Discovering the king of baristas in Croatia’s caffeinated capital, Zagreb

Coffee is an obsession in Croatia, and in its capital, Zagreb, the coffee culture is as strong and prevalent as the locally prepared žižule grappa. And the coffee itself? It would knock the non-fat foam off a Starbucks latte any day.

But it’s not just about the flavor. Here, having coffee is as much of a social ritual as an essential kick-start to the day, and hours and hours are spent over a cup and saucer. It’s not surprising that locals have eschewed the “to-go” cardboard coffee cup and sleeve trend, opting instead to revere coffee as a destination in itself.

To understand this, you need only spend Saturday morning at the intersection of Bogoviceva and Gajeva Streets, near Zagreb’s Flower Square. The outdoor cafés stack up on these pedestrian-only passageways, and the well- and high-heeled patrons sit elbow to diamond earring and watch the world, and each other, catwalk by. The most coveted spot is a perch at Charlie (Gajeva, 4), once owned by the late footballer Mirku Bruan, who used his nickname as the bar’s moniker. Celebrities, models, actors, singers and femme fatales descend on this area of central Zagreb to see and be seen, and presumably drink coffee, in a phenomenon known locally as Spica. I’ve heard many translations for this word – pinnacle, point, and striker (the soccer/football position) among them — but ask a Zagreber and you’ll be told that Spica means only one thing: Saturday morning coffee.

In search of something a little more down to earth, and with lower heels, for my own Spica, I strolled along Ilica Street, Zagreb’s main thoroughfare. A few cafés appeared but none appealed to me — too smoky; too over-lit; too many laptops. Dodging an endless hustle of bikers and walkers, I stopped to lick the windows (as my French friends say) of pastry shops like the family-run Vincek, whose cakes and cookies looked too perfect to eat. Then one of the always-stuffed blue trams of Zagreb whirred down Ilica Street and startled me, and as I was recovering I noticed a crowd gathered beneath an awning printed with the words “simply luxury coffee.”

From the moment I entered the minuscule Eli’s Caffé, I knew this was not going to be an ordinary coffee experience, and that owner Nik Orosi was not going to be an ordinary barista.

Dober dan! (Good morning!),” Orosi yells when I walk in. Eli’s Caffé is all white, from the hollowed-out cubes displaying coffee cups hanging in the front window, to the walls, ceilings and streamlined furniture in the espresso-sized room. There is only space for a few high-top tables for two, and they are occupied, and the patrons lounging on the couch in the front of the room look as if they’re staying a while. I zero in on the 5-foot red-lacquered bar in front of Orosi.

The room is jammed, wool coats diminishing the scant space between bodies, and the guttural din of Croatian is my soundtrack as I do the shimmy, duck and pardon-me dance toward the only empty stool. For a few minutes I just watch Orosi. His hands pound and twist and wipe and push out coffee, orders for which dart through the heated air like fruit flies. Each time the door opens, about every 30 seconds, Orosi looks up to greet a new wave of caffeinerati, many of whom he knows by name. I can’t help but think of “Cheers.” Eventually Orosi asks me where I’m from. When I tell him San Francisco, he asks me if I know Blue Bottle Coffee. Of course I do. It’s good coffee, I say.

“They do make very good coffee, but their baristas are too stuffy,” Orosi responds. He faults most baristas for using big words, similar to wine experts and sommeliers. “Why would they do this? People don’t understand. It’s elitist and scares people away.”

Orosi knows a thing or two about barista-ing. He was the Croatian national champion three times, in 2006, 2007, and 2008, and has several other titles that include the word “best” in them. But Orosi doesn’t brag. He opened Eli’s, named after his son, in 2005 because of a dream he had had — and “to bring coffee closer to people.”

I order a strong coffee with milk and Orosi’s hands and arms know what to do without consulting his mouth or eyes. The barista king effortlessly toggles between English and his native tongue, and simultaneously manages to collect money, make coffee, chitchat, and wipe down his spotless La Marzocco coffee machine that he dotes on like a prized Ferrari. Before he serves the fresh brew, Orosi puts his nose in the cup and takes a sniff, swirls it, then sucks a small amount in his mouth. “No. Too watery,” he says, dumping it. He starts over.

Like everything in the café, Orosi’s set up behind the bar is uncluttered. No CDs for sale. No mug-lined shelves or cookies or breath mints. Just stacks of white coffee cups and saucers, the espresso machine, a sink, and the white on white relief of his café name and again the words “simply luxury coffee.”

