Restaurant Rooftop Gardens: Five Of America’s Best

From where I stood on the roof of Bastille Cafe & Bar in Seattle’s Ballard neighborhood, I could see flocks of seagulls circling nearby fishing boats, as I catch whiffs of brine, gasoline and eau de canal water.

Despite the industrial marine supplies and salmon canneries across the way, up here I was surrounded by buzzing honeybees and dozens of varieties of produce, from heirloom French beans and petit pois to herbs, tomato starts, lettuces and cucumber vines.

Bastille is part of an emerging breed of urban restaurant (many of which are located in hotels) popping up across America. Not content to just source food locally, today’s seasonally- and sustainably-driven chefs and restaurateurs are installing rooftop gardens and beehives to augment the product they purchase from family farms.

Many of these restaurants offer public tours of their rooftop gardens, greenhouses and hives, so even city-dwellers (or line cooks) no longer have an excuse to remain clueless about where their food comes from – and the public can’t get enough. With the urban farming movement – backyard produce, chickens, bees, even dairy goats – at critical mass, savvy chefs, concerned about their carbon footprint and wanting more control over the production and quality of their ingredients, have turned their rooftops into kitchen gardens.

Few restaurants can spare the labor or have staff experienced in cultivating crops, which is where small businesses like Seattle Urban Farm Company and Ballard Bee Company come in. The Urban Farm Company’s services include construction and maintenance of residential backyard farms, rooftop gardens, educational school gardens, and on-site gardens at restaurants and businesses. With regard to the latter, chefs and cooks receive education as well, and become involved in caring for and harvesting crops and collaborating on plantings based on menu ideas.

Corky Luster of Ballard Bee offers hive hosting or rental, where homeowners keep hives on their property, in exchange for maintenance, harvesting, and a share of the honey. Bastille keeps hives, and uses the honey in cocktails and dishes ranging from vinaigrette’s to desserts.

Seattle Urban Farm Company owner/founder Colin McCrate and his business partner Brad Halm and staff conceptualized Bastille’s garden with the restaurant’s owners three years ago. After substantial roof retrofitting, rectangular garden beds were installed. Over time, beehives were introduced, and this past year, plastic children’s swimming pools were reinforced with landscape fabric and UV-protective cloth, expanding the garden space to 4,500 feet.

In summer and fall, the garden supplies chef Jason Stoneburner and his staff with 25 percent of their produce for Bastille’s French-inspired seasonal cuisine. Housed in a lavishly restored, historic 1920s building, it has the vibe of a traditional Parisian brasserie, but here you’ll find an emphasis on lighter dishes as well as cocktails crafted from boutique spirits and rooftop ingredients.

Every Wednesday, Rooftop Garden Tours are hosted by Seattle Urban Farm Company, and include a complimentary Rum Fizz, made with Jamaican rum, mint, sparkling wine, bitters and (of course) rooftop honey. Cost is $10 per person; limit 10 people. Contact the restaurant for reservations.

Thomas McNaughton of popular Mission pizzeria flour + water opened his newest venture on May 9. Both restaurants have rooftop gardens, and Central Kitchen is a lovely, modern rustic sanctuary serving simple, seasonal fare that highlights Northern California ingredients.

In addition to beehives, Central Kitchen is producing peppers, zucchini, tomatoes, berries, figs, citrus and herbs in a 2,000-square-foot space. Lexans (heavy-weight plastic storage containers used in professional kitchens) serve as garden beds, while herbs flourish in a converted Foosball table. Talk about recycling!

Uncommon Ground on Clark, Chicago
This big sister to the new Edgewater location features a 2,500-square-foot garden with solar panels to heat water used in the restaurant. Everything from beets, eggplant, okra and bush beans are cultivated, including rare seed varieties from the Slow Food “Ark of Taste.” The Ark is dedicated to preserving the “economic, social, and cultural heritage of fruits and vegetables,” as well as promoting genetic diversity. Expect refined crunchy granola fare with ethnic flourishes.

Roberta’s, Brooklyn
This insanely popular Bushwick restaurant made national headlines when chef Carlo Mirarchi was named a 2011 Best New Chef by Food & Wine magazine for his wood-fired pizzas and way with rooftop produce, including some heirloom varieties.

Mirarchi, who is passionate about urban farming and community involvement, uses two repurposed cargo containers on the restaurant’s roof for cultivating crops, and keeps a blog about the evolution of the garden.

