Five fantastic (and mostly budget-friendly) Chilean wines available in the U.S.

Chilean wine–if given any thought at all–has historically been considered cheap plonk; the Gallo of the Southern Hemisphere.

Those days are over, baby. In recent years, Chile has become a contender with the wines of the more well-known Mendoza Valley in Argentina, just a very high-altitude hop over the Andes.

The central Chilean wine regions of Maipo, Colchagua, Casablanca, San Antonio, and Aconcagua Valleys (and their various sub-regions) are blessed with a Mediterranean climate; rolling hills; a lack of crowds and attitude; amazing diversity of varietals; affordable wines, and refreshing coastal breezes or stunning views of the nearby Andes. You’re not going to find all of that in Napa.

While in Chile last month, I visited a number of wineries in the above regions, and I was impressed by the quality of the wines. Modern Chilean winemakers are young, progressive, and well-trained, often in Europe or the U.S..

Below are five of my favorites, all of which are available here in the States. If you can’t find them at your local wine shop, they can be ordered online through your favorite retailer or via New York-based Puro Wines–the world’s first dedicated Chilean wine store.

All of the following wineries have tasting rooms open to the public; quoted prices are in U.S. dollars and may vary depending upon retailer.

1. Emiliana Organic Vineyards Eco-Balance Sauvignon Blanc 2011, Bio Bio Valley
This forward-thinking family vineyard practices organic and biodynamic farming, relying upon their resident sheep, alpacas, and poultry to do the weeding and fertilizing, but more modern sustainable business practices and employee-incentive programs are also at work. The Sauvignon Blanc is loaded with nectarine, white peach, and tropical fruit without being cloying or heavy. The 2010 is a steal at $8.99-$10.95; look for the ’11 coming soon.2. Matetic Vineyards EQ Syrah 2007, Rosario Valley
This rural vineyard with a luxe, seven-room guest hacienda is in a sub-region of the San Antonio Valley. The Syrah is lush and velvety, with a blackberry nose and notes of leather and spice. At $35.00, one of the more pricey selections, but worth it.

3. Viña Undurraga T.H. Syrah 2009, Leyda Valley
Located in the heart of the Maipo Valley, this historic, 120-year-old family winery was founded by Don Francisco Undurraga, one of the pioneers of Chile’s wine industry. Cooling coastal fog cloaks the vines that yield this jammy Syrah, which features a hint of spice and vanilla; $29.00. If you happen to visit the winery, do not miss out on their Pinot Noir sparkling rosé ($14.99, but not currently available in the U.S.).

4. Viña San Esteban In Situ Gran Reserva Carmenère 2008, Aconcagua Valley
Located in the charming village of Los Andes, this small, friendly, high-altitude winery lies in the Andean foothills, an hour from Santiago. A short walk past the tasting room will take you to rocks bearing Incan and native Mapuche petroglyphs hundreds of years old. In Situ is their premium line; Carmenère, a member of the Cabernet family of grapes, is the signature varietal of Chile. Intense, full-bodied, and almost chewy, with dominant flavors of blackcurrant and tobacco; $16.00

5. Viña Indómita, Duette Chardonnay 2009, Casablanca Valley
This blindingly white winery sits grandly atop a hillside in the Casablanca Valley, 24 miles from Valparaiso and 54 from Santiago, respectively. You can tour the cellar, then hit the elegant restaurant post-tasting room. This Chardonnay has unexpected, intense pineapple overtones and is creamy on the palate with a refreshing finish; $19.99.

Fall festivals: five delicious ways to celebrate

There’s something really depressing about seeing the last of the tomatoes, corn, and stonefruit at the farmers market, the withering vines in my neighbor’s gardens. But fall is also an exciting time for produce geeks, what with all the peppers and squash, pomegranates and persimmons.

If you love yourself some good food and drink, here are five reasons to welcome fall. No matter where you live in the North America, at least one of these is guaranteed to be coming soon to a town near you.

1. Hit a harvest festival
From the hokey (corn mazes, hay rides) to the downright debaucherous (late-night live music and beer gardens, camping in orchards), harvest festivals are a blast, no matter what your age. A great harvest festival will include delicious food; local craft beer, cider, or wine; farm tours and seminars; a children’s area and special activities; live music, and, if you’re lucky, a beautiful, bucolic setting in which to experience it all. Some festivals run the span of a weekend, providing an opportunity to take in more of the educational offerings.

Below are some of my favorite festivals, all of which have an educational component to them. Should you find yourself in Northern California in early October, it’s worth a detour to attend the famous Hoes Down Harvest Festival (Oct.1-2) at Full Belly Farm in the Capay Valley, near Davis. It’s one hell of a party (there’s also a top-notch children’s activity area, so little people will have fun, too); definitely plan on camping in the orchard and bring your swim suit; the farm is located beside Cache Creek.