Orosi sets down a thick-rimmed white saucer on the bar and turns it a few centimeters clockwise. He then places a small silver spoon on the saucer, followed by the cup, which he turns so the handle faces right to expose his logo, which is really an anti-logo. He pours in the coffee, and then pours in the hot, slightly aerated milk. With a flick of the wrist, he conjures a heart pattern in the foam, then slides the concoction toward me.

I ask him about the writing on the cup that reads “No logo/ just taste.”

“I just want to make good coffee,” he says. “I don’t want people to think it’s good because it’s a certain brand.”

Orosi tells me that he also removed the menu that once hung behind the bar so that people would talk to him directly about his product. He also says the walls of the room used to be charcoal grey — the antithesis of the café’s current unpigmented interior.

“I don’t want people to come in and order #5. I want it to feel open, and for people to focus on coffee and learn something about coffee,” he says. “Just because you drink it every day doesn’t mean you know about it. I eat every day but I’m not going to call myself a chef.”

As if on cue, two women walk in, wave, and yell out something in Croatian. “See, that’s what I’m talking about,” smiles Orosi. I ask him what they said.

“They just asked for two of my best coffees,” he smiles, and wipes down his coffee machine again.

I take a sip and the coffee’s taste is full-bodied, not at all acrid like a lot of the coffee I have tried on my Croatian trip so far. It also contains just the right amount of heated milk. I close my eyes.

“Look at this,” Orosi says. He opens his hands to reveal a palm full of coffee beans: dry, brown, aromatic. Eli’s Caffé, for now, is the only establishment in Zagreb that roasts its own beans. Orosi takes a whiff and identifies the beans as Tanzanian and the ones he is using today. In the few moments we’ve been talking seven other orders have landed on his ears, and he grows silent to catch up.

“I love being busy but it keeps me from talking to people,” he says, not looking up.

I sip, watch and listen. Every now and again Orosi sings a few bars of the national anthem, the American national anthem, which I assume is for my benefit. I ask him if I can take his picture and he smiles sheepishly, lowering his eyes. His list of awards and accolades is long, and I know I’m not the first to ask for a photo, but he keeps moving, avoiding the lens and my request. I drain my last drop and begin to leave, but Orosi insists I stay for a second cup.

“After two glasses of Champagne, you’ll do something wrong. After two cups of coffee, it’s all right.”

For another 20 minutes, I am content to remain in Orosi’s caffeinated world, a world I serendipitously fell into and one I tell him I’ll return to in a week.

“Come on Monday,” he yells as I open the door to leave. “The Ethiopian beans will be perfect by then.”

When I return the coffee is indeed perfect, again. And Orosi still won’t look directly at the camera. Next time.

Christmas in Paris: ’tis the season to be feasting

It’s not that Paris doesn’t have Nativity Scenes or Christmas trees or even Santa Claus-lookalikes called le Père Noel-Father Christmas..

It’s not that Parisians don’t string blinking lights, buy extravagant gifts, throw parties, ring bells, and sing “noel-noel”. Isn’t noel French for “Christmas?” A few French faithful even attend ceremonies, light candles, observe Advent Lent, and fold hands in drafty sanctuaries that echo in emptiness the rest of the year.

But somehow in this militantly secular republic, where freedom from religion is a religion in itself, Christmas really isn’t about Christmas. Not the way “les Anglo-Saxons” seem to celebrate it.

Noel in Paris is a time for worshipping the true French cult: food and wine, la grande bouffe. It’s pagan, it’s druidical, it’s not just pre-Revolutionary, it’s possibly pre-Roman or prehistoric and thoroughly ancient Gallic, meaning totally contemporary French.

Christmas in Paris is a fattening tale of extreme Thanksgiving-like gourmandizing, gluttonizing, gobbling, gnoshing and every other imaginable variation on the theme of snarfing up and scarfing down fine edibles and nectarous potables.

Holiday food markets and an extra rasher of farmer’s and neighborhood markets mushroom in squares across the land and sometimes even fill bridges that cross the Seine. The Champs-Elysées, Trocadéro, Notre-Dame, Saint-Germain-des-Prés, Place de la Nation and other history-soaked sites swarm with humanity drawn like flies to rustic stands groaning with goodies from the provinces.Stationed on a thousand sidewalks outside bottle shops, cheese shops, and gourmet specialty boutiques legions of svelte Parisian Santas-most in spiffy civvies without a trace of cotton beard-tempt you to taste or swill something seasonal and irresistible-and part with your precious euros.