How To Avoid Looking Like A Tourist

Blending in to a city or country you’re visiting has many advantages. Among them, allowing yourself to have a more immersive experience and not falling victim to a robbery scheme involving human feces. Some cities come with their own code of conduct, such as Washington DC, where during Gadling’s recent summit we noticed anyone who stands on the left side of an escalator is immediately met with a barrage of furrowed brows and choice words. The tips below, however, can help keep you from being branded as an out-of-towner in any city the world over. Take these pointers in stride and the day will come when tourists ask you for directions while you’re out on adventures.

Be Discreet About Using Maps & Guidebooks
Let’s face it: We all get lost, even in cities we’re familiar with. But if you carry around a guidebook or unfold a large map in public, you might as well wear a neon sign flashing “tourist” over your head. That doesn’t mean you should travel sans map, but it does help to step out of foot traffic or even into a store or cafe when you need to regroup and figure out where you are.
If you do need to use a guidebook, try to unfold it so the cover isn’t visible or hold it in a (preferably local) newspaper or magazine. Another idea is to check and see if mobile guides are available, that way no one will suspect you are reading a guide as you scroll through your phone. Besides, in the age of smartphones and GPS technology, it’s easy to get around by discreetly consulting a map on your phone – just be aware of your surroundings and don’t pull out your fancy phone in a place where it could be an easy target for a robbery.

When riding public transportation, take note that the locals often use maps – but they tend to stick to the ones posted in subway and bus stations. Studying a map beforehand in your hotel or on a plane is one easy way to get acquainted with a new location that will end up saving you time (and causing you less stress) in the end.

Follow the Area “Dress Code”
One simple way to blend in is to camouflage yourself in the local mode of dress. Europeans tend to wear dark, neutral tones – but the opposite is true in the Caribbean and India where vivid colors are found everywhere. As a visitor you’ll blend in by wearing these colors, too.

Dressing for the local weather is also important. Forgetting to pack a raincoat in Seattle will surely brand you as out of touch with the local weather, as will running around in a sundress in San Francisco in February (no matter how mild it feels!). Abroad, many Americans tend to wear outdoor gear intended for hiking, skiing or similar pursuits, but these articles of clothing are uncommon in most countries. Even in cold places, the rest of the world tends to wear more formal attire, such as wool or leather coats.

In addition to outerwear, there are many stereotypically American articles of clothing travelers should avoid when going abroad. This includes sneakers, Crocs, baseball hats, cargo pants and shorts, but can also be expanded to clothes featuring the United States flag or U.S. brand names such as Abercrombie and Gap. These brands are gaining popularity across the world, but again, anything that brands you as a tourist should be avoided if you want to travel incognito. Travelers should also avoid wearing flashy or expensive jewelry, as its never a good idea to attract too much attention.

And by the way, fanny packs are not acceptable anywhere and are largely considered the ultimate fashion faux pas for tourists. Sandals with socks are a close second.

Try to Speak the Language
One of my nightmare travel partners was a person who assumed everyone in Europe knew English. She would begin speaking in her native tongue to concierges, shopkeepers, servers and anyone else she came in contact with, and when they gave her confused looks she would only repeat her question louder and slower. Sure, it can be embarrassing to put yourself out there, but making an effort to speak the local language is a huge sign of respect. Besides learning a few basic words (the translations for “please” and “thank you”) will go a long way. Be sure you know how to say, “do you speak English?” in any country you visit. It’s a great conversation starter for tourists.

Along the same lines, the less English you speak while out and about the more you’ll be able to travel under the radar. That’s not to say you and your travel partners should play “the silent game” while abroad, but it’s something to take into consideration. A great example is when taking a taxi in a foreign country. If you’re able to say “hello,” give directions and make small talk in the driver’s language and then make it through the rest of the ride without speaking English to your cohorts, the driver may never have a clue you’re from out of town. He or she will be less likely to scam you or take you into dangerous territory.

Take Things Down a Notch
All around the world, Americans are known for being louder than is customary in most countries. This includes using loud voices in public places – especially while talking on cellphones. Americans also have the tendency to use exaggerated arm and hand movements. Avoid making the wrong impression and sticking out by reminding yourself to be a little more reserved.

