San Francisco’s new T2 terminal offers a variety of dining options

Gadling blogger Justin Delaney gave us a great rundown last week about what to expect at Virgin America’s new T2 home base at San Francisco International Airport. But there’s more – sure, it’s a shiny new terminal and you’ll be flying on one of the industry’s most loved airlines, but what are you going to do while waiting for your flight? Eat, naturally.

In keeping with Virgin’s reputation as the “Best Domestic Airline for Food,” (Travel + Leisure, 2009) the terminal will offer the following restaurants and dining destinations:

Napa Farms Market:
Napa Farms Market is a celebration of locally grown and produced artisan foods and wines. It celebrates the Bay Area‘s freshest culinary traditions by bringing such well-known artisan brands as Equator Coffee, Three Twins Ice Cream, Acme Bread, Cowgirl Creamery Cheese, Kara’s Cupcakes, Mighty Leaf Tea, Frog Hollow Farms produce, Napa Valley Vintner’s Association wines and Tyler Florence‘s Rotisserie of Napa together in one emporium. The market, an extension of the Bay Area‘s innovative food community, lets travelers create their own picnics-to-go, find special gifts to bring home a culinary memory of San Francisco or relax over a fine glass of wine.

Lark Creek Grill:
Lark Creek Grill, the 14th restaurant in the Lark Creek Restaurant Group, will offer many Lark Creek classic dishes and a wide-ranging menu to please all guests with choices from garden-fresh sandwiches to sustainable seafood to sizzling steaks. The offerings are designed with the airport passenger in mind – fresh, healthy and portion-appropriate. In addition to table service for approximately 120 guests, Lark Creek Grill offers takeaway options.

Vino Volo :
Vino Volo revolutionized the airport wine experience by developing comfortable post-security retreats for travelers combining a cozy wine lounge, restaurant and boutique wine shop. They offer wines by the glass, in tasting flights and by the bottle. In SFO, their home airport, they will offer a rotating menu of 22-24 wines grouped by tasting flights. The Vino Volo wine bar will be a part of Napa Farms Market.

Cat Cora:
The Cat Cora concept is a sophisticated culinary experience that focuses on using fresh and organic ingredients within its creation of innovative tapas plates and truly groundbreaking cocktails. The lounge has a strong emphasis on using locally sourced ingredients wherever possible. With its gorgeous views of the Bay Area hills, travelers will be mesmerized by the marriage of design, form and function.

The Plant Cafe Organic:
The fourth restaurant in the team’s portfolio, The Plant Cafe Organic will offer T2 passengers an almost entirely organic menu of juices and healthy meals with a focus on the local. Try the signature Plant Burger, made with lentils, mushrooms, bulgur, beets and cashews, garnished with avocado, roasted onions, aioli and cheese. It is “cooked by solar power.”

Pinkberry :
Founded in West Hollywood in 2005, Pinkberry offers the ever popular frozen yogurt stand to T2 customers.Pinkberry was rated the #1 Frozen Yogurt concept by Zagat in 2009 and is considered one of the hottest yogurt concepts in the world.

Peet’s Coffee:
Founded in 1966 in Berkeley, California, this specialty coffee roaster and retailer has a fiercely loyal and devoted following known as Peetniks . Peet’s in Terminal 2 will bake fresh pastries on site. Peet’s is also located in SFO’s Terminal 1 and Terminal 3.

The terminal opens to the public on April 14.

Virgin’s future lands at San Francisco’s new T2

It is not often that you casually glance out of the airplane window and see the future racing up beside you, glistening in the California sun like a joyriding space catamaran. This happened in San Francisco yesterday as Gadling took part in Virgin’s latest celebration of innovation. Virgin held an event to toast the evolution of flight as well as the opening of Terminal two at San Francisco airport. With plane interiors like neon rimmed London clubs and commercial plans to pierce space with their Galactic platform, Virgin is on an innovatory run that is making them look more and more like the airline industry’s version of Apple.

