automotive giant to visit “farmers markets across the country to showcase the connection between farmers, chefs, farmers markets, and the communities they serve, and to give market shoppers the opportunity to experience Toyota’s hybrid vehicles.” On each stop, up to 12 local chefs and farmers pair up to highlight seasonal ingredients through free tastings. Talks on eating locally and sustainably, culinary vacation giveaways, gardening information, and test rides in a 2010 Prius, Highlander Hybrid, or Camry Hybrid are also part of each market collaboration.

Toyota is also making financial donations to the participating markets, as well as to the Farmers Market Coalition. In addition, the company is using eco-friendly materials and purchasing carbon credits through TerraPass to offset the educational tour’s carbon footprint.

Tour stops include Birmingham, Pittsburgh, Chattanooga, Minneapolis, and Salt Lake City. The Washington DC FARMFRESH Market by the White House stop on July 29th features influential chef Nora Pouillon, of Restaurant Nora, the nation’s first certified organic restaurant, which opened in 1999. Regardless of how you may feel about Toyota, the company deserves props for its ongoing commitment to sustainability, and supporting family farms. And that ain’t a bad thing.

White Collar Travel: Five step to healthier road warrior diets

Sometimes, it seems like the road warrior‘s diet is relegated to the extremes. When a company executive is in town for a meeting – you’re taking your clients out – it’s hefty steaks, heavy cabernets and always more appetizers than a third-world country could consume in a lifetime. When there’s no occasion to shape the meal, on the other hand, you’re looking at suburban Chinese food illuminated by the glow of your dashboard.

It’s tough to strike a balance while you’re traveling … a problem that’s multiplied when you do it all the time. Fast food factors into at least one meal a day, and often, it will be your only meal. Caffeine (and, in my case, nicotine) replaced countless breakfasts, lunches and dinners back in my consulting days. Weight fluctuations were obvious. I’d usually drop 20 pounds in a month and a half when switching from a travel-intensive project to a local one.

Though the pressures of the job and the claims on time can impede proper nutrition, it isn’t impossible to eat well when you live the life of a wandering white collar warrior. You just have to be smart, plan ahead and commit to keeping yourself healthy.

Here are five ways you can avoid the fast food pits and fattening side-effects of client dinners when living the life of a road warrior:1. Choose an extended-stay hotel when possible
Now, what does this have to do with nutrition? Everything! These hotels have small kitchens, and you can stock the fridge with fruits, vegetables and other healthy snacks. When you get back to your room after 14 hours of meetings and deadlines, reach for an apple instead of a snickers bar (or a mini-bottle of bourbon).

2. Don’t always go for the steak
I know this sounds insane, but steakhouses carry other dead animals … not just cows. Would it kill you to opt for the salmon every now and then? While you’re at it, a salad can be savored; it isn’t something you have to endure.

3. Watch what you drink
Hey, I still enjoy a glass of wine or two with a nice dinner. But, you don’t have to kick off the evening with two martinis and close it with a cognac. At some point, switch to club soda or water. You can drink socially without going overboard.

4. Give up fast food
Or, at least cut back on it. When you have to dine and dash, your options do become limited, and not every city has an array of healthy quick-service dining options. When possible, find an alternative to fast food fare. It may take some work, but you should be able to come up with something.

5. Multitask for an extra meal
Breakfast is the first casualty of life on the road. Whether you’re up early to work or you’re trying to squeeze in a few extra minutes of sleep, the morning meal soon becomes a fantasy. Make time for breakfast. Bring some work down with you, and turn it into productive time. Hell, take your laptop to the table – it’s not like anyone’s eating with you.

Traveling culinary competition makes for swine time

Two garish, heavily-tattooed girls approached me and my friend Adrienne, and pointed their weapons at us. “Pig liver mousse?” asked the blonde, aiming a whipped cream dispenser at me. Her brunette counterpart stood silently, wielding a squeeze bottle of barbecue sauce and a tray of meaty tidbits.

Welcome to the second annual Cochon 555, a lard-fueled, traveling circus of five chefs, five winemakers, and five pig carcasses. It’s actually a 10-city tour, with each destination’s chefs engaging in “friendly competition” for a great cause: “to promote and preserve heritage pigs, and breed diversity in local and national communities.”

