Seattle Culinary Camp With Chef Tom Douglas Offers A Taste Of Washington State

It’s a well-known fact amongst Seattleites that the sun always comes out for the summer starting on July 4. OK, that wasn’t true two years ago but on July 5, there it was. Anyway, it’s the official start of our summer and that means it’s also the start of the eating season. For farmers market goers and lovers of the grill and al fresco dining, July is kickoff time.

Perhaps that’s why Tom Douglas, the modern father of Pacific Northwest cooking (the late James Beard being the true granddaddy of PNW cuisine), chose July for his annual Culinary Camp. The award winning chef and restaurateur behind such Seattle landmarks as Dahlia Lounge, Palace Kitchen, Lola and Serious Pie has held a five-day culinary immersion program every July for the past six years.

Locals and visitors alike will get a taste of local ingredients such as geoduck clams, Dungeness crab, blueberries, salmon, wild mushrooms and cheese in hands-on cooking classes as well as demonstrations and tastings from Douglas – currently a finalist for the James Beard Outstanding Restaurateur of the Year award.

Additional educational opportunities will be available from other respected Seattle food and drink authorities; in the past, these have included Matt Dillon of Sitka & Spruce and The Corson Building, Mark Fuller of Spring Hill/Ma’ono, and Maria Hines of Tilth and The Golden Beetle. Former visiting experts have included acclaimed chef Nancy Oakes and her husband, sausage king Bruce Aidells and noted food writers/cookbook authors Rose Levy Beranbaum and James Peterson.

This year also marks the 50th anniversary of the Space Needle, so citywide celebrations will make vitamin D-depleted Seattlites even more festive than usual. Got Geoduck? An Epic Clam Dig On The Olympic Peninsula

It’s a drizzly late March morning at Hood Canal, a fjord-like arm of Washington State’s Puget Sound two hours west of Seattle. The air is briny and pungent. Douglas-fir trees and fog-shrouded inlets dot the shoreline. Bald eagles soar overhead while dozens of harbor seals bob in the water.

Armed with a shovel, a hand trowel and a five-gallon bucket, I’m attired in hip waders and neoprene. I slosh through the shallow water — stumbling over oyster shells, tufts of eel grass and starfish — searching for telltale, two-inch, oval holes in the sand from which the tip of a mollusk siphon may protrude (a visual cue known as a “show”).

The elusive creature I seek is Panopea generosa (a Latin name that will seem far more hilarious when you check out the gallery below), the geoduck clam. At first glance, the geoduck is unarguably, hideously, phallic — there’s no polite way…ahem….around it.

Possessed of a leathery neck, or siphon, that stretches up to three feet in length, the world’s largest burrowing clam tends to freak Americans out. In Asia, it’s revered as a delicacy and aphrodisiac, yet it’s native to the waters of the Pacific Northwestern U.S.

%Gallery-151127%I, too, found geoduck disturbing, until I moved to Seattle, and found a small pile of it on my plate while dining at Spring Hill, award-winning chef Mark Fuller’s restaurant (recently rechristened Ma’ono). Dressed with a tart lemon peel relish, the meat was slightly sweet and briny, with a subtle, satisfying crunch. Fuller loves geoduck for its ease of preparation, and “mild, clean flavor and snappy texture.” He prefers to serve it raw, with some citrus, olive oil and a bit of coarse sea salt. The “king” clam is also used as sashimi, sautéed or hot-smoked.

Seattle forager, author (Fat of the Land: Adventures of a 21th Century Forager, Skipstone Press), food blogger, and back-to-the-land Renaissance man Langdon Cook prefers geoduck in an Asian-inspired ceviche, marinated with lime juice, a touch of fish sauce and brown sugar, and diced red onion, Serrano chile and shredded, green (unripe) papaya or mango.