Resist the Urge to Photograph Everything
It’s easy to get snap happy abroad. With the discovery of new places and experiences comes the desire to capture these special moments (and bring a little photographic evidence back home). But how many times have you returned from a trip and looked through your pictures only to find you can pick out a handful of photos that represent your entire vacation? And how many times have those pictures been of the inside or a church or of a landmark that has already been the backdrop to thousands of tourist photos? It’s something to take into consideration before your next trip.

Living a little less through the lens of a camera will drastically help downplay your tourist factor. Unless you’re a professional photographer, there’s probably little reason you need to have a camera draped around your neck at all times. Camera-toting tourists are an easy target for theft because not only are they showing off expensive equipment, but they are also distracted from their surroundings. Believe me on this one, because I once nearly fell victim to a robbery while living in Quito, Ecuador. I still take lots of pictures in my travels, but I make sure to be discreet when doing so and always tuck my camera safely away when it’s not in use.

Research Local Manners
Knowing whether or not simple gestures such as a handshake are customary or which hand to hold a fork in is crucial to blending in abroad. Giving the “okay” gesture will land you in trouble in Brazil (it’s similar to flipping someone off in the United States), while not knowing how to correctly hold chopsticks in China will be a dead giveaway that you’re new in town. Knowing whether or not to tip is also very important, especially because in some countries (namely Korea and Japan) it can be considered an insult to leave one. Before you go, spend some time looking into local manners and etiquette. It doesn’t take much time, and you’ll be a much more considerate traveler after doing your research.

Stay Alert and Be Confident
Of all these tips, the golden rule for fitting in with the locals is to stay alert and be confident. Looking and acting the part with confidence will get you much further than you think. If you can do that while staying aware of your surroundings, you should have a much easier time mastering how to look like a local.

To truly blend in, become observant. If you don’t know how to do something such as swiping your Metrocard in New York, instead of fumbling at it and causing a bottleneck, take a moment to step to the side and observe how to go through the turnstile. Along the same lines, if you haven’t seen anyone walking down the street and drinking coffee in Rome, don’t be surprised to find most places don’t have a to-go option. In the same vein, if you’re lost in an unfamiliar place, at least try to look like you know where you’re going and nobody will suspect you of not knowing your way around town.

Of course, these are only suggestions. Becoming invisible as a traveler is difficult and the skill takes a long time to master. Don’t let the act of “trying to fit in” ruin your trip, and by all means don’t feel ashamed of where you come from.

Berkeley’s Edible Cities Guide Leads Urban Foragers To Free Good Eats

Anyone who’s ever snagged fruit off of their neighbor’s trees or bushes (oh, don’t look at me like that) will appreciate the new online Edible Cities guide from Berkeleyite Cristian Ionescu-Zanetti.

Berkeley is ground zero for the localized food movement, and “urban foraging” has been growing in popularity amongst local chefs as well as home cooks.

As a former resident and recent subletter, I can attest to just how many tasty treats grow in this region, which is composed of many microclimates. All manner of citrus – most notably Meyer lemons – heirloom varieties of plums, cherries, loquats, avocado, raspberries, blackberries, pomegranates, persimmons, rosemary, wild fennel, miner’s lettuce, wild watercress, mustard plants…they all flourish here, sometimes in backyards, but often in public spaces.

Hence, Edible Cities, which uses a Google Maps interface that denotes where specific species are free for the picking. In a recent interview in Berkeleyside, Inoescu-Zanetti, who is originally from Romania, stated that urban foraging’s “most important aspect is education: Kids need to learn where food comes from, and adults need a refresher, as well.” Here, here!

According to its mission statement, Edible Cities’ goal is to promote local food security by “mapping publicly available food sources” and “enable a more sustainable mode of food production that lessens our environmental impact.” In plain English, you can have free fruit and preserves year-round, instead of buying tasteless, imported crap sprayed with God knows what.

Oakland has a similar program, Forage Oakland, which began in 2008. Los Angeles, Portland, Seattle and Tampa also have fruit gleaning projects, which are variously used for residents and to provide fresh food for those in need.

Sleeping In Seattle: The Consequences Of SAD

I recently mentioned my somewhat reluctant decision to relocate from Seattle when the right opportunity presents itself (A job and nice one bedroom in Berkeley, North Oakland or Boulder anyone? Anyone?).