Other great celebrations of fall: Vashon Harvest Farm Tour (Sept. 25), Vashon Island, WA; CUESA Harvest Festival (Oct. 22), Ferry Building Farmers Market, San Francisco, CA; Annual Harvest Festival, Sustainable Settings (mid-Sept.; date varies, but mark your calendars for next year!) Carbondale, CO.

September 22nd, from 7:30-9pm, the 16th Annual Harvest in the Square is being held in Union Square; online tickets are still available until tomorrow at noon for what is one of New York’s premier food and wine events. In North America, the wine grape harvest is held in September or October, depending upon weather patterns. In Napa Valley, “Crush” has just started, and with it, fall colors on the vines; barrel tastings; special winery tours, wine-and-cheese pairings, and up-close-and-personal views of the Crush itself. Even if you’re not an oenophile, it’s by far the most beautiful time to visit Napa and it’s neighboring wine region, Sonoma Country. For Napa wineries and event listings, click here. 3. Go apple picking
With apple-growing regions scattered all over North America–from Virginia and Pennsylvania to New York, Washington state, British Columbia, and California–there’s no shortage of opportunities to attend festivals or U-picks. This traditional fall pastime is a fun activity for kids and supports the local economy and foodshed. Put up apple butter, -sauce, or freeze a pie for Thanksgiving, but be sure to save enough for winter (all apples and pears are placed in cold storage once the growing season ends, so the fruit you buy later in the season won’t be freshly picked). Store in a cool, dry, dark place. P.S. Don’t forget to buy some cider doughnuts if they’re available.

Please note that due to unusual weather patterns (aka “global warming”) this past year, the harvest is delayed in many parts of the country, including Washington. Check with local farms before heading out.

4. Visit a cidery
If you prefer your apples fermented, there are some excellent craft cideries throughout North America. The tradition of craft cider distilling hails from Western Europe, but domestically, the hot spots are the Pacific Northwest (including British Columbia), parts of the Midwest, and the Northeast.

5. Feast at a farm dinner
For food lovers, few things beat dining outdoors in an orchard or pasture, surrounded by the people and ingredients that made your meal possible. Farm dinners are a growing national trend; they may be hosted independently by the farm (Washington’s Dog Mountain Farm, Colorado’s Zephyros Farm, and California’s Harley Farms Goat Dairy are my picks) or hosted by companies like Portland, Oregon’s Plate & Pitchfork and Boulder’s Meadow Lark Farm Dinners. Many farm dinners are fundraisers to help protect local agricultural easements or wetlands, but your participation also supports the farm and local foodshed.

Farm dinners are also held at wineries, distilleries, craft breweries, mariculture farms, and creameries; a tour should be included. The best part, however, is when the guests include everyone from the local cheesemaker, rancher, fisherman, or winemaker, to the potter who made the plates. It’s both humbling and gratifying to meet the people who work so hard to ensure local communities have a safe, sustainable food supply.

October is American Cheese Month!

It’s amazing it took this long, what with national hot dog month, ice cream month, and clogged artery month (okay, I made that one up), but now we have a new reason to check in with our cardiologists.

The American Cheese Society ACS) has announced the launch of American Cheese Month, an annual celebration of America’s artisan, farmstead, and specialty cheeses, and the farmers, cheesemakers, distributors, retailers, cheesemongers, chefs, and educators who make up this growing community. And I joke about cardiologists; cheese consumed in moderation is an excellent source of protein, calcium, phosphorous, and vitamins B12 and D, and an important part of maintaining bone and dental health.

American Cheese Month will be held annually each October, with special events, farm tours, and promotions in cities across the country. The goal of the month-long celebration is to raise awareness about the quality and diversity of American cheeses (from the milk of cows, goats, sheep; even water buffalo), as well as to increase support for family farms, traditional cheese production methods, and sustainable production and farming methods. Proceeds from select American Cheese Month events will support the American Cheese Education Foundation.

In the last decade, North American artisan cheesemakers have become serious contenders with those in Europe, and the excellence of American artisan cheeses is now recognized worldwide. The American public’s passion for cheese is also booming, as evidenced by the increase in cheese shops, books (Shameless self-promo moment: I’m currently co-authoring Cheese for Dummies in collaboration with Culture: the word on cheese magazine and its co-founder Lassa Skinner. It will be out in March, 2012) classes, workshops, and festivals.