Since I love tracing food to its source, I asked Lang to take me ‘duck hunting. After catching the ferry to Bainbridge Island, we drove to the eastern side of the Olympic Peninsula; Hood Canal has a number of state parks with wild geoduck. While not seasonal, March is when mandatory harvest licenses are issued; you can obtain them here through the Washington Department of Fish & Wildlife. Low tides in July and August are ideal for geoduck harvest, because it stays light late, and the weather is at its best.

At Dosewallips Tide Flat (part of a lovely state park), we discovered the water higher than anticipated, but fortunately, we had Taylor Shellfish Farms manager John Adams to provide his considerable expertise. Instead of digging in sand, we’d be shoveling against the clock in heavy, sticky substrate. Despite this setback and even in drizzling rain, the aesthetics were spellbinding.

When I finally spotted a show, after much difficulty and with the help of my geoduck-senseis, we laboriously dug a three-foot-deep pit adjacent to the clam in the gloppy, shell-laden substrate. Since it was my story, I had the glory of actually winnowing the recalcitrant little bastard out of its burrow.

Immersed to the shoulder, sodden and stinking of tidal effluence, I finally manage to extract the clam. I triumphantly fist-pumped my three-pound prize in the air, while its leathery siphon drooped to the side like a dehydrated tongue. We capped off the day by collecting a bucket of littleneck clams from the beach, and then Lang took me to his home in Seattle for a tutorial on removing the “gut ball” from a geoduck. Unsurprisingly, gut ball soup is also a delicacy in Asia, but I can safely say this particular food trend won’t be catching on in mainstream America. You can quote me on that.

I went home with my siphon (I generously left Lang with the shell and gut ball; he did, after all, do most of the digging), and made sashimi. You know what? It tasted damn good. So did the clam linguine that followed.

Find hotel deals with new booking site Guestmob

The Internet has brought us many ways to research and book hotels at prices much lower than the hotels’ published rate. Aggregate sites like Kayak and Orbitz give you the best available rate (BAR) without pre-payment on a specific hotel, while “opaque” sites like Priceline and Hotwire allow you to bid for a room below BAR but the actual property remains hidden until after you book and the purchase is non-refundable. Now a new booking site offers you hotel deals well below BAR while ensuring consumers flexibility and a standard of quality.

Guestmob differs from other hotel booking sites by combining high-tech algorithmic pricing and expertly curated properties hand-picked for their high user ratings. The site works by grouping hotels into collections of four to eight properties in a given category and neighborhood. You enter your travel dates and can immediately see a room rate of up to 50% below BAR for each hotel collection. The Thursday before you check in, the exact hotel is revealed but you are guaranteed one of the specific hotels in the collection. Best of all, unlike other opaque booking sites, you can cancel your reservation up to three days before check-in.Previously, some savvy travelers have tried to “game the system” with sites like Bidding for Travel, a forum that tries to guess winning bids and participating hotels on opaque sites by sharing successful bookings. Guestmob removes the need for this research by specifying hotels in each collection and immediately offering a deeply discounted price. While room upgrades, frequent guest points and other requests are still at the discretion of the hotel upon check-in, it’s still a great option for travelers with flexibility.

A Guestmob search for a hotel in Chicago on a weekend in mid-May yielded a price of $164 for a 3.5 star hotel on Magnificent Mile (such as a Courtyard or Embassy Suites), or $203 to bump up to a 4 star in the same area such as a W or Westin Hotel. The same properties ranged from $221 to $279 on other sites. Most Guestmob hotels are part of well-known chains such as Marriott or Starwood, or smaller chains like Kimpton and JDV.

Seattle’s new Hot Tub Boats: swingin’ in the rain

I live in Seattle. So I can state with authority that out here if you want hipster street cred you’ll be rocking at least some sartorial remnant of the ’70s — be it a pair of groovy shades, nut-hugger jeans, a polyester dress or booty cut-offs.

