New BBC America cooking show combines travel and adventure

It was only a matter of time before all the eating of rats and scorpions on “Survivor” grew tiresome. Perhaps that’s why producer Kevin Greene and “Chopped” producer Chachi Senior created a new cooking series for BBC America that combines exotic locales with dodgy outdoor adventures. There’s just one little catch: there’s no kitchen.

No Kitchen Required” takes 2008 Food & Wine “Best New Chef” Michael Psilakis of New York’s FISHTAG and Kefi, private executive chef Kayne Raymond (aka the resident beefcake), and former “Chopped” champ Madison Cowan, and drops them into ten remote locations to perform some serious hunting and gathering.

After being plunked down in Dominica; Belize; New Zealand; Fiji; Thailand; Hawaii; New Mexico; Louisiana, and Florida, each chef is handed a knife (“Pack your knives and go,” is not a sentence you’ll hear uttered on this series) and a few key ingredients. They’re then left to fish, hunt, forage, and otherwise scrounge up the remaining ingredients to “create a locally-inspired meal that will be judged by the community.”

Despite the gimmicky and somewhat contrived nature of the challenges, there’s a lot to love about this show. It’s fun, innovative, and despite my raging addiction to “Top Chef,” I’m happy to see a cooking show that finally requires the use of local/seasonal ingredients (let’s hope there’s no blow-darting of endangered monkeys or serving of shark fin). Weaving the regional and cultural element into the concept is genius. Braised nutria, anyone?

Holiday gifts for food (and drink)-loving travelers

Holiday shopping is easy if the people on your list like to eat and/or imbibe. If they’re into travel–be it armchair or the real deal–the options are endless This year, think beyond the predictable bottle of wine or pricey “artisan” cookies and give reusable, portable, eco-friendly gifts or small-batch edibles that are the taste equivalent of a trip abroad.

As for where to get these items, look at farmers and flea markets, street fairs, specialty food shops, wineries/distilleries, and boutiques. One of my favorite spots to shop: foreign supermarkets.

For the green at heart

An inflatable wine bag is ideal for wine and spirit-loving travelers. They’re multi-use and work equally well for olive oil, vinegar, or other fluid specialty products.

A logo tote bag (preferably made from recycled materials) from a specialty food shop, winery, etc. is great for practical recipients. A co-worker recently brought me a signature navy blue number from Neal’s Yard Dairy, a famous cheese shop in London. In two months, it’s traveled to South America and across the U.S., doing time as a souvenir satchel, laundry and grocery bag, and all-purpose carry-on. When I don’t need it, i just roll it up and stash it in my duffel bag or day pack. Love it.

Gift a wine key (opener) salad tongs or bowl, chopsticks, or other kitchen utensils made from local, sustainable materials such as wood, antler, bone, bamboo, or shell. Do a quick online search or ask (I’ve said it before, I’ll say it again: phrasebooks) about the origins of said object. If you have any qualms about the eco-aspect, don’t buy it and let the shopkeeper know why.

[Photo credit: Flickr user noramunro]Drink coasters are always appreciated. I’ve picked up woven palm versions in Indonesia, as well as purchased colorful Portuguese azuelos tiles for this use. If the country or region you’re visiting is famous for its leather, woodwork, ceramics, or even recycled metal handicrafts, you’ll probably find a nice, inexpensive set of coasters. Again, be sure they’re made from sustainable materials.

Vintage kitchenware–even if it’s not functional–can be a great gift, especially if your intended is a collector. Salt-and-pepper shakers, wine openers, cheese knives, a set of Melamine bowls: hit up antique stores or street fairs, because you’re sure to find treasures at affordable prices.

For the adventurer

A pocketknife or plastic folding knife from a famous cheese shop or winery is indispensable to hikers, campers, foragers, and DIYer’s who enjoy a good picnic while on the road. Just make sure your loved ones aren’t the type who don’t check their bags when they fly. A mini-cutting board of wood/bamboo or slate is also a nice gift.

Know someone who’s into mountaineering or other high-altitude pursuits? Coca leaf tea (or for a less effective but more entertaining option, caramels or hand candy) really works, and it’s legal.

For the locavore

If you have a friend of the “Eat local/Support family farms” variety, a gift from your travels can still fit the mold. Whenever and wherever I travel, I make a point of purchasing local, handcrafted foodstuffs: jam or other preserves, honey, cheese, candy. What I buy depends upon where I am and whether or not I have to abide (cough, cough) by customs regulations or have access to refrigeration.

If customs and temperature aren’t an issue, consider a gift of cheese, charcuterie, or even some spectacular produce (A would-be suitor once presented me with a tiny disc of goat cheese and one perfect peach before I departed on a flight; I wasn’t into the guy but loved the thoughtfulness of his gift).

