Last WWI combat veteran dies: where can you see his legacy?

Claude Choules, the last known combat veteran of WWI, has died aged 110. Born in England in 1901, he was too young to enlist in the army when the war broke out in 1914, so he waited until he was 15 and enlisted in the Royal Navy, where he saw service throughout the war.

Unlike most veterans, he liked the service and stayed on. While working as a visiting instructor for the Australian Navy, he fell in love with the country and moved there. When war broke out again he fought for his new country in its navy. He retired after 40 years in service but never stopped being active. At the tender age of 80 he took up writing and penned his memoirs. Over time he became a pacifist and controversially refused to participate in ANZAC Day parades. There’s much more to his story, so check out the link and his memoirs, assuming the book isn’t sold out by now.

Choules fought on the sea, so with no battlefields to visit, where can you see the legacy of WWI’s last combat veteran? A good start would be the museums of the two navies in which he served. The Royal Naval Museum in Portsmouth, UK, currently has an exhibition called Sea Your History: 20th Century Royal Navy that shows what life was like aboard naval vessels during the two world wars and beyond. This gives a good insight into what a teenaged Claude Choules had to endure. The Royal Australian Navy Heritage Centre at Garden Island Naval Base near Sydney also has displays about life in the navy. I wouldn’t be surprised if both museums make special exhibitions to mark the passing of this remarkable man.

But you don’t have to go to the UK or Australia to see Choules’ legacy. He lived through the most momentous event of the early 20th century. The war changed Europe and the world. The millions of deaths seriously weakened Europe’s hold on their colonies and emboldened independence movements in Africa, the Middle East, and Asia. The old aristocracy found itself hit hard financially and began to lose their grip on society. Large numbers of women got to work in factories and other “man’s jobs” for the first time, and began to question why they couldn’t vote.

While the First World War wasn’t the sole factor in the end of colonialism or the rise of women’s rights, it was a major one. If you want to see Claude Choules’ legacy, just look around you.

Pop-up restaurants: dining for a new decade

First, it was underground supper clubs. Now, everything’s coming up pop-ups. As with food trucks, this form of guerrilla cheffing borne of economic need has become a global phenomenon. Equal parts dinner party and dinner theater, a pop-up refers to a dining establishment that is open anywhere from one to several nights, usually in an existing restaurant or other commercial food establishment.

The impermanent nature of pop-ups means no real overhead or utilities, and little food cost and labor. They’re not enough to sustain chefs financially, but are instead a great way for them to make a name for themselves and draw some income in between (or during) gigs. Pop-ups also give chefs a chance to stretch themselves, stylistically or ethnically, although some prefer to let local ingredients shine. Most pop-ups give props to sustainability by sourcing product from local farms, which is part of what gives these fly-by-night operations such a wonderful sense of place.

I first heard about pop-ups while couch-surfing in San Francisco two years ago (my own pop-up form of survival after relocating back to the West Coast from Colorado). Chef Anthony Myint, the brainchild behind SF’s Mission Street Food pop-up, which started in 2008, was serving much-lauded, locally-sourced dinners Thursday nights, each time with the help of a guest chef. The food was unpredictable with regard to cuisine or style. The location? Lung Shan, a nondescript Chinese restaurant in the city’s vibrant Mission District (FYI, my favorite place for great, usually cheap, eats). I remember thinking at the time, “More, please.”Fast-forward 24 months, and while the pop-up is no more, the venture was so successful, Myint is now co-owner of San Francisco’s popular Commonwealth, as well as newly minted (har) chef at the forthcoming Mission Bowling Club. And Joshua Skenes of Saison, one of Food & Wine magazine’s newly crowned Best New Chefs, started the restaurant as a pop-up.

San Francisco has long been an incubator for innovative ideas involving food, so it’s no surprise pop-ups are, ah, popular there (click here for a recent round-up). Meanwhile, fellow 2011 Best New Chef Jason Franey, of Seattle’s Canlis, has also been getting in on the pop-up. In February, he cooked a one-night gig at “Hearth & Home,” held at one of the city’s Macrina Bakery locations (another tip: if you’re in town, visit Macrina in its own right. Four words: chocolate-orange pound cake).