Our boarding passes listed the departing city as San Francisco and our arrival destination as the future. The flight would circle San Francisco and land at the sparkling new Terminal two. The departure gate teemed with excitement. Muffins were distributed, mimosas swished about, and Rocketman played predictably in the background. Buzz Aldrin rolled in sporting a watch on each hand – one no doubt keeping moon time. The Lieutenant Governor of California, who I first mistook to be Bradley Cooper, addressed the crowd with perfect diction, proclaiming California’s undying support for Virgin America. We were about to “Fly from the Jet Age to the Space Age.”

The Flight
The plane boarded like any other flight. Groups were announced and everyone shuffled on. The flight attendants crept down the busy aisle offering champagne and water while dodging photographers angling to snap a shot of Virgin chief Richard Branson. Sir Richard ambled down the aisle like a man from the future forced to make his fortunes in a distant past. The throngs of media hung on each charming word he uttered while shuttering away to capture every smile. The pilot took us up into a clear California day that showcased epic views out over San Francisco harbor. White crested waves crashed peacefully below, and a little red bridge connected two landmasses.

As the plane banked a turn and leveled out, a glimmer quickly approached from a distance. The speck drew closer and my eyes adjusted to accept the sight of a spaceship pulling up beside our jet. It was White Knight Two with SpaceShip Two nestled between its massive wings. The spacecraft was unapologetically awesome. It lingered just off our left wing like a boasting UFO. It was the main act and a righteous glimpse into the future of space travel. We flew in formation for the rest of the flight. The passengers on our flight smashed up against the windows, hypnotically drawn to the sight of this strange craft effortlessly gliding through the cloudless day. It was a spaceship, and that is about as awesome as it gets.

The Terminal
The flight to the future touched down at San Francisco’s new T2. The terminal originally opened in 1954, and after many years serving as a relic of the past, was fitted with a $380 million modernist renovation. A press conference drove the point home. It is compared to a five star hotel by the mayor of San Francisco. It is striving to be platinum LEED certified. It glows like the future. The project is under budget and ahead of schedule. Politicians, architects, and airline executives all took their turn at the podium sharing their version of the same story – that Terminal two is the future of airport terminals.

The terminal had the anxious air of a play before the curtain is drawn. Workers hammered away at benches. The entire staff of a Pinkberry was being trained on the whims of demanding yogurt customers. Sticky plastic sheets were peeled off of metal surfaces by men in hard hats with great satisfaction. Everything smelled new. The terminal would open in just days, and everywhere workers were racing to meet this finish line.

Terminal two is considered the greenest domestic terminal in the United States. I heard the term LEED certified maybe a dozen times, either proclaimed loudly in the press conference or overheard from a passing conversation. Virgin America’s commitment to environmental responsibility is readily apparent in their influence over the terminal’s design. The Gensler designed space reflects Virgin’s style while adhering to the goals of sustainability.

The new terminal will be shared by Virgin America and American Airlines. AA was the original occupant of T2, with roots all the way back to 1954. American Airlines unveiled a stunning new Admiral’s Club, also LEED certified.

The terminal includes a “zone of recomposure” where weary travelers can gather themselves and continue on their mission. The zone hosts a massive art installation by Janet Echelman (above). Titled “Every Beating Second” after a line by beat poet Allen Ginsberg, the installations hang elegantly from the ceiling and add to the modern style of the terminal.

The terminal is an exciting glimpse into the future of airports. The cold utilitarian design of years passed is being slowly replaced with comfortable spaces filled with modernist accents and green ambitions. Virgin, American Airlines, and San Francisco should all be proud of their new terminal. T2 is an excellent use of space with no shortage of shopping and food options.


The Future
Watching history unfold can be as revolutionary as a kicked in door or as subtle as a whisper. With White Knight Two landing at a commercial airport yesterday, a new step in aviation was taken. Sir Richard Branson casually mentioned that it was likely the first spaceship to ever land at a commercial airport, as though the thought just passed through his head moments before he spoke it. Being casually brash is always a cool angle. It is this cool innovation that drives Virgin towards exciting new ventures. It was revelatory seeing White Knight Two land amongst the Boeings and Airbuses, and it looked a lot like the future gliding into the present.