While my move was precipitated by a layoff in February, I’ve known for a year that a relocation was necessary, regardless of my affection for my adopted city – despite my beautiful, relatively affordable apartment just two blocks from Lake Union and my peaceful, tree-lined neighborhood full of pretty houses brimming with gardens and backyard chickens. Even though I can walk everywhere, crime is virtually nonexistent and my landlord rocks.

The real reason I’m leaving Seattle is because I suffer from Seasonal Affective Disorder (SAD) and arthritis (due to a bizarre infectious disease acquired in Ecuador three years ago). SAD is thought to result from a shift in the body’s circadian rhythms, due to changes in sunlight patterns (think of how certain mammals hibernate in winter). Shorter, darker days also increase the amount of melatonin, a hormone linked to the regulation of sleep and waking, released by the pineal gland. Perhaps my being a Southern California native is to blame (although I’m officially a resident of Colorado…it’s complicated, I know).
It took me a long time to commit to a move to the Pacific Northwest, despite my love of the region, because I was concerned about the climate. But, like many before me, I was seduced by a record-breaking Seattle summer three years ago when the temperature soared into the upper 80s and the sky remained a clear, vivid blue. The job prospects appeared promising and an incredible sublet fell into my lap. I was in Seattle for the weekend for work and a month later, I was living there. It was like I’d hijacked myself.

My friend Chris has lived in Seattle since 1994. We were hanging out during my visit when I announced I was going to move. “It’s not usually like this,” he cautioned. I was busy gaping at Mt. Rainier in the distance.

He didn’t lie. I’ve been waiting for the weather to be like that ever since. I was filled with anticipatory dread before my first winter, which is why I’d initially only committed to a sublet. It turned out to be the mildest winter Seattle had seen in years, causing me to mock the locals I’d met. “Just wait,” they told me ominously (for a different viewpoint, check out my Gadling colleague Pam Mandel’s ode to Seattle winters, here).

The last two winters – which have been harsh, even by Seattle standards – have kicked my ass. It’s not the “snow” we’ve gotten; I love snow. But Colorado averages 300 days of sunshine a year, and it has a tolerable, dry cold. Seattle cold seeps into the bones, and summer is a negligible term for most of that season. I actually didn’t realize I had post-infectious arthritis until two years ago, when the Fourth of July dawned wet and dismal, and my joints felt like they’d entered their golden years overnight.

Since then, I’ve experienced varying intensities of arthralgia in my hands and knees as well as low-level to serious fatigue. As a runner, this was problematic and my depression increased because I had turned from physically active, adventurous outdoor fanatic to couch potato. I often required daily naps, which wracked me with guilt.

Not until last summer, while visiting my former home of Boulder, Colorado, did I fully realize the impact Seattle was having on my physical and mental health. On my first morning, to quote a SAD-suffering friend, I felt like “someone had turned the world’s lights back on.” I marveled at the sunshine and warm air. I shocked myself by effortlessly doing a three-mile run – the first half uphill. Every day, I stayed outside until sunset. My arthritis had vanished. I felt like me, again: the spaz who can’t stand to be indoors when the sun is shining. I was productive and active and a much, much happier person. I had the same experience while in northern Chile in August.

I returned to Seattle and wham! I morphed into the worst of the seven dwarfs again: sleepy, grumpy and lazy. Work circumstances forced me to postpone a move, and it seemed like every day it was either pissing rain or the sky was low and leaden. I had difficulty concentrating on work, and was irritable and overemotional. Desperate, I sought the care of an excellent psychiatrist, who combined talk therapy with antidepressants.

While getting laid off sucked, it was also a strange relief. The one thing tying me to Seattle was gone. The thought of leaving is disappointing, but life is too short to live embedded in the couch. The economy is picking up in the Bay Area and I’ve had some very promising job leads.

It’s hard to admit that the color of the sky exerts such influence over your mood. However, I’m not alone; according to Mental Health America, three out of four SAD sufferers are women.

My advice: the sooner you admit it, the sooner you can get on with living. Whether you require phototherapy, antidepressants, extra Vitamin D, counseling, acupuncture, warm-weather vacations, or relocation, the bottom line is that SAD is very real and can have a devastating impact upon your quality of life as well as your personal and professional relationships and career. And, like a romance that’s not quite right, it’s not worth sticking it out. Me? I’ve decided that Seattle is ideal for the occasional weekend fling.