The pop-up trend–which now applies to boutiques, galleries, clubs, coffee houses, and bars–has gone national. Los Angeles, San Diego, New Orleans, Chicago, New York, Boston, Portland (Oregon), Miami: all popular for restaurant pop-ups. Oakland has seen phenomenal response to its Pop-up General Store, which features a twice-monthly gathering of food vendors held at a catering kitchen. Founded by former Chez Panisse Chef Christopher Lee and his former sous chef Saimin Nosrat (of Berkeley’s defunct Eccolo), the venue features all the deliciousness you would expect when a group of mostly former Chez Panisse cooks and food artisans get together and prepare things to eat.

Pop-ups are even crossing the pond. The New York Times reports that, starting today, Singapore is sending some of its top chefs and a pop-up kitchen on a yearlong trip around the world, with nine stops planned in Moscow, Paris, London, Tokyo, Shanghai, Hong Kong, Delhi, Sydney, and Dubai. Dubbed Singapore Takeout, the goal is to showcase the city’s eclectic, multi-ethnic cuisine. The kitchen is a converted 20-by-eight-foot shipping container. Also hitting the road is chef Thomas Keller of The French Laundry, Ad Hoc, Bouchon, and Per Se. He’ll be featured in a ten-day pop-up at Harrods, London later this summer.

Gadling gear review: Outdoor Research women’s Frescoe Hoody activewear

I love hoodies, and ever since I was old enough to waddle around in my brother’s hand-me-downs (which unfortunately included his tighty-whiteys, until I was old enough to realize that, while my mom’s thriftiness was admirable, clothing your daughter in boy’s underwear was not), I’ve worn them. The versatility, quirky style, and marsupial-like comfort a great hoody can provide make it an unbeatable wardrobe staple for travel or at home.

When I started running a decade ago, zip-up sweatshirt hoodies were my favorite layering accessory. Unfortunately, they’re bulky, and one of the reasons I took up running was so I could exercise while traveling. Thus, like most active women, I require workout gear that fulfills my various needs.

That’s why I love Outdoor Research’s Frescoe Hoody. This lightweight pullover debuted last spring in the Seattle-based company’s women’s apparel line, just in time for me to give it a test-run on a monthlong backpacking trip through Australia.

For this particular trip, I needed a piece of activewear that could perform well in a variety of climates (it was winter in the Southern Hemisphere). It also needed to serve as sleepwear in a Sydney backpacker’s, and at a friend’s Arctic-like, 120-year-old stone cottage in the rainy Barossa Valley. Most important: I would have little opportunity to do laundry, so the hoody needed to, as advertised, deliver moisture-wicking, “quick-dry performance,” and remain stink-proof.The Frescoe Hoody is made of Dri-Release® E.C.O. fabric: 83% recycled polyester, 15% organic cotton, and 2% Spandex. New for 2011 is Built-in FreshGuard® odor neutralization. I have no idea what that last part means from a manufacturing standpoint, but it’s a huge selling point for someone (that would be me) who has been known to travel for weeks at a time in climatic extremes ranging from tropical jungle to high-altitude blizzard, sans access to laundry services. My test hoody didn’t have FreshGuard, and still miraculously kept stench at bay.

Pros

I confess that when I first received my Frescoe in the mail and unpacked it, I was dismayed by both the color (see Cons) and size. Although I’d ordered an XS (sizes go up to L), the “relaxed fit” was still generous. I’m 5’2″, and wear a 32A bra, so the V-neck (which is double-layered, to help prevent gaping, I presume) was a bit too low for me, but I’m used to that. How the flat-chested do suffer.