Where are all the travel guide apps for Android?

Nearly two years ago, I bought my first smartphone: the T-Mobile Android MyTouch*. I’m only occasionally jealous of my iPhone-carrying friends, as I find few travel guide apps for Android. Even after a move to Istanbul, I still use and rely upon it daily; Android‘s interface is fast and easy-to-use, and seamless use of Google applications like Gmail and Google Maps is part of the reason I bought it in the first place. Living in a foreign country means English-language books and magazines are expensive and hard-to-find, and like many travelers, I don’t want to carry bulky books around when I’m on the road. This leaves a perfect opportunity for mobile developers to provide real travel guide content and not just travel-booking apps, especially apps produced by reliable media sources with professional editorial. These days, every guidebook and travel magazine publisher is coming out with apps for the iPhone and now iPad, supplying users with content and directions on the go, but there are hardly any for Android.

So what’s available for mobile travelers from the top travel book and print sources? Better hope you’re running Apple OS…Guidebooks:

  • Fodor’s: Happy 75th Birthday Mr. Fodor, but we wish you had more than just five city guides for purchase (in London, New York, Paris, Rome, and San Francisco) and only for Apple.
  • Frommer’s: iPhone guides are available for ten major cities in the US, Europe and Asia, but nada for Android.
  • Lonely Planet: iPhone users are spoiled for choice: dozens of city guides, language phrasebooks, audio walking tours, and eBooks optimized for the iPad. Android users in 32 countries including the US are in luck: there’s a free Trippy app to organize itinerary items, as well as 25 “augmented reality” Compass city guides and 14 phrasebooks. NOTE: This article originally mentioned that the Compass guides were unavailable in the Android Market store, but they should work for most US users. I happen to be in a country where paid apps are not available and not shown in the Market.
  • LUXE City Guides: 20 cheeky city guides work for a variety of mobile phones, including iPhone and Blackberry, but none are compatible with my Android. Bonus: the apps come with free regular updates and maps that the paper guides don’t have.
  • Rick Steves: If you are headed to Europe, you can get audio guides for many big attractions and historic walks for iPhone, plus maps for the iPad. You can also download the audio files free for your computer, and props to Rick for mentioning that Android apps are at least in development.
  • Rough Guides: Here’s a new one: the Rough Guides app works for many phones but NOT the iPhone OR Android! It’s not as slick as some of the other guides (it’s a Java app) and you will use data to use it on the road, but it provides lots of info for many cities in Europe. You can also find a Rough Guides photo app on iTunes to view pictures from around the world with Google Maps and captions from Rough Guides.
  • Time Out: City travelers and residents might want to look at the apps from Time Out for 5 European cities and Buenos Aires, with Manchester and New York on the way. More cities are available for free on iTunes, search for Time Out on iTunes to see what’s available. iPhone only.
  • Wallpaper* City Guides: 10 of the design mag’s 80 city guides are for sale for iPhone for Europe, Tokyo, New York and Los Angeles.

Print media:

  • Conde Nast Traveler: It makes sense for magazines to embrace the iPad, and CNT has free Apple apps specifically for Italy, cruises, and their annual Gold List of hotels and resorts. Blackberry users can download an etiquette guide, but Android users are snubbed.
  • National Geographic: As befitting any explorer, Nat Geo has a world atlas, national parks maps, and games featuring their amazing photography, all for iPhone. A special interactive edition of National Geographic Traveler is for sale on the iPad; you can also read it on your computer. Androids can download a quiz game and various wallpapers; and all mobile users can access a mobile-friendly version of their website at natgeomobile.com.
  • Outside: Adventure travelers can purchase and read full issues on the iPad, but no subscription option yet.
  • Travel + Leisure: The other big travel glossy also has an iPad app for special issues. Four issues have been released so far with one available now on iTunes (romantic getaways) but future editions will follow to be read on the app. Just in time for spring break and summer, they’ve also released a Travel + Leisure Family app with advice and articles specifically geared towards travel and families. The apps are both free but you’ll need an iPad – these are designed for tablets, not phones. You can also read full issues of T+L and their foodie cousin Food & Wine on Barnes & Noble’s NOOK Color ereader; you can save per issue if you subscribe to the e-reader version.
  • USA Today Travel: Most major newspapers have mobile readers for all types of phones, but USA Today is the only one with their own travel-specific app. AutoPilot combines an array of cool travel booking capabilities and information with articles and blog post from the newspaper. Only iPhone users can enjoy free.