On Paris radio stations it’s not sleigh bells or Christmastide jingles that delight your ears. Non. It’s nonstop advertising for les produits nobles-the French nation’s notion of upscale produce and ingredients. The list stars, of course, Champagne, Sauternes and hoary wines from mossy chateaux, foie gras, oysters, scallops, smoked salmon or sturgeon or duck’s breast, caviar, truffles, runny Mont d’Or cheese, catwalk chocolate and extravagant pastries.

Pastries!

In Paris a buche de noelisn’t a yuletide log to burn in your fireplace. It’s a dangerously caloric, creamy log-shaped cake that comes in a mind-boggling variety of sizes and flavors. Millions are consumed in the holiday season, rolled out by every baker in town.

This glad season of weight-gain actually stretches from La Fete de la Saint Martin-November 11-to Epiphany-January 6, reaching paroxysms of hedonism at Christmastide.

Saint Martin’s feast day is dedicated to — guess what? Not a holy man! It’s the official festival of foie gras, and opens the hunting season for France’s many marchés au gras, which continue into the New Year. Only in France can the concept of “fat markets” make mouths water. The French Ministry of Agriculture has a web page dedicated to this artery-plugging phenomenon but not much about the forgotten saint. The separation of things spiritual and comestible into sealed compartments is deliciously watertight.

Like foie gras, pastries bridge the holiday season. When the yuletide cake logs have burned through they are swiftly replaced in January by les gallettes du roi-“the king’s flaky pies.” They look like pork pie hats but are filled with delicate marzipan. Included in the price of your gallette you’re given a folded golden crown of paper. Whoever finds the fève hidden inside the pie-literally the fava bean, though it’s usually a ceramic token-is crowned king or queen of the day. That’s a ritual that goes way back, past the various King Louis all the way to Augustus Caesar.

Who knows how many Parisians are aware of what the gallette and fava tradition springs from, and how many care? In Paris “Epiphany” is either a revelation about a fashionable new restaurant or a slice of the king’s marzipan pie. Rarely are the arriving Magi invited to share it.

No, Santa definitely drives a refrigerated truck when he hits Paris. Maybe that’s why I decided to stay all these years.

5 challenges of long-term travel and how to cope

Does the thought of quitting your 9-5 job, packing a bag, and booking a one-way ticket to travel the world sound appealing? While in many ways it is, there are also a lot of challenges that go along with long-term travel. Learning how to deal with these hardships can be a big help in making an around the world trip, career break, or extended vacation a lot more enjoyable.

Challenge 1: Lack of privacy

Unless you’re extremely wealthy, chances are you’re going to be traveling on a tight budget if you plan on being away from home for more than a few weeks. Most likely, you will be staying in shared accommodations like hostels or volunteer homes and sleeping on people’s couches, leaving you with very little privacy.

So, what should you do? Many times hostels rent out single rooms that can allow you some alone time on a budget. While you’ll still pay more than for a shared dorm, it can be worth the splurge once in awhile. You can also try looking for sublet listings in the area or searching Airbnb for cheap rooms for short and long-term rent.Challenge 2: You feel homesick

While you may believe that traveling will keep you too distracted to miss home, think again. Chances are, at some point you’re going to crave something from the life you once lived, whether it be the people, the food, an activity you used to do, or just being able to lounge in your bathrobe while eating cereal from the box.

When traveling, I usually carry around photos of my friends and family back home, not only for myself but to show locals who are curious about my life in New York. It’s also a good idea to purchase an affordable calling plan, such as Skype or PennyTalk, to make calls when you feel like you need to hear someone’s voice. I’ve also found that keeping a blog, or at least an active Facebook page, helps because friends and family can follow my trip and comment, which makes me feel more connected to them.

If it’s a food you miss, going to the more touristy areas and trying to find the Western-style restaurants can help you find what you’re looking for. While in Ghana, I missed pizza so much that I actually took a 3 hour bus ride to get some, no joke. While I enjoyed trying local cuisine in Africa and getting to know the culture, I was at the point where I would have literally run through fire if I knew there was a McDonalds or Pizza Hut waiting on the other side.

Whatever it is you miss, try to recreate it. But always remember how lucky you are to be having an experience abroad and to not let homesickness keep you from missing out on unique experiences.

Challenge 3: You miss your normal diet and fitness routine

This is my biggest challenge when traveling for a long time. At home I’m very regimented in my workout routine and there are certain healthy food staples that I eat on a regular basis. Depending where you are this can be challenging, but not impossible.