ACS will kick off American Cheese Month in its home base of Denver, at the Brewers Association’s 30th Annual Great American Beer Festival (sold out, alas). Beer and cheese pairing is the hottest thing going in both industries, so look for more cross-promo events in the coming year. Colorado Governor John Hickenlooper has shown his support by issuing a proclamation declaring October as American Cheese Month in the state (which has its own growing–and impressive–artisan cheese scene).

Five (almost) labor-free recipes for Labor Day

I love to cook. Just not for myself. What I truly enjoy is feeding family and friends, but indoors or out the last thing I want to deal with is a labor-intensive meal–especially when it’s hot. So, in honor of the upcoming holiday weekend, I’m sharing five of my favorite, late summer recipes. They feature easy-to-find ingredients, regardless of where you live, but if you can purchase the produce and meat at your local farmer’s market or from another sustainable source, so much the better. In my opinion, the key to great food (especially where home cooks are concerned) lies in the quality of the ingredients. Even if you’re visiting friends, local ingredients can be adapted or found for these travel-friendly dishes.

The following require little in the way of skill, prep and clean-up, leaving you more time to enjoy the final days of summer with the ones you love (or want to impress). All of the following serve two, and can be easily increased to serve a large dinner party or barbecue.

1. Pancetta-wrapped pears (or peaches) with blue cheese
Allow one piece of fruit per person, and be sure to use ripe, but not mushy, produce–softer pear varieties such as Bosc, French Butter, or Warren are ideal. Halve each piece of fruit, and core or remove pit. Brush cut surfaces lightly with olive oil, and wrap each half in a piece of good-quality bacon, pancetta, or prosciutto (you may want to use a wooden skewer or toothpick to secure it during cooking). Grill over medium-hot coals (start with one half of fruit; if it’s taking too long, wait until coals are hot) until bacon or prosciutto is crisp, and fruit is slightly caramelized. Serve with lightly dressed bitter greens, and garnish with a creamy, non-assertive blue cheese such as Original Blue, Blue d’Auvergne, or Bleu d’Basque.

I can’t claim credit for this Tuscan classic, but it should be in every cook’s repertoire. Tear a loaf of day-old, country-style bread into 1-inch pieces, drizzle with olive oil, and toast until golden brown. While bread cools, halve one pint of miniature tomatoes, and cut 2 to 4 medium-size tomatoes (I prefer to use a mixture of heirloom varieties for the best color and flavor) into chunks. Place bread in large bowl, and add tomatoes. Drizzle with olive oil and one tablespoon of good Balsamic or Sherry vinegar. Season to taste with kosher salt and freshly ground black pepper. Toss with hands until ingredients are combined. Just before serving, tear basil leaves into small pieces and toss into salad.

3. Fingerling potato and haricot vert salad
Scrub 1-1/2 pounds of fingerling or new potatoes, halve or quarter them, and place them in a large saucepan or stockpot of cold water. Boil until tender, and drain. Pinch stems from 1/2-pound of haricot vert, blanch until tender (the younger and thinner they are, the better they’ll taste), and drain. Finely mince one medium shallot, and one clove garlic. Add shallots and garlic to small saucepan with 1/2 cup of extra virgin olive oil and heat on low until the the shallots and garlic are lightly sizzling (they shouldn’t brown) and the oil is fragrant. Whisk in 1 tablespoon of Champagne or white wine vinegar, and add a tablespoon of Dijon mustard (optional). Coarsely chop one large handful of Italian parsley. Place the potatoes and haricot vert in a serving bowl, and add enough of the shallot vinaigrette to coat potatoes without making the salad soggy. Season to taste with kosher salt and freshly ground black pepper, add parsley, and toss to combine.

4. Grilled ribeyes with mustard-herb butter
Heat grill until coals are hot. While grill is heating, take a 1/2-stick of room temperature, unsalted butter, and place in small bowl. Add 1-2 tablespoons of Dijon mustard (or as needed), finely minced herbs such as chives, parsley, or chervil, teaspoon minched shallot or garlic and a pinch of salt. Mash ingredients together with a fork until desired flavor is reached.

Lay a sheet of plastic wrap on counter, and place butter at one end of the plastic wrap, shaping it into a log. Roll the butter up (be sure not to roll the plastic into it) to form a tube, and twist the ends of the plastic. Chill until ready to use. Pat steaks dry and generously season both sides with kosher salt and freshly ground black pepper, and grill until medium rare. Arrange a small mound of bitter greens in the center of each plate, add a steak, and top each with an ounce of butter. Serve immediately.