Two of our favorite magazines, Budget Travel and Afar, have no mobile apps yet but great online communities to tap into their extensive knowledge.

All in all, other than Lonely Planet’s Compass guides, a pretty weak showing for Android travelers. While iPhone has been around longer as a mobile platform that Android, they’ve lost the market share of users to the little green robot. As Android is available on a variety of phone manufacturers and providers, expect that number to continue to grow, along with the variety and depth of content for mobile and tablet users. Will the developers ever catch up or will travelers have to choose?

Happy St. Patrick’s Day! If you’re celebrating today in America, you’re probably planning to drink green beer or a nice pint of Guinness, but why not warm up with an Irish coffee, spiked with whiskey (Irish, of course)? In today’s Photo of the Day, Flickr user jrodmanjr snapped these 51 coffees in action at San Francisco‘s Buena Vista Cafe, which claims to have brought the drink to the United States from Ireland’s Shannon Airport and holds the Guinness World Record for most Irish coffees served. A fun photo bonus: another Flickr user caught the same coffees (and jrodmanjr) at the Buena Vista.

A guide to America’s most “offal” restaurants

Even when I was a finicky kid subsisting on Kraft Macaroni & Cheese, I was intrigued by offal. No way in hell would I have eaten what are politely known in the food industry as “variety meats,” but they sure looked intriguing.

As with most of my weird habits, I blame my dad for my fascination with animal guts. Growing up the daughter of a large animal vet, I spent most of my formative years raising livestock, assisting with surgeries and necropsies, and working cattle brandings, so I’ve never been squeamish when it comes to animal innards.

Not until I began working in restaurants, however, did I learn that offal, properly prepared, is absolutely delicious. Many of us were forced to eat liver cooked to the consistency of jerky as kids because it was “good for us.” When I ate my first tender, caramelized calf’s liver, however, the interior creamy and surprisingly mild, I actually enjoyed it. Ditto fried pig’s brains, calf testicles, smoked cow’s tongue, grilled chicken hearts…

In most of the world–Asia, the Middle East, Europe, and Latin America–offal has always been a dietary staple due to poverty, and the need to utilize as much of the animal as possible. Glands, organs, and other bits and pieces fell out of favor in America in the late 19th century due to cheap meat (muscle cut) prices. Today, offal is gaining popularity in the States, thanks in part to the increasing emphasis on sustainable food production and supply. British chef Fergus Henderson’s The Whole Beast: Nose to Tail Eating has done just as much to inspire American chefs to get in on the offal revolution this side of the Atlantic.

Following the jump, my picks for some of the best restaurants in the United States to specialize in or honor offal (having the occasional sweetbreads or tongue on a menu doesn’t count). Read on for where to find these temples of, as one chef put it, “offal love.”

Incanto, and SPQR: San Francisco
It’s hard to turn on the Food Network these days without seeing Incanto chef Chris Cosentino’s mug. The “Iron Chef” contestant also appears on a handful of other shows, but he’s best known for his obsession with offal. At Incanto, you’ll find Italian-rooted local cuisine heavy on variety meats. Lamb fries (testicles) with bacon and capers; kip (veal) heart tartare Puttanesca style; creative endeavors with cockscombs. If you want to discover how good esoteric offal can be, this Noe Valley spot is it.