Your first stop should be a local market or supermarket where you can find an array of unprocessed foods. While they might not have exactly what you’re looking for they may have something similar. For example, in Ghana I really missed apples, which weren’t always available. I started eating mangoes to subside my cravings and realized I actually liked them more than apples. Also, try to book accommodations with kitchens so that you can prepare your own meals and choose your own ingredients.

While you may not want to waste precious time at a local gym or late nights out partying are making it difficult to wake up, change the way you look at exercise. Don’t think of what you’re doing as a fitness routine but as a way to see a city from a new perspective. Bike from one town to another, go jogging through a picturesque park, swim at a local beach, or take a unique fitness class that you might not take at home and look at it as a cultural experience. Another tip: limit your use of transportation and try walking and biking. Not only will you save money and reduce your carbon footprint, you’ll burn calories.

Challenge 4: Quick relationships become the norm

Regularly traveling from city to city and always meeting new people can be a lot of fun…until you have to say goodbye. However, goodbyes become the norm when you are globetrotting, and it can be difficult to part ways with so many great people.

With this, one important thing is to change your outlook on the situation. While it isn’t fun, you’ve got to think about how lucky you are to have gotten to experience a new place with such interesting people. Take a lot of photos, make memories together, and at the end of it all exchange contact information. With all of the technology and social media platforms we now have, keeping in touch with people all over the world is easy. I can’t even count how many times I’ve actually planned other trips with or gone to visit people I met while backpacking. So, don’t be discouraged. And at the very least, you’ve made a new pen-pal.

Challenge 5: The actual traveling part of traveling gets exhausting

While getting to roam around the globe and see different places is fun, the actual means of getting to these places can get old. Sitting on long train rides, waiting in line to get through security at the airport, and stuffing yourself into a crammed bus are hard enough, but when you’re doing it regularly it can become downright draining.

Since teleporting is not yet an option (but probably will be soon at the rate we’re going), the only thing to do is to schedule vacations away from your vacation. Take a week (or longer) off from moving around and stay put in one town. While many people want to see as many different cities as possible, sometimes it’s better to see less places for more time to really get to know the culture.

Top Five On-The-Go Regional Road Restaurants


Nothing makes one feel more like a local (or confers more bragging rights) than discovering a locally-beloved hole-in-the-wall while traveling — but what if you’re just passing through? Fear not; even those who barely have time to pull off the freeway can still eat like an insider.

Although none of the following restaurants carry quite the same street cred as a hip underground dive, they’re all regional stalwarts, well-liked by locals and, more importantly, easy to access from any major freeway in the area. From west to east, here are five reasons why you should never have to resort to McDonald’s on the road:

1. Burgerville (OR/WA)

For fast food in the Pacific Northwest, there’s no better bet than Burgerville, with its locally sourced ingredients and seasonal menu items, which currently include Yukon Gold fries and a chocolate-hazelnut milkshake. Their standard menu isn’t too shabby either, with offerings like sweet potato fries and a half-pound “colossal cheeseburger” with Oregon’s own Tillamook cheddar.

2. In-N-Out Burger (CA/AZ/NV/UT)

Californians can be obsessive about In-N-Out, and with good reason. Unlike Burgerville’s plethora of options, In-N-Out keeps its menu simple, but those in the know rely on the “secret menu” when ordering up double-doubles (double-meat, double-cheese), Neapolitan milkshakes, or “animal style” (extra sauce and grilled onions). Be sure to snag a free bumper sticker to really show off your Cali bona fides.

3. Rudy’s “Country Store” and Bar-B-Q (NM/TX/OK/CO)

Part gas station, part convenience store, and completely delicious, Rudy’s is a one-stop, full-service oasis for any road-weary traveler. Pull off for some gas and stay for the pulled pork or the brisket — just give yourself a few minutes to eat inside, because wet, Texas-style barbecue this finger-lickin’ good deserves your full attention.

4. Skyline Chili (OH/KY/IN/FL)

Skyline is a Cincinnati-born regional favorite, born of a simple concept: spaghetti noodles, chili, and copious amounts of cheese. It’s also delicious, and a prime example of good, old-fashioned stick-to-your-ribs Midwestern fare.

5. Legal Sea Foods (FL/GA/VA/DC/MD/PA/NJ/NY/RI/MA)

Legal Sea Foods isn’t just another seafood chain — their restaurants, throughout the mid-Atlantic and New England, vary their menus according to the catch of the day. It’s the fanciest restaurant on this list, but if you’ve got time to sit down, it’s worth it; from clam chowder to blue crab and Maine lobster, you can savor the flavors of the East Coast, without straying too far from the asphalt.