Heritage livestock are domestic breeds that are threatened with extinction due to the demands of modern agriculture. In the words of the American Livestock Breeds Conservancy, “Modern food production now favors the use of a few highly specialized breeds selected for maximum output in a controlled environment.”While some may find it ironic and hypocritical to eat, glorify, and promote animals in the name of saving them, you’re entitled to your opinion. For the rest of you, not only do heritage breeds help to preserve genetic diversity, but they also taste better. Many heritage breeds possess a “true” flavor inherent to the animal, i.e., pork tastes…more porky. Heritage breeders in general also have an emphasis on animal welfare, sustainable farming and animal husbandry practices, and regionality, as they’re generally small, family outfits. It’s hard to argue with those ethics if bacon makes you salivate.

I attended Seattle’s Cochon 555 on May 23rd to support the cause, as well as watch local chefs like John Sundstrom (Lark), and Tamara Murphy (Brasa) duke it out. Each competitor is chosen based on their support of local food sourcing and commitment to sustainability; the pigs are sourced from ranches dedicated to preserving heritage breeds. While the chefs prepare tasting plates (they’re allowed free rein on preparation method) for the guests, local family winemakers keep the grape flowing. Guests help select the winning chef by voting for their favorite, along with a panel of 20 judges. The victor of each destination is crowned “Prince or Princess of Porc,” and moves on to compete in the Grand Cochon finale, to be held June 20 at the Food & Wine Classic in Aspen.

Cochon 555 also includes a VIP “Meat & Greet” with local foods and producers, a “Swine & Spirits” mixology showcase, and- my favorite- a demonstration breakdown of a whole pig carcass. San Francisco’s Ryan Farr of 4505 Meats (and producer of the best damn chicharrones on earth) made a guest appearance in Seattle, and proceeded to dismantle a 140-pound pig before an awestruck audience. The results were raffled off, leaving each lucky winner clutching a package of pork to their chest.

Adrienne and I wandered around, sampling everything from tortellini with pig brains in a pork dashi, to apple-bacon ice cream, and red velvet cupcakes with whipped (sweetened) lard frosting. Not everything was good, mind you, and I can live a full life without eating the lard-shortbread version of a Snickers bar ever again, but chef Chester Gerl’s (Matt’s in the Market) cochinita pibil, a Yucatecan-style preparation made from a Red Wattle pig from Lazy S Farm in Kansas , was outstanding. I also thorougly enjoyed the mini “ultimate BLT” of chef Adam Stevenson’s (Earth & Ocean) cocoa-cured bacon, bologna, and smoked coppa, with tomato jam.

While the $125 price tag ($175 for VIP pass) is too steep- at least, at the Seattle event, where the food and drink ran out before the sun even began to set, it’s for an important cause. Even if you don’t eat meat, there’s a dire need for more humane livestock management, and stricter regulation on livestock production, waste management, and processing. As we used to say at the meat shop I once worked at, “Praise the Lard!”

Daily Pampering: Brunch in Chicago Park Hyatt’s NoMI

Seven floors above the bustling streets of Chicago’s Michigan Avenue lies one of the finest restaurants in the city: NoMI. Peering over Water Tower Plaza from a sweeping, glass-lined perch, there’s much more to enjoy at NoMI than the spectacular view. Chef Christophe David has created a brunch to best all brunches, complete with a dizzying array of stations, fares and dishes. Depending on the day, this can include a fresh, made to order sushi station, carving stations, every imaginable breakfast fare possible, scores of desserts, meats, cheeses and pasts — and that’s all before the main course.

That smoothie above? That’s the Care Smoothie, $16 worth of pureed raspberries, peaches, strawberries, aloe vera, soy milk, and ground almonds. And lo, it’s worth every drop.

Everyday brunch at NoMI runs $55 for adults and $27 for 12 and under children, while a typical holiday brunch can reach around $100 per person. For the view, quality and company, however, in Chicago it can’t be beat.

Addis Ababa: Ethiopia’s new flower

When I talk to NGO workers who have worked all over Africa, most say their favorite posting was Addis Ababa.