5. Grilled peaches with raspberries and ricotta
Heat grill until coals are hot. Halve peaches, and brush cut surfaces very lightly with olive oil to prevent sticking. Grill until the cut side of the fruit is soft and caramelized. Serve in a shallow dish or bowl with raspberries and a large dollop of good-quality ricotta, Greek yogurt, unsweetened whipped cream, or fromage blanc. Garnish with chopped, toasted pistachios.

Barbecue and picnic tips for a safe, delicious (and seasonal) Fourth of July

For Americans, there’s no holiday more synonymous with eating outdoors than the Fourth of July. It’s the ultimate summer dining event, one that largely emphasizes regional foods and seasonal ingredients.

Tomatoes and corn are perhaps the two most iconic summer foods served on the Fourth (just because we live in an era where we can purchase certain ingredients yearound doesn’t mean they taste good). Other featured foods are more regional. Midwesterners are more likely to feature cherry pie and beef (happily, hamburgers are always in season). On the East Coast, clam bakes, lobster, and crab are more traditional than meat, but out West, it’s almost unthinkable to celebrate Independence without firing up the barbecue. In the South, pit barbecue is a permanent staple, as is fried chicken. But the Fourth of July also means sweet tea, pickles, chilled watermelon, peach cobbler. Potato salad, on the other hand, is a nationally ubiquitous dish, but the recipe often varies regionally.

All of the above are stereotypes, of course. Yet, looking back on the states I’ve lived in or visited for the Fourth, I can see the menus usually had a sense of place. I grew up in Southern California, so if we weren’t grilling beef tri-tip or at the beach, we’d hit up KFC for a pre-fireworks picnic in the park. I’ll be the first to admit that a bucket of fried chicken and “fixin’s” is about as devoid of terroir as you can get, but for millions of Americans, it’s emblematic Fourth fare (my mom is definitely not alone in her dislike of cooking). When I lived in Hawaii for a summer, I went to a co-worker’s luau, and in Colorado, we’d grill corn and lamb or beef.

Wherever you live, whatever you serve, al fresco dining can present food safety hazards–most of which are temperature and sanitation-related. Fortunately, a few simple steps can ensure your food stays safe, so you can have a foodborne illness-free holiday. Because E.coli should never be on the menu, regional, seasonal, or otherwise.

After the jump, food prep, storage, and transportation tips for healthy holiday dining:

  • As obvious as it sounds, wash your hands before preparing food, and after handling raw meat, poultry, seafood, or eggs. If you’re assembling an outdoor meal, wash as often as necessary: pack antibacterial gel and hand wipes if you don’t have access to hot running water and soap. And remember: you need to scrub for at least twenty seconds to kill germs.
  • Avoid cross-contamination by using a separate cutting board and knife for raw proteins such as the above. Alternatively, wash knives and cutting surfaces with hot water and soap or diluted bleach before using for other ingredients. The same practice goes for grilling: always use separate or clean utensils and plates for the transfer of raw and cooked proteins.
  • Bacteria breed more quickly in a hot climate, so plan menus accordingly. As a general rule of thumb, food can be safely kept at room temperature for about two hours (the USDA has more specific views on the subject: click here for details). You don’t need to be paranoid–our germophobic culture isn’t building stronger immune systems for future generations–but don’t be stupid, either. As the saying goes, “If in doubt, throw it out.”
  • Use a cooler filled with ice or ice packs to keep cold foods chilled until ready to cook or eat. Storing food in separate Tupperware (or other reusable) containers keeps ingredients fresh, dry, and free from cross-contamination, so you can assemble on-site.
  • If you’re planning an outdoor meal where you don’t have access to refrigeration, it’s best to skip ingredients such as mayonnaise or other egg-derived foods; fresh or soft cheeses or other fresh or fluid dairy products, and raw meat or seafood dishes (oyster shooters: not a good idea). Cured meats and hard or aged cheeses are safer bets.
  • Produce, as we’ve all learned from the media, can also harbor foodborne illness. The culprit is usually poor sanitation. Wash produce prior to use, and be sure to bring anti-bacterial hand gel and wipes so everyone can clean their hands before digging in.
  • Don’t allow leftovers to fester in the sun or attract insects. Wrap things up and get them back in the cooler or refrigerator.
  • Be sustainable. If it’s not feasible to use your usual silver- and dinnerware, look for reusable, recyclable, or compostable products made from bamboo, sugar cane, palm leaf, or recycled, unbleached paper. Instead of paper napkins, opt for cloth. Pack leftovers in reusable containers to cut down on plastic wrap or aluminum foil. Bring a container to take compostable scraps (excluding meat, dairy, and seafood) with you, if you have a facility that will accept them. If you can’t use your leftovers, donate them to a homeless shelter or other facility for those in need.