  • From the first time I wore it, however, I decided I loved the Frescoe’s slouchy design, in part because the bottom hem has a wide, flattering, slightly stretchy band. It’s slimming, but also retains body heat. The fabric is soft, light, and unbelievably comfortable, and the hood stays put but doesn’t constrict (there are no drawstrings). When I got too warm on a run, the hoody was easy to whip off while maintaining my pace, due to its loose fit. Once tied around my waist, it didn’t hinder my movement with weight or bulk.
  • What really made me fall in love with the Frescoe, however, are two fantastic features: a tiny, hidden zippered pocket ideal for holding keys, a Chapstick, and a couple of bucks, and cuff fold flaps. For cold-handed types like me, these are ideal when it’s too warm for gloves.
  • I’ve worn my Frescoe in Seattle drizzle, hiking and camping in Shenandoah National Park, and on the windy beaches of Kangaroo Island in South Australia. On that trip, I was only able to do laundry once, 10 days into my trip. Yet the top survived daily runs for two weeks, before being crammed in my backpack for four days while I was in the blistering heat of the Ningaloo Reef region in Western Australia. On day 20, the Frescoe emerged, still smelling reasonably fresh, to accompany me on a long run around Sydney’s Royal Botanic Gardens. I even slept in it that night because it passed the “sniff test.” What? Like you haven’t done the same thing.
  • The $55 price tag may seem a bit steep for what is essentially a glorified long-sleeve T-shirt. But when you take into consideration the bells and whistles, performance ability, durability, and responsible manufacturing materials, it’s a steal.

Cons

  • At 11.8 ounces, the Frescoe isn’t as lightweight and compressible as some activewear, but it’s not bad and it kept me warm. Given how well it performs, I don’t mind a little extra bulk in my baggage.
  • My only other nitpick are the colors. I admittedly have a pet peeve about women’s gear that only comes in impractical, pastelly or bright hues. I do, however, like the little flower graphic on the Frescoe’s right hip. New 2011 shades (available starting in February) include Mist (light blue), Fuschia, Mandarin, and Mushroom (brown-grey).

My own hoody is Fossil, a not-terribly flattering greyish-green that makes me look somewhat cadaverous. It’s practical, however, and never shows dirt. If OR could make this baby in charcoal, burgundy, forest green, or black, I’d buy another one in a heartbeat to wear on the street, or while tossing back an apres-ski cocktail or four.

In summary, I was really impressed with the Frescoe Hoody. It delivered on its promises to stay dry and not get stinky, and the hidden zip and cuff fold features totally rock for practicality, cleverness, and cuteness. I highly recommend this top as a multi-use travel wardrobe staple. P.S. It’s also great to wear for lounging or while typing up Gadling posts.

Gadling’s favorite hotels for 2011

Where do your loyal well-traveled Gadling contributors especially love to spend the night? We polled Gadling writers on their favorite hotels in 2010. Think of Gadling’s favorite hotels for 2011 as our version of a hotel tip sheet.

Laurel Miller. The Kirketon in Sydney for its quirkiness, cool bar, small size, helpful staff and retro-mod style, blissfully free of big-city attitude. Southern Ocean Lodge on Kangaroo Island, South Australia as a once-in-a-lifetime indulgence in a staggeringly beautiful, intimate setting hovering over a private beach covered with wallaby tracks. For high-end luxury, Ecuador’s Hacienda Zuleta. It’s historic, in the foothills of Andes in northern Ecuador, a working dairy/horse farm/creamery/condor preserve. It offers an intensely Ecuadorean experience, from the local indigenous culture to hospitality, geography, and food that is worth the trek. And lastly theWit in Chicago with its ideal location on the Loop, across the street from the river.

Mike Barish. The Wort Hotel in Jackson, Wyoming. Located right in the heart of Jackson, a historic hotel steeped in cowboy tradition. Grab a drink at the hotel’s Silver Dollar Bar after a day exploring Grand Teton National Park.

Grant Martin. Favorite hotel of the year was the Elysian, right in downtown Chicago. Beautiful, huge rooms, clean, elegant and sharp appointments, razor-sharp staff and a perfect location make this the best spot to spend a long weekend in the Loop.

Annie Scott. The Capella Hotel in Singapore remains a favorite, as does the Hotel Imperial in Vienna. I’m a sucker for luxury. I also loved staying at Sanctuary Sussi & Chuma, a treehouse hotel in Zambia, despite a harrowing adventure with a giant bug which I eventually captured with a teacup and saucer.