What else is reminiscent of the ’70s? Hot tubs, baby. And now, chilly (but oh so cool) Seattleites and visitors alike can have a relaxing retro outing thanks to a fab new indulgence: Hot Tub Boats. You and up to six friends (kids count) can bob around scenic Lake Union in a wooden, diesel boiler-fueled floating hot tub boat with full steering capacity and a throttle. All boats come with coolers, locked dry storage, water jets and safety equipment. They are also United States Coast Guard standard approved.

The boats are also available for longer-term rentals and purchase, and can be delivered to alternate locations such as Lake Washington for an additional fee. The company is anticipating a May launch.

Alas, getting nekkid and sipping Lancers is not permitted; we’re not animals here in Seattle. And everyone knows drinking and boating (don’t) mix. Even though you’ll have to leave the booze at home and cover up your bits, there’s still something about steamy water, nippy weather and floating on a lake that feels a little bit naughty. Far out.


Craft foods calling: nationwide schools, seminars and workshops teach you how to launch your own business

Most children don’t dream of selling cheese or hacking apart animal carcasses when they grow up, but it’s a popular fantasy for many adults. Like most romantic-sounding culinary vocations, making craft foods and beverages can be hard work, and a risky business enterprise. “No matter how passionate someone is about their product,” says Heidi Yorkshire, founder of Portland, Oregon’s Food by Hand Seminars, “without business skills, they’ll never survive.”

Yorkshire, a small business consultant and former food and wine writer, was inspired to launch Food by Hand in 2009 because she saw a niche. “Our courses are mini-apprenticeships in running a sustainable business.” Past curricula have included butchery and craft distilling.

Food by Hand offers two-to-three-day intensives that teach the “craft and business of artisan food.” While the courses are designed for prospective business owners, they’re open to anyone wanting to know more about handcrafted foods.

The course is led by esteemed Portland cheesemonger Steve Jones, the son of a Maytag Dairy herdsman. Additional instructors include an expert on business planning and a tax specialist.

Jones has been in the business for over 17 years and is now on his second retail cheese venture, Portland’s Cheese Bar. He’s an industry badass and the winner of the 2011 Cheesemonger Invitational (yes, it really does exist and let me tell you, as a cheesemonger, it’s a pretty intense occupation and competition).

Food by Hand’s fourth annual seminar on The Craft and Business of Retailing Artisan Cheese will be held in Portland from May 30-June 2, 2012, and costs $1,795 per person; a $1,595 early enrollment tuition fee is available if paid in full by April 1. Click here for details on how to register.

In Spokane, Washington, Dry Fly Distilling’s aptly named Distilling School teaches their “farm to bottle” ethos (they use only locally, sustainably-grown raw ingredients in their vodka, gin, bourbon and whiskey) in two-day and one-week courses designed to “provide a variety of hands-on training opportunities to aspiring distillers.”

Opening in Oakland’s Jack London Square in April is the Food Craft Institute. Supported by sponsors and partnerships with some of the Bay Area’s most renowned artisan food organizations, farmers and food artisans (some of whom are also the instructors) the new school aims to “reinvigorate the creation and success of artisan food craft business in the U.S. through a combination of…training courses steeped in technical techniques along with a rigorous entrepreneurship program.”

It’s easy to poke fun at the overuse of words like “artisan” and “handcrafted,” and even I cringe when I hear naifs dreamily speak of quitting their six-figure tech jobs and buying a goat dairy. The reality is that unless you put in the hard time doing internships and learning the business end of things — and that’s assuming you have real, honest-to-god talent and passion — you’re not going to succeed at any food business. Having seed money or disposable income doesn’t equal good product.

On the positive side, my former employer, a Seattle cheesemonger, did her homework and spent two years interning, developing a business plan and taking Jones’ workshop as well as making him her mentor. Her business has been a success from day one. If you’re serious about getting (food) crafty, you can run a viable business. Just don’t think it’s going to be easy.

and incubator kitchens such as San Francisco’s La Cocina have helped many craft food businesses get off the ground. If you’re considering a career in this industry, I highly recommend these and similar programs as resources. And don’t forget: craft foods make excellent travel souvenirs.