Signs you may be suffering from SAD (these symptoms are most likely to occur in winter, but some forms of SAD do occur during the summer)

  • Inability to concentrate or increase in irritability
  • Feelings of sadness, unhappiness, or restlessness
  • Fatigue and/or lethargy
  • Anxiety
  • Increase in appetite/weight gain
  • Social withdrawal
  • Increase in sleep and daytime sleepiness
  • Loss of interest in work and activities you once enjoyed

Seattle Ranked ‘Best City For Hipsters’ According To Travel & Leisure

So Travel & Leisure has published a list of “America’s Best Cities for Hipsters.” This is amusing – and a wee bit annoying) to me for a variety of reasons – not least of which because Seattle makes the top of the list. I’ve lived here (actually “there,” because as I write this, I’m in a sublet in Oakland) for nearly three years. Apparently, I’m reverse-trending, because San Francisco is #3 (Portland, OR is #2).

As the sun (metaphorically – this is Seattle we’re talking about) sets on my time in the Pacific Northwest and I prepare to relocate back to the Bay Area for what I hope to be at least a couple of years, I’m filled with mixed emotions. Hipster-mocking and -baiting has been one of my favorite pastimes in Seattle, which is both ironic and hypocritical of me when you take T & L‘s definition of “hipster” into consideration:

“They sport vintage bowling shoes and the latest tech gear-but they also know all the best places to eat and drink. [The magazine] ranked 35 metropolitan areas on culturally relevant features like live music, coffee bars, and independent boutiques. To zero in on the biggest hipster crowds, we also factored in the results for the best microbrews and the most offbeat and tech-savvy locals.

It’s our take on the debated term hipster….whatever your take, you generally know hipsters when you see them-most likely in funky, up-and-coming neighborhoods. A smirking attitude toward mainstream institutions means they tend to frequent cool, often idiosyncratic restaurants, shops, and bars-the same kinds of venues that appeal to travelers looking for what they can’t find at home. There’s also an eco-conscious influence in contemporary hipsterdom.”

So let me get this straight: I’m a hipster because I care about the environment, and I write about food, thus I eat and drink in places that are too idiosyncratic for mere mortals. And jeez, I just edited a craft beer guide. And I really support my local indie businesses. Conversely, I know jack about tech, and you will never, ever see me in a pair of bowling shoes. I also want to bitch-slap the bejesus out of smirky, pretentious funksters who feel the need to categorize themselves in order to maintain a sense of self. Cliques are for high school, kids.

[Image via Flicker user Conor Keller fortysixtyphoto.com]I also find it deeply ironic that a luxury magazine likes to think it knows what’s hip, because real hipsters love nothing more than a bargain, whether it’s $2 happy hour PBR’s or a sweet bowling shirt from Value Village. I can assure you the average T & L reader does not shop at Value Village.

What I find interesting, however, is that part of my mixed feelings about leaving Seattle have to do with its very hipsterness. I love street fashion, vintage, indie anything, tattoos and food artisans (hipster alert!). People watching has been one of my favorite activities in Seattle, because most Seattlites have such great style. It’s a city where the alternative-minded can grow old semi-gracefully, without looking like roadkill from Gen X or beyond. In Seattle, no one gives a f— about what you look like, or what you’re into. You can just be.

It’s sheer coincidence that last week, while reacquainting myself with Berkeley (where I lived for nearly a decade), I wondered why it is the natives here have no style (in my hipster eye view, pilled fleeces, flowy hemp clothing and ergonomic shoes are terminally unhip). I already missed Seattle’s eclectic street style, which never fails to inspire, amuse, and yes, sometimes horrify me (Boys, please stop with the neon, nuthugger skinny ankle jeans. Just sayin’).

Is this essentially a very shallow essay on an incredibly superficial topic? Yes, absolutely. But if it is a “tipping point” as T & L claims, then hell, I’m game. I’m ultimately leaving Seattle – an amazing, beautiful, vibrant city – because the climate kicked my ass (see my forthcoming post on “Sleeping In Seattle: SAD And Its Side Effects”). I’m back in the Bay Area because the economy is simmering and for someone in the food business, this is Ground Zero.

You can’t have it all, and the grass is always greener. Those cliches aren’t very hip, but they’re true. I miss all the hipsterness that once surrounded me, but I also love seeing sun, citrus trees and the Bay Area’s unbeatable food scene again. And that, in a nutshell, is why I’m trading down to a place a little less hip. I can always visit Seattle when I’m feeling frumpy.