Ethiopia’s capital is a young city, founded by the Empress Itegue Taitu in the late nineteenth century. She named it the “new flower”, and while the pollution and crowded streets don’t give a very flowery impression, it’s still an enjoyable and easy city to visit.

I’ve already mentioned my first impressions and talked about the cafes of Addis Ababa, but there are many more things to do than simply sitting around sipping world-class macchiatos. Here are a few highlights.

Art Galleries. “Addis”, as residents affectionately called their city, is home to a thriving arts scene. Two galleries rise to the top. The Asni Gallery in the Entonto hills overlooking the city offers a cool, green getaway from the busy city. A ramshackle old house features exhibitions by local painters and multimedia artists, while the garden outside has an interesting collection of sculptures made from found objects, like this curious contraption beside which yours truly is posing in such a dignified manner. The gallery of Kristos Solomon Belachew next to the Itegue Taitu Hotel will enchant anyone who appreciates art. This third-generation painter has a style rooted in traditional themes, with vibrant colors depicting historic or Biblical scenes. His works are quite affordable and make unique gifts or mementos. We bought three pieces. Kristos is a fascinating man to talk to and a visit to his gallery/workshop will give you a deeper appreciation of Ethiopian art.

Museums. The National Museum of Ethiopia is justly famous for its collection of fossil hominids, including the famous Lucy, an Australopithecus afarensis who lived in Ethiopia 3.2 million years ago. One gripping display shows the precursors to modern humans arranged in chronological order to show how primate-like traits gradually gave way to a more human appearance, shattering Creationist mythology in a single room. Other rooms show the evolution of animals such as the horse. The rest of the museum is less impressive, with meager collections from Ethiopia’s many ancient empires poorly explained with minimal signage. The Institute of Ethiopian Studies is more user-friendly. Housed in one of Haile Selassie’s old palaces on the green and pleasant campus of Addis Ababa University, it features a beautiful collection of Ethiopian art as well as cultural artifacts. Long descriptions help the visitor put what they’re seeing into context. You can also visit the upper stories of the palace, where the emperor’s private quarters are still preserved, right down to his baby blue bidet.

Dining. With Ethiopian food being consistently good, few restaurants really stand out. The one at the Finfine Hotel and hot springs is the oldest in the city and serves flavorful national food and sweet, smooth tej. If gloppy stuff on injera is beginning to get tiring, go to Castelli’s, a old-school Italian restaurant run by very old-school Italians. It attracts an interesting mix of expats, tourists, and upper class locals.

Shopping. Addis boasts the largest open-air market in Africa, the Merkato. It’s as big as a medium-sized town and sells anything you can imagine that’s legal, and many things that are not. While a trip through its myriad lanes is popular with visitors, a trustworthy guide is essential as the area abounds with thieves. There are plenty of other shops and smaller markets throughout town that sell the usual tourist knick-knacks, a fine selection of leather goods, Ethiopian music, and colorful crafts from Ethiopia’s many ethnic groups. For some reason there’s a severe shortage of postcards; they’re almost impossible to find outside of the main tourist areas so buy them when you see them!

Where to stay. We tried only one hotel in Addis, the Itegue Taitu. It was the first hotel in Ethiopia, and features a grand old wooden staircase and balconies. It’s a bit worse for wear and desperately needs the remodel they are slowly getting around to. Even with the creaky floors and dingy bathrooms, it’s a wonderful place to stay. The back porch is relaxing, the restaurant is one of the best in the city, and the staff are truly kind and helpful. It makes for a good introduction to Ethiopia, both the good and the not-so-good. When I go back, I won’t consider staying anywhere else.

Getting around. Addis is spread out and not very walkable. Luckily there’s an excellent and cheap network of minibuses. A bit of experimenting and asking for directions will help you figure out how to get from A to B, and you’ll usually end up in some interesting conversations on the way. City buses are also numerous, but are crowded, only marginally cheaper, and popular with pickpockets. Taxis are everywhere but as with many countries it’s best to settle the price beforehand. In general, Ethiopian taxi drivers are far less annoying and greedy than their counterparts in other parts of the world.

So if you go to Ethiopia, spare a few days for Addis Ababa. Of the thirty capital cities I’ve visited, it’s one of the most enjoyable.