SPQR–sister restaurant to the wildly popular A16–is a bustling little sweet spot on boutique-and-restaurant heavy Fillmore Street. The name, an acronym for the Latin version of “The People and Senate of Rome,” is a tip-off that rising star chef Matthew Accarrino’s menu is littered with animal parts. Look for delicacies like a delicate fritto misto of offal (liver, tripe, and sweetbreads), and braised pig ears deep-fried, and served with pickled vegetables and chili oil.

Animal: Los Angeles
As you will see, this round-up is unwittingly a tribute to Food & Wine magazine’s Best New Chefs, past and present. But a great chef is a great chef, and it just so happens that 2009 F & W winners Jon Shook and Vinny Dotolo love them some animal parts. At their first restaurant, Animal, the down-to-earth duo–former culinary school classmates and longtime co-workers–serve up fancified down-home, finger-slurpingly good treats like pig tails, “Buffalo-style,” with celery and Ranch; pig ear, chili, lime, and fried egg, and veal brains, vadouvan (a spice mixtures), apple sauce, and carrot.

Clyde Common, Porland (Oregon)
The menu isn’t always bursting with offal, but this lovely communal dining spot in downtown’s Ace Hotel knows its way with variety meats–it’s where I first fell in love with tongue. Savor Euro tavern-style treats like chef Chris DiMinno’s chicken-fried chicken livers with cress, cucumber, and lemon aioli; pig trotters, or hearty charcuterie boards with excellent (heavy on the bourbon, gin, and rye) house cocktails.

Amis, and Osteria: Philadelphia
Arguably one of the nation’s most talented chefs, Marc Vetri trained in Italy, and now runs a three-restaurant (and growing) empire with his partners in Philadelphia. The award-winning chef’s restaurants Amis, and Osteria, are heavy on the offal, in two very divergent ways. At Amis, chef/co-owner Brad Spence turns out earthy, Roman trattoria specialties, including a menu section called “il quinto quarto.” In ancient Rome, this “fifth quarter” refers to the four quarters of an animal that were butchered and split up amongst the noblemen, clergy, and soldiers. Peasants got the fifth quarter (also known as “what falls out of the animal). Expect hearty fare like trippa alla Romana, Roman tripe stew.

Jeff Michaud, chef/co-owner of the industrial-farmhouse-styled Osteria, turns out intensely rich dishes like Genovese ravioli stuffed with veal brain, capon, and liver, served with a braised capon leg sauce; crispy sweetbreads with Parmigiano fonduta and charred treviso, and grilled pork tongue spiedini with fava beans and pancetta.

The Greenhouse Tavern, and Lolita: Cleveland
Chef/owner Jonathon Sawyer of downtown’s The Greenhouse Tavern is more than just a 2010 F & W Best New Chef. He’s a man who isn’t afraid to make “Roasted Ohio pig face” one of his signature dishes. Granted, this is a hog gussied up with Sawyer’s signature Frenchified gastropub style: cola gastrique, petit crudite, and lime. But Sawyer, who lived briefly in Rome, also pays tribute to the eternal city of love by serving a daily-changing il quinto quarto “with tasty bits.”

the Publican: Chicago
Spicy pork rinds; blood sausage; headcheese; neck bone gravy with spaghetti and Parmesan; sweetbreads with pear-celery root remoulade. the Publican executive chef/co-owner/award-winning chef Paul Kahan is innovative with more than just offal. He uses scraps, blood, and bones to create charcuterie, as well as elegant, “beer-focused farmhouse fare (his father owned a deli and smokehouse; no wonder).” Chef de cuisine Brian Huston leads the show, carrying on the tradition.

The Spotted Pig, New York
Having just received its fifth Michelin star means this Greenwich Village hot spot will continue to be nearly impossible to get into. But it’s worth the wait for chef/co-owner April Bloomfield’s (yet another F & W Best New Chef alum) soulful gastropub cuisine. In the never-too-much-of-a-good-thing category: Calf’s liver with crispy pancetta and house-made bacon.