If you you’re looking for a shelf-stable product, some suggestions: leatherwood, manuka, or tupelo honey (from Tasmania, New Zealand, and the Florida Panhandle, respectively); sea salt (I love the red alaea salt from Hawaii); Argentinean dulce de leche; drinking chocolate; real maple syrup; dried chiles or posole from New Mexico; palm sugar from Indonesia; spices from India or Morocco; Spanish saffron or paella rice–look for Calasparra or Bomba from Valencia; Provencal chestnut cream; Italian tomato paste or canned sardines (canned tuna from overseas is very often not from a sustainable fishery); barbecue or hot sauce; heirloom dried beans; stoneground grits…

I particularly like to buy items grown/produced by farmer co-ops but unless they’re manufactured for export or are a dried good, beware. A jar of manjar (the Chilean version of dulce de leche) I purchased from a tiny bakery wasn’t sealed properly, and was contaminated with mold when opened. Botulism or other foodborne illness is not a thoughtful gift (although I suppose it’s better to give than receive…), so make sure you’re getting professionally packaged goods.

Inside Virgin Galactic’s Gateway to Space (VIDEO)

Yesterday morning, Governor of New Mexico Susana Martinez, Virgin Galactic CEO George Whitesides, and Richard Branson welcomed guests inside Spaceport America to commemorate and christen the spaceport’s main terminal hangar facility as the ‘Virgin Galactic Gateway to Space’.

The Montgolfier brothers had Paris. The Wright brothers had Kill Devil Hills. Today, Richard Branson can officially call the New Mexican desert ‘home’ for his burgeoning commercial space line.

This morning, Governor of New Mexico Susana Martinez, Virgin Galactic CEO George Whitesides, and Richard Branson welcomed guests inside Spaceport America, to commemorate and christen the Spaceport’s main Terminal Hangar Facility as the ‘Virgin Galactic Gateway to Space’.

In front of a crowd of 800 journalists, future astronauts, and team members responsible for the design & construction of the VSS Enterprise, the spacecraft made a ‘captive carry’ fly-by with mothership White Knight II, before landing on the 10,000 ft. long runway and docking outside Spaceport America’s 47,000 sq. ft hangar.

As flight tests ramp up toward a speculative launch date in 2012 or early 2013, the Spaceport will now serve as the home base of operations for those working to make Virgin Galactic a reality; a date that for some, can’t come soon enough.

Over 400 passengers have already put down a deposit of $20,000 toward the $200,000 ticket price to be among the first tourists to venture into suborbital space. For these future astronauts, the experience is much more than just taking a trip to space.

At events like the one today, it’s a chance to network and be a part of an elite group that is helping Branson write the next chapter of aviation history. In some ways, it’s the ultimate traveler’s club – a chance of a lifetime for those that can afford to join. Future passengers from all across the globe come to events put on by Virgin Galactic to mingle with former NASA astronauts, politicians, and the Branson family.

Branson’s hope is that it won’t be long before tens of thousands of ordinary humans brave enough to make the trip will be able to afford the flights; and he will have helped forge an entirely new tourism industry.

When operations commence, which could be as soon as 2012 or 2013, passengers will go through a three day training experience at Spaceport America. They’ll undergo g-force testing, weightlessness simulations, and health checks to ensure that they’re fit enough to make the trip to 361,000 ft. Once aboard the 6-seater craft, they will experience up to 4g’s as they rocket toward an apogee inside the thermosphere, before experiencing up to 5 minutes of weightlessness.

There is still much to be done before the passenger experience in New Mexico is fully worked out, but Branson promises that it won’t disappoint. While Galactic has yet to prove itself as a full-fledged business, their customers are excited and there is a sense of enthusiasm from the company as they continue to expand an already impressive list of staff members.

The date on which we’ll witness a powered flight is still uncertain, but it seems as if Branson is determined to keep passing milestones on the way to the history books at a very steady rate; and now with a new home for Galactic, the only way forward is up.

Enjoy unlimited cooking classes and more at the Santa Fe, New Mexico, Harvest Festival

From November 1-November 23, 2011, people looking for the ultimate experience in food and wine should head over to New Mexico for the Santa Fe Harvest Festival. During the festival, ticket holders are entitled to unlimited cooking classes and discounts on lodging and dining, allowing them to fully experience the hospitality and food culture of the area. The kickoff for the event includes a server relay race, where teams of servers from different restaurants race around The Plaza carrying trays loaded with drinks. There will also be a Chef Showdown, a competition between chefs, as well as Bar Wars!, which will determine who is the #1 mixologist in Santa Fe (and, spectators get to sip their own cocktails at discounted prices).

Are you a fan of sampling food and wine? The Santa Fe Harvest Festival will also feature a Food & Wine Expo which will have more than 50 booths set up for food and wine tasting, culinary demonstrations and exhibits, and book signings by celebrity chefs. The week culminates in a Best of the Fest silent auction and gala dinner.

Need another reason to attend? A portion of the proceeds go to help Cooking with Kids, a nonprofit based in Santa Fe, New Mexico, that works to motivate and empower elementary school children to eat healthy through hands-on learning techniques using fresh, affordable foods from different cultural backgrounds.