McLean Robbins. CastaDiva Resort, Lake Como. Opened in June, this is the first five-star resort to open on the lake in about 100 years. It’s stunning and unique. Used to be a private home to the muse of Bellini, sat empty for decades before being gutted and re-done. Top-notch service, food and spa.

Don George. This year’s hotel highlights were the following trio in Peru. All combined great style and comfort with a deep sense of immersion in the local place, through their architecture, cuisine, artful decorations, and programs that featured local people to promote local sights and attractions. In Urubamba: Sol & Luna. In Aguas Calientes: Inkaterra Machu Picchu Pueblo Hotel. In Cusco: Inkaterra La Casona.Tom Johansmeyer: My favorite hotel will always be On the Ave, on W 77th Street, between Amsterdam Ave and Broadway in Manhattan. I once lived there for a few months, and while doing so, I fell in love with the Upper West Side, ultimately moving into the neighborhood. Since my stay in 2004 the rooms have been renovated, but the sixteenth-floor terrace remains. On your next trip to the city, skip the big names, and head up to my neighborhood: it’s worth it to stay a bit out of the way.

Melanie Nayer. Sticking with the Shanghai theme (see yesterday’s favorite destinations post) my favorite hotel this year is the Ritz-Carlton Shanghai, Pudong.

Karen Walrond. I’m a big fan of the boutique hotel. Recently I stayed at Hotel Lucia in Portland and was blown away by the customer service, and it’s not too expensive. In my homeland of Trinidad, I love the Coblenz Inn, an upscale little boutique place. I also love Acajou, an upscale-yet-very-rustic eco lodge in Grand Riviere, Trinidad. Lovely.

David Farley. The Royal Park Hotel in Tokyo. If you can, get upgraded. Upgrades mean an early-evening cocktail hour with complimentary drinks and snacks every evening.

Kraig Becker. The Chico Hot Spring Resort located in Montana, just north of Yellowstone National Park in the beautiful Absaroka Mountains. Rooms start as low as $49/night and range up to $300/night for luxurious cabins with some of the most spectacular views around. After a gourmet meal in the Chico dining room, guests can soak in the pool, which is drained and refilled each night with water from the local hot springs.

Catherine Bodry. Songtsam hotels in China

Alex Robertson Textor. Buenos Aires cE Hotel de Diseño. I loved the hotel’s location and thorough minimalism (concrete walls and floors) as well as the ample room size and delicious breakfast. The rate, which I found through Tablet Hotels, was also very reasonable, at $109 including taxes.

Flight attendant trainee suing Qantas for failure to provide shrink

So, you’re new on the job. In fact, your title still has “trainee” in it. And then something goes wrong. That’s enough to make you go home, pop the cork on a bottle of wine and lament the fact that you work for a third world company. Now, imagine the whole thing happening 30,000 feet from the ground. Yeah, it sucks. You need more than a bottle of wine to take the edge off at that point. In fact, there’s probably a good chance you’d want some counseling.

Well, that’s exactly what Jessie Holgersson wanted, and she doesn’t feel she got it fast enough.

According to AM, an ABC morning show in Australia, Holgersson, a flight attendant on the Qantas 747 that had an engine fire, didn’t get counseling until a day after the incident. Her attorney “says that was too late and claims that Miss Holgersson was discriminated against for raising safety concerns about the airline’s lack of care.” Yeah … lawyer. Discrimination. Do the math: Holgerrson is suing.

Says Holgersson:

I was on my second training flight, we’d just flown from Sydney to Singapore, and everything went great on that flight and we had a nice day in Singapore and then we were heading back home and everything seemed normal and fine and about sort of six minutes after take-off we had an incident with our engine nut blew out.

She adds that “afterwards we were told that it was a fairly normal occurrence and these things can happen and, you know, not to worry about it too much.”

To make matters worse, according to AM, “The trainee was not given a permanent job.”

Qantas says through a spokeswoman that “Miss Holgersson was being assessed for possible employment by a UK cabin crew subsidiary at the time of the flight, with any position to be based out of London.” The company cites her behavior in training as the reason it didn’t offer her a position – and that she didn’t want to work out of the UK.

As to the claim that the flight attendants weren’t provided with counseling, Qantas says that it provided immediate and appropriate support.
